Polish Noodles image

This recipe combines sage sausage, cabbage, and noodles. Simple and DELISH! This is my husband's grandma's recipe, and my husband's favorite. I couldn't ask for an easier favorite. It's better when served the next day, or cooled for at least an hour, then reheated.

1 (8 ounce) package kluski noodles
2 (12 ounce) packages sage pork sausage
1 green pepper, diced
1 onion, diced
4 cups water, or as needed
1 large head cabbage, chopped
salt and pepper to taste
½ cup sour cream

Steps:

  • Bring a pot of lightly salted water to a rolling boil over high heat. Stir in the egg noodles, and return to a boil. Cook, uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 5 minutes. Drain.
  • Meanwhile, heat a large skillet over medium-high heat and stir in the sausage, green pepper, and onion. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Bring the 4 cups of water to a boil in a large pot. Stir in the cabbage, the sausage mixture, and the noodles. Simmer over medium-low heat, stirring occasionally, until the cabbage is tender, about 30 minutes. Add water while cooking if needed; the mixture should not be dry. Season to taste with salt and pepper. Garnish with sour cream if desired.

2 red onions, cut into strips
½ cup butter
1 (16 ounce) package wide egg noodles
salt to taste
ground black pepper to taste

Steps:

  • Cook pasta in a large pot of boiling salted water.
  • Meanwhile, heat butter or margarine in a skillet over medium heat. Saute cabbage and onions until tender.
  • Drain pasta, and return to the pot. Add cabbage and onion mixture to the noodles, and toss. Season with salt and pepper to taste.

This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

Polish egg noodles are made with three simple ingredients: flour, water, and eggs. The dish is child-friendly and is often served with chicken soup.

2 cups all-purpose flour
1/2 teaspoon salt
2 large eggs, beaten
4 to 6 tablespoons water

Steps:

  • In the bowl of a stand mixer or food processor (or by hand), combine flour and salt. Add eggs and enough water so dough forms into a ball.
  • Knead until smooth and elastic, about 5 to 8 minutes. Cover with plastic wrap and let rest 30 minutes.
  • Roll out dough on a floured surface as thinly as possible. Do not cover. Let dry for 30 minutes but no longer otherwise it will crack when you try to cut it.
  • Either roll the dough into a cylinder and slice, or slice dough into 3-inch wide strips, flour and stack them on top of each other, then slice 1/8-inch to 1/4-inch across.
  • Scatter noodles across a floured surface so they don't stick together. Let dry 30 minutes. Cook in boiling, salted water 5 to 10 minutes, depending on thickness and your preference. Drain.
  • If you want to save the noodles for later use, make sure they are completely dry before storing.

Polish Cabbage and Noodles, Haluski. A very comforting and hearty Eastern European meal made up of noodles, cabbage, sausage and garlic.

8 ounces egg noodles
2 tablespoons olive oil
1 pound kielbasa, sliced, or sausage of your choice
4 tablespoons butter
1 large onion, chopped
1 in large head of cabbage, chopped and divided half
2 cloves garlic, minced
1 cup frozen peas
Salt and fresh ground black pepper to taste

Steps:

  • Cook egg noodles in boiling water for 2 minutes less than the package directions say. Drain and set aside.
  • Brown the sausage slices in olive oil.
  • Add the butter and onion to the sausage. Cook until the butter melts and the onions soften; stirring to pick up the brown bits from the bottom of the pan.
  • Add the garlic and half the cabbage. Stir until coated with butter then cover and simmer for 10 minutes.
  • Add the peas, the other half of the cabbage, and the noodles. Stir to combine, cover and simmer for 5-6 minutes.
  • Add salt and pepper to taste, serve, and enjoy!

This Haluski (Cabbage and Noodles) recipe is made with egg noodles, bacon, cabbage, and lots of butter is ringing the dinner bell for tonight! Whether you're looking for a simple side or a buttered noodle dish transformed into a full meal, this recipe is the answer.

6 slices bacon (thick cut, and chopped)
6 tablespoon butter (unsalted)
2 large onions (chopped)
1 ½ pounds green cabbage (cored and cut into bite size pieces)
½ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
1 pound egg noodles (medium-wide)

Steps:

  • In a large Dutch oven cook the bacon until almost crisp.
  • To the same Dutch oven add 3 tbsp of the butter and melt. Add the onions and saute for 5 minutes until soft and translucent.
  • Add the cabbage, salt and pepper, stir everything together and cook for 10 minutes covered, until the cabbage softens.
  • Meanwhile, cook the noodles according to package instructions. Drain and set aside.
  • Add the cooked noodles to the Dutch oven, remaining 3 tbsp of butter and stir. Cook for a couple more minutes, until everything is heated through.
  • Taste for seasoning and adjust with salt and pepper as necessary. Serve warm with lots of freshly ground black pepper.

Polish noodles are a staple at these events and served alongside Polish sausage, green beans, mashed potatoes and chicken gravy, and fried chicken. While at a Polish meat market, an elderly Polish lady passed this recipe on to me upon request.
