Polish Braised Sauerkraut image

In this classic recipe, sauerkraut gets braised slowly, getting more tender by the minute. Goes brilliantly with pork dishes.

1 lb (450-500 g) sauerkraut
Hot water, enough to cover and top up
2 tbsp butter
2 bay leaves, dried or fresh
1 tsp cumin
5 black peppercorns, whole
2-3 allspice berries
1 small (3.5 oz,100 g) sweet apple, optional
3.5 oz (100 g) smoked bacon, in bits/pieces, optional
Pinch of salt, to season
Pinch of ground black pepper, to season
Pinch of sugar, to season
½ bunch fresh dill or parsley, optional
2 medium onions, finely chopped
1-2 tbsp flour
½ cup (100-120 ml) water or salt-free chicken stock

Steps:

  • Drain the sauerkraut, keeping the juice (we won't use it here, but feel free to drink it - it's very healthy!). Have a taste - if the sauerkraut is extremely sour, it's worth giving it a rinse under running water first, then squeeze it out.
  • Roughly chop the sauerkraut, so that the strings of fermented cabbage aren't too long.
  • Move the sauerkraut into a deep frying pan/skillet.
  • Pour in enough hot water to nearly cover the sauerkraut.
  • Add in 2 tablespoons of butter (don't worry, it will melt on its own), 2 bay leaves, 1 tablespoon of cumin, 5 black peppercorns and 2-3 allspice berries.
  • Cover with a lid and braise until soft. Sauerkraut will become soft after around 40 to 50 minutes of cooking. Monitor the process from time to time, making sure nothing boils over or sticks to the pan. Add more water if necessary.
  • [optional step: apple] After 25 minutes of braising (somewhere around the half-way mark), add an apple. Peel one small sweet apple (weighing roughly 3.5 oz / 100 g before peeling) and chop it finely. You can also grate it instead (using the largest holes). Add the apple pieces into the sauerkraut and continue braising.
  • [optional step: bacon] As the braising is nearing the end, let's fry the bacon: Chop the smoked bacon into cubes (or small pieces) and fry them up on a separate frying pan until lightly golden. Usually bacon renders enough of its own fat, so no additional cooking fat is required - but if your bacon is very lean, feel free to grease the pan with some oil.
  • Add fried bacon into the braised kraut, fold it in.
  • Add chopped onions into the same frying pan (same one we used for cooking bacon). Sauté them for a few minutes until they turn translucent.
  • Add 1-2 tablespoons of flour into the onions, and stir them in (with a pan-friendly spoon or a spatula).
  • Add in half a cup of water and stir continuously. Increase the heat and bring into a near-boil (keep on stirring!).
  • Move the contents of the frying pan (onions + roux) into the braising sauerkraut. Stir everything together.
  • Have a little taste. Does it need some more salt and pepper? If so, season it a bit more, I usually do. If it tastes a bit too acidic for your liking, add a pinch of sugar. Stir everything together and switch off the heat.
  • [optional step] Chop fresh dill finely and fold it into the sauerkraut. Serve hot.

4 pounds (8 cups) sauerkraut, drained, well rinsed, and squeezed dry
1 medium onion, peeled and cut into 1/4-inch slices
1 medium carrot, peeled, cut lengthwise in half, then crosswise into thin semicircles
2 garlic cloves, peeled and crushed
1 1/2 teaspoons caraway seeds
1 1/2 teaspoons dried thyme
2 bay leaves
12 juniper berries or 1/4 cup gin
Freshly ground black pepper to taste
8 ounces kielbasa, cut into 1/4-inch thick rounds
2 smoked pork hocks
2 cups dry white wine
4 cups low-sodium chicken broth

Steps:

  • Place the drained sauerkraut in the insert of a 4-quart slow cooker. Add the onion, carrot, garlic, caraway seeds, thyme, bay leaves, juniper berries or gin, and black pepper. Combine them thoroughly with a fork or with your hands. Scatter the kielbasa on top and bury the hocks in the sauerkraut. Pour in the wine and broth. Cover and cook on LOW for 9 hours, until the juices are bubbling and the sauerkraut has lost its crunch.
  • Remove the smoked hocks. If there is any meat on them, remove it and add it to the sauerkraut. Discard the bay leaves. Serve the braised sauerkraut as is with boiled potatoes, or use as a base for choucroute garni.

The bacon and onion add a delicious depth of flavor to the sauerkraut, and it's all cooked until it's nice and mellow. Serve this kapusta with your favorite side dish, like mashed potatoes or egg noodles, and for a simple but satisfying weeknight treat.

4 slices bacon (cut into small pieces)
1 yellow onion (diced)
16 ounces sauerkraut (drained)
2 Tablespoons brown sugar
¼ cup water

Steps:

  • Add the bacon to a large frying pan over medium high heat. Cook, stirring occasionally, for 6-8 minutes, or until the bacon is crisp and the fat is rendered.
  • Add the onions an cook for 3-4 minutes, until softened and light golden brown. If the pan is too dry, you can add a teaspoon or two of olive oil.
  • Stir in the sauerkraut, brown sugar, and water. Reduce the heat to medium-low and simmer for 10 minutes, until heated through and light golden brown.

4 tablespoons butter
1/2 pound large mushrooms, quartered
1 cup slice onions
2 cloves garlic, mashed
1 1/2 pounds cabbage, trimmed of tough outer leaves and core and coarsely shredded
1 pound sauerkraut, rinsed and drained
2 cups chicken broth, boiling
1 cup dry white wine
Salt and freshly ground black pepper
1 bay leaf
2/3 cup sour cream
1 teaspoon poppy seeds

Steps:

  • Preheat oven to 375 degrees
  • Melt butter in a heavy casserole. Add mushrooms and saute over high heat until mushrooms begin to brown.
  • Lower heat to medium, stir in onion and garlic and saute until they are tender. Add cabbage, sauerkraut, chicken broth and wine. Mix to distribute the ingredients. Season with salt and pepper.
  • Add bay leaf, cover and place in preheated oven for 2 1/2 hours until virtually all liquid in pan has been absorbed. Remove bay leaf. Check seasonings.
  • Serve directly from the casserole or transfer to a serving dish. Sour cream sprinkled with poppy seeds should be served alongside.

Fresh Polish Sausage Braised in Sauerkraut with Parsleyed Potatoes image

An unassuming regional dish of sauerkraut with various charcuterie meats-sausage, duck confit, salt pork-garnered three stars for the restaurant L'Auberge de l'Ill, located on the banks of the River Ill in picturesque Alsace, and made both the specialty, choucroute garnie, and the restaurant classics in the world of European haute cuisine. It's one of my favorite composed pork dishes, and I often cook a simple but still lusty version of it with robust Polish sausage. If you'd like to make it more elaborate, add baby back ribs baked until half done and/or the cured duck legs without the Toulouse sausage stuffing (page 35) to the sauerkraut. The juniper berries lend a clear, piney fragrance. If you don't have any on hand, 1 tablespoon of good gin, the spirit they flavor, can be substituted.

4 tablespoons butter
4 ounces salt pork, preferably with rind, cut into 1/2-by-1-inch pieces
2 yellow or white onions, halved and sliced 1/8 inch thick
3/4 teaspoon caraway seeds
1/2 teaspoon black peppercorns, crushed with a mallet
10 juniper berries, crushed
1 1/2 teaspoons chopped fresh thyme or 3/4 teaspoon dried thyme
3 pounds sauerkraut, drained and lightly squeezed
1 cup white wine
1 cup chicken broth (page 5)
1 pound Fresh Polish Sausage (page 44), stuffed in hog casing or hand formed into links about 3 1/2 inches long by 1 inch in diameter
2 pounds red or Yukon gold potatoes, peeled and cut into 1/2-inch chunks
Kosher salt
3 tablespoons butter
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350°F.
  • To make the sauerkraut, melt 2 tablespoons of the butter in a large sauté pan over medium heat. Add the salt pork and sauté until barely beginning to turn golden, 4 to 5 minutes. Add the onions, stir to coat them well, and sauté until they are softened but not browned, about 6 minutes. Stir in the caraway, peppercorns, juniper, thyme, and sauerkraut, mixing with a fork to separate the sauerkraut strands. Add the wine and broth and bring to a boil over high heat. Transfer the contents of the sauté pan to a large ovensafe pan or clay pot, cover, and bake, stirring once or twice, until lightly brown around the edges, about 1 hour.
  • Meanwhile, in the same sauté pan used for the onions, melt the remaining 2 tablespoons butter over medium heat. Add the sausages and sauté until golden all around, 4 to 5 minutes. Set aside.
  • When the sauerkraut has cooked for 1 hour, add the sausages, pressing them in so they are well embedded. Decrease the oven heat to 325°F, cover, and continue cooking until most of the liquid has evaporated, about 30 minutes.
  • While the sauerkraut and sausages finish cooking, prepare the potatoes. Place them in a large pot, add water to cover generously and a teaspoon or so of salt, and bring to a boil over high heat. Decrease the heat to maintain a brisk simmer and cook until they can be pierced all the way through, 10 to 15 minutes. Drain the potatoes, return them to the pot, and add the butter and parsley. Without stirring, cover the pot and set aside in a warm place.
  • To serve, present the sauerkraut in the clay pot, if you used one, or spoon it onto a platter. Gently stir the potatoes, season them with salt, and serve them in a separate bowl on the side.
