Steps:
- Preheat oven to 450 degrees F (230 degrees C). Grease an 8x8 inch baking dish.
- Place the water, milk, and butter in a saucepan and bring to a boil over medium-high heat. Add the polenta and stir with a wooden spoon until thickened, about 5 minutes. Transfer the polenta to the prepared baking dish and arrange the remaining chilled pieces of butter over the top.
- Bake the polenta in the preheated oven until bubbly and beginning to brown, 15 to 20 minutes. Remove from the oven.
- Decoratively arrange the slices of tomato over the top of the polenta, spread the remaining basil leaves over the tomatoes, and sprinkle with 1/2 cup Parmesan cheese.
- Return to the oven and bake until the tomatoes are warm and the Parmesan cheese is bubbly, 5 to 10 minutes.

POLENTA WITH GOAT CHEESE AND ROSEMARY
Sam Sifton brought this recipe, from the chef Matthew Kenney, to The Times in 2009. Mr. Kenney had great success in the 1990s with a string of restaurants, and this dish became a dinner party favorite, of sorts, for Brooklynites of a certain time. The ingredients are few, and the technique simple. So do as Sifton suggests: "Get good organic apples that can hold up to heat and the best coarse-ground polenta and thick, creamy goat cheese you can find. Spend the money for Grade A maple syrup and organic pecans. And spend the time to find the candied ginger, which adds a bright, floral taste to the final dish." Serve it with these pork chops, another of Mr. Kenney's dishes.

Steps:
- Bring the stock to a boil in a large, heavy saucepan over high heat. Whisk in the polenta in a steady stream, then decrease the heat to medium. Cook, stirring with a wooden spoon, more constantly than you would think possible, until the polenta begins to thicken, approximately 10 minutes. (Keep stirring; otherwise the polenta will boil up and may splatter on your hand.)
- Add the cheese and rosemary and stir for approximately 2 minutes. Stir in the butter, season with salt and pepper to taste and serve. It keeps well on the stove, though it thickens as it rests. If cooking before the chops are done, which is a smart idea, either remove from the heat at a thinner consistency or add a little more stock later.

Steps:
- Preheat oven to 400ºF. Put tomatoes and 1-2 TB olive oil in a pan and stir to coat. Sprinkle with salt and pepper. Cook for 45-55 minutes or until tomatoes are slightly brown around the edges and all wrinkly (yum!)
- While those cook, bring milk and water to a gentle boil in a sauce pan. Whisk in cornmeal (if you are awesome and can keep it from forming lumps, congratulations. If not, run it through the blender or food processor, or stick your immersion blender in so it's all smooth and lovely). Reduce heat to medium low and cook, stirring occasionally, until it starts to thicken, about ten minutes. Add corn kernels and let cook another two or three minutes. Stir in butter and goat cheese, and season with salt and pepper to taste. Top with roasted tomatoes.
- Serve immediately.
POLENTA WITH ROASTED TOMATOES AND GOAT CHEESE
This was a last minute fix when I remembered one of my dinner guests was gluten free and couldnt eat the pasta I was preparing. Came out so elegant! Homemade polenta is surprisingly easy and 100x better than store bought. If you haven't tried it before, you are in for a treat.

Steps:
- Preheat the oven to 375. Grease a large baking sheet with a little of the olive oil.
- Place tomatoes in pan cut side down and drizzle with olive oil and sprinkle with salt and pepper. Roast until they start to char and shrivel (no need to turn over), 40-50min. Let cool on the pan a bit.
- For the Polenta: Boil the milk and water together.
- Whisk in the cornmeal and salt. Turn down the heat and stir constantly until the polenta is suspended in the water and no longer settles to the bottom of the pot. It's done in about 15 minutes (still stirring often), but is supposedly even better if you cook it for about an hour - I wouldn't know, I'm always too impatient :).
- Take of the stove and stir in the butter or olive oil and 1/2 cup parmesan cheese.
- Place a mound of polenta in the center of each plate. Top with goat cheese, roasted tomato, basil and pine nuts.

- Preheat the oven to 425 degrees. Wash the tomatoes, place on a baking sheet, and pat dry. Drizzle with 1 tablespoon of the oil. Roast for 10 minutes, gently turn the tomatoes, and repeat until the tomatoes are browned, about 30 minutes. I turned the heat up to 450 at the end to get more browning action.
- Heat the remaining 2 tablespoons oil in a large heavy pan. Add the garlic and saute gently until fragrant, but do not brown – browned garlic tastes bitter and gross. When the garlic is smelling awesome, add the spinach and turn off the heat. You should be able to just keep stirring the spinach around for a minute and it will wilt and reduce in size. Transfer to a bowl and set aside. Wipe out the pan with a paper towel.
- In the same pan, bring the water to a boil. Add the polenta and whisk until smooth. Simmer for 15 minutes or so until the polenta has thickened. Add the goat cheese and the salt and stir until smooth. Taste and adjust as necessary. Serve the polenta immediately with the tomatoes and the spinach.

- Preheat oven to 450 degrees. Wash tomatoes. Cover a baking sheet with parchment paper. Drizzle olive oil generously over the tomatoes, along with salt, pepper and Herbes de Provence. Roast for 10 minutes or until tomatoes begin to split. Remove from oven and toss with garlic and your chiffonade of basil.
- In a medium saucepan, bring 6 cups water to a brisk boil over medium-high heat. Add salt and while whisking gently, pour the polenta into the boiling water in a steady stream. Turn down the heat to low and continue whisking until the polenta has thickened enough that it doesn't settle back on the bottom of the pan when you stop stirring. Cook for 15-20 minutes, stirring vigorously every 5 minutes or so, making sure to scrape the sides, bottom, and corners of the pan. The consistency should be that of a softer porridge-like polenta. Add the parmesan and butter.
- Top the polenta with your medley of roasted tomatoes, fresh arugula and your choice of crumbled goat cheese or Parmesan. I serve the polenta as a side with either a store-bought rotisserie chicken in a pinch or my stellar Roasted Lemon and Thyme chicken. And a crisp baguette, of course!

- To roast the vegetables: Preheat the oven to 400°F. On a large, rimmed baking sheet, combine the vegetables with 2 tablespoons olive oil and a sprinkle of salt and pepper. Toss until they are lightly coated in oil, then arrange the vegetables in a single layer across the pan. Bake for 25 to 40 minutes (timing will depend on your choice of vegetables), tossing halfway, until the vegetables are tender and deeply golden on the edges.
- To cook the polenta: In a medium saucepan, warm 2 teaspoons olive oil over medium heat until shimmering. Add the chopped bell pepper and 1/2 teaspoon salt. Cook, stirring occasionally, until the pepper is tender, about 5 minutes.
- Add the amount of water specified on your package of polenta, crank up the heat and bring the mixture to a boil. Pour in the polenta, whisk to combine, and reduce heat to medium-low. Cook until thickened, which can take as little as 5 minutes depending on your polenta, whisking often to remove any clumps. Remove the pot from the heat, and stir in the butter, salsa verde and freshly ground black pepper, to taste. Add additional salt, if necessary. Gently fold in the crumbled goat cheese, just until combined. Cover and set aside.
- Cook your eggs as desired. Divide the grits and eggs into 4 bowls. Divide the vegetables into the bowls and finish them with a light sprinkle of green onion. Serve with additional salsa verde and/or hot sauce on the side.

- Place the eight tomato slices on a baking pan that has been lined with parchment paper. Drizzle the olive oil on them and add two sprigs of thyme to each of them. Sprinkle each one with salt and freshly ground pepper. Transfer the baking pan to the oven and roast the tomatoes for 30 minutes. Remove from the oven and allow to cool on the baking pan.
- While the tomatoes are roasting, bring the chicken broth to a boil. Add the cornmeal in a gradual stream, whisking constantly to prevent lumps. Reduce the heat to low and continue to cook, whisking frequently, for about 15-20 minutes until the mixture pulls away from the sides of the pan into a firm, sticky mass. Let cool to the touch.
- Grease a 9 inch, 2 inches deep quiche pan with a removable base and press the polenta mixture into it and up the sides. You will need a small dish of water sitting near to dip your fingers in as it helps to press the sticky mixture. Prepare the crust for a blind-bake with parchment paper and pie weights, beans or rice. Place the quiche pan onto a baking sheet and transfer to the middle rack of the oven. Bake the crust in the 400°F oven for 15-20 minutes until crispy on the edges. When cool, spread the pesto or snipped oregano over the bottom of the crust and reserve it while you prepare the filling.
