Amazing roasted red potatoes that are full of flavor and bake up golden brown and crisp.

3 pounds petite red potatoes (scrubbed and halved (quartered if extra large))
4 tablespoons olive oil
6 cloves garlic (minced)
1½ teaspoons kosher salt
1 teaspoon ground black pepper
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried basil
⅓ cup grated Parmesan cheese
2 tablespoons unsalted butter (cut into small cubes)
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 400 degrees F. Lightly grease a large baking sheet.
  • In a large bowl, toss the potatoes, olive oil, garlic, salt, pepper, thyme, oregano, basil and Parmesan cheese until evenly coated. Turn the mixture out onto the prepared baking sheet and arrange in a single layer.
  • Bake for 45 minutes to 1 hour, turning with a spatula two or three times, until golden brown and crisp. Pull the tray out and sprinkle the butter over the potatoes and stir to melt the butter. Remove from the oven and toss with the fresh parsley. Serve immediately.

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

3/4 Cup of olive oil
2-3 Sprigs fresh rosemary
12 Garlic cloves, peeled and minced

Steps:

  • Preheat over to 425 degrees Cut potatoes in half, then in half again, and again in half until you have even chunks. Place in a medium pot with 1 Tsp salt, over with cold water and place over high heat. Bring potatoes to a boil, then lower the heat slightly and boil for ten minutes. In a bowl, mix together polenta, salt and pepper. Drain potatoes well with a colander. Add potatoes to polenta seasoning and toss greatly to coat. In large skillet, heat olive oil over high heat. When small bubbles begin to rise and oil is very hot, add rosemary and garlic. Stir carefully for a minute. Add seasoned potatoes all at once to hot skillet, using tongs to they are evenly distributed around pan. Place the skillet on the bottom shelf of oven and roast for 10 minutes. Remove pan from over and turn each potato over. return to oven for another five or ten minutes. Remove potatoes from over, using slotted spoon, transfer potatoes to serving platter.

1 lb (about 3 large) Yukon gold potatoes, peeled
1 tablespoon dry polenta
1 teaspoon coarse sea salt
1/2 teaspoon pepper
1/4 cup olive oil
2 tablespoons finely chopped fresh herbs
2 tablespoons finely chopped garlic

Steps:

  • Heat oven to 425°F. Cut potatoes into medium-size chunks (about 8 pieces per half-potato). Place potatoes in 2-quart saucepan of salted water. Heat to boiling. Reduce heat to medium-high; simmer 10 minutes or until potatoes are fork-tender.
  • Drain potatoes; place in large bowl. Gently toss potatoes with polenta, sea salt and pepper.
  • Heat large cast-iron skillet over high heat. Add olive oil; swirl to coat. When oil is hot, add herbs; cook 1 minute. Add potatoes, scattering in even layer in skillet. Place skillet to oven.
  • Bake 10 to 15 minutes or until bottoms are golden and crisp. Turn potatoes; sprinkle with garlic. Bake 10 minutes longer or until crisp on both sides.
  • Using slotted spoon, transfer potatoes to serving bowl or plate.

3 ozs Cornmeal
1 oz pecorino romano

Steps:

  • Slice off top quarter of garlic bulb, exposing the flesh of the cloves. Place on a 12" x 12" piece of aluminum foil.
  • Sprinkle garlic with salt and pepper and pour olive oil on top. Rinse thyme, shake dry, and scatter around the garlic. Seal foil firmly, transfer to a baking sheet, and bake in a preheated oven at 350°F on the middle rack for 1 1/4 hours.
  • Remove garlic from oven and let cool.
  • Squeeze the garlic bulb gently to take the garlic cloves out of skins.
  • In a pot, bring milk, 1 cup water, and 1/2 teaspoon salt to a boil.
  • Pour in cornmeal, stirring constantly.
  • Reduce the heat to medium-low; simmer polenta, stirring often, for 30 minutes. Stir in garlic and cook 10 minutes more. Finely grate the pecorino.
  • At the end of the cooking time, stir cheese into polenta and season with salt and pepper.

2 Tablespoons polenta (or cornmeal)
2 teaspoons salt (divided)
1/2 teaspoon pepper
3/4 cup olive oil
2 Tablespoons fresh rosemary leaves
8-10 cloves garlic (peeled)

Steps:

  • Cut each potato in half, then in half again, and again in half until you have 8 even chunks. Place in a medium pot with 1 teaspoon salt, cover with cold water and place over high heat.
  • Bring potatoes to a boil, then lower the heat slightly and boil for ten minutes. Meanwhile, preheat to oven to 425°F.
  • In a small bowl, mix together polenta, salt and pepper. Drain potatoes well in a colander. Sprinkle with polenta seasoning and toss gently to coat.
  • In a large (12-inch) cast iron pan or heavy-bottomed skillet, heat olive oil over high heat. When small bubbles begin to rise (but before oil is smoking) and oil is very hot, add rosemary and garlic. Stir carefully with tongs for a minute.

Place the skillet on the bottom shelf of the hot oven and roast for 10 minutes. Remove pan from oven carefully and turn each potato so the crispy side faces up. Return to oven for another five or ten minutes.
  • Remove potatoes from oven and, using a slotted spoon, transfer the potatoes to a serving platter and serve at once. Cool, then strain and reserve the oil remaining in the pan for another use.
