CREAMY POLENTA
Cooking the polenta covered allows condensation to build up, which eliminates the need for constant stirring. And you can still count on the creamy consistency you've come to expect from this dish.

POLENTA CREAMY GOOD AND ALMOST NO STIR
I was one of few that tested this for Cook's Illustrated. I was very impressed with this method which uses a secret ingredient of baking soda. Baking soda added to the cooking liquid can reduce the time it takes for the gelatinization to occur which in turn shortens the cooking time. You can use vegetable stock or chicken broth in place of the water. I tasted and it was good but wanted to kick it up and added chopped scallions and chopped chipotles for a kick. Just remember to simmer over very low heat so low you don't think it is cooking.

Steps:
- Brint water to boil in 4 quart saucepan over medium-high heat. Stir in salt and baking soda. Slowly pour cornmeal into water in steady stream, while stirring back and forth with wooden spoon or rubber spatula. Bring mixture to boil, stirring constantly, about 1 minute. Reduce heat to lowest possible setting and cover.
- After 5 minutes, whisk polenta to smooth out any lumps that may have formed for about 15 seconds. Cover and continue to cook, without stirring for approximately 25 minutes. You want the polenta to be tender but slightly al dente.
- Remove from heat, stir in butter and Parmesan, season to taste with fresh ground black pepper. Let stand covered 5 minutes.
- The polenta will be loose, but thickens as it cools. Garnish with additional Parmesan if desired.

- For the vegetables: Preheat the oven to 400 degrees F. For easy clean up, line a large, rimmed baking sheet with parchment paper. Place the grape tomatoes, chopped zucchini, shallot, oregano, and olive oil in a bowl, then drizzle with olive oil and sprinkle with salt and cracked black pepper. Toss to coat, then spread the vegetables mixture onto the prepared baking sheet. Roast for 30-35 minutes, or until the tomatoes burst and the shallots are crisp, tossing and spreading the vegetable back into a single layer twice throughout. Remove from the oven and set aside.
- While the vegetables roast, prepare the polenta: Combine the broth, almondmilk, and garlic in a large saucepan and bring to a boil over high heat. Reduce the heat to a simmer and very slowly whisk in the cornmeal, adding it in a very thin stream and whisking constantly to make sure there are no lumps. Switch to a wooden spoon and reduce the heat to medium. Add the salt and pepper. Simmer for 5-10 minutes, stirring almost constantly and scraping the bottom of the pan to prevent sticking, until the polenta thickened. The timing will vary based on the brand and type of polentayou use. Remove from the heat and stir in the nutritional yeast and butter. Taste and add additional salt, pepper, or nutritional yeast as desired.
- To serve, ladle the polenta into serving bowls. Top generously with roasted vegetables and sprinkle with fresh basil

- Add the cornmeal to a large cast iron dutch oven or heavy bottom pot. Pour in 11 cups of cold water and add the kosher salt. While whisking, bring to a gently bubbling simmer to release the gluten and separate the grains.
- Cover with a lid and transfer the pot to the oven to bake for 1 hour. After an hour, use a wooden spoon to stir and release any of the polenta stuck to the corners or sides of the pot. Bake for another 15-30 minutes or until it's the consistency you like best. Remove from the oven, stir, and allow the polenta to sit for about 5 minutes before serving. Sprinkle with freshly grated Parmesan cheese and freshly ground black pepper to taste. *adapted from Christopher Kimball's Milk Street
