PUFF PASTRY CHEESE POCKETS
Puff Pastry Cheese Pockets are flaky, buttery, crispy miniature cheese pockets pies that are a crowd pleaser appetizer or snack. They are equally delicious when served hot or cold.

Steps:
- Remove Pastry Dough sheets from the refrigerator and let them defrost at room temperature for 20-30 min.
- In the meantime, in a medium bowl, using a spatula, mix together the cheese , eggs and milk.
- Place the butter in a microwave safe bowl and melt.
- Add the butter to the mixture, using a spatula mix until well incorporated. Add the flour and continue mixing.
- Season with salt and pepper.
- Preheat oven to 350F.
- Position the Puff Pastry Dough sheets on a flat working surface and cut in squares (2-3 inches).
- Using a spoon, place the mixture (1-2 tbsp.) into the center of the squares. Make sure you have the same amount of squares without the filling, as they will be used to cover the other ones.
- After the cheese filling was distributed, take the remaining squares and place on top of the cheese filling, using your fingers to glues the two together, resulting in small cheese pockets.
- In a small bowl, whisk together the remaining 2 egg yolks and brush the top of the cheese pockets.
- Place in the oven and bake until golden, around 30 min.

POGACA
Steps:
- First mix sugar and yeast with milk and then add all the dough ingredients including this milk mixture and mix them well.
- You need to have a pliable and non-sticky dough. Cover it with a moist kitchen towel and let it rest for 45 min.
- While the dough is resting; chop the parsley bunch and mix with feta cheese. Preheat the oven 180 C.
- Take a small piece from the dough and flatten it with your hands on your counter.
- Put a teaspoon of cheese and parsley mixture on it and close it up folding the edges upwards and put a little pressure to give rugby ball shape in your palm. Do the same process for the rest of the remaining dough.
- Place the baking paper in a baking tray and place the Pogacas one by one on it. The folded side of Pogacas must be face with the baking paper.
- Coat all the Pogocas with egg yolk using food brush and sprinkle poppy seeds on each Pogaca evenly.
- Bake them 25 minutes until they get golden color.

TURKISH POGACA RECIPE
Turkish style super soft mini buns stuffed with cheese

Steps:
- Mix sugar and yeast with milk. Combine all the dough ingredients including this milk mixture and mix them well. You can add a little more flour or mineral water if either of them is not enough. You should have a pliable and non-sticky dough. Cover it with a moist cloth or plastic wrap and let it rest for 45 min-1 hour.
- Chop the parsley and mix it with cheese.
- Take a small piece from the dough and flatten it with your hands. You can do this on the counter. Put a tsp of cheese mixture on it and close it up folding the edges upwards like a bundle. Do the same for the rest of the dough. Place a parchment paper in a baking tray and place the pogacas on it. The folded side of pogacas should be at the bottom to have a ball shape.
- Preheat the oven at 180C.
- Beat the egg yolk well and coat all the pogacas with it using a brush. And sprinkle poppy seeds on each pogaca. Bake them about 20-30 minutes or golden.

CHEESE, ONION AND POTATO PASTY
This cheesy pasty is a delicious alternative to the regular Cornish pasty and is quick and easy to make.

Steps:
- Peel and chop the potato into small chunks and the onion finely chopped and grate the cheese. Finely chop the parsley.
- Mix all the ingredients together well in a bowl.
- Divide the pastry in 4 and roll each piece into a round about 15 cm (6 inches) in diameter.
- Put a quarter of the cheese mixture on each one, dampen the edge with a little water, then fold over and crimp the edges.
- Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
- Bake them for 45 minutes.
POCA (CHEESE IN PASTRY)
Back in the '70's, I was a member of a monthly dinner club among a group of graduate students at Illinois. Eating healthily wasn't a big priority back then and we had a ball with international dinners. (I have no idea how authentic we were!) This comes from our "Greco - Turkish" dinner. Can be made ahead and kept covered in the refrigerator. Bring to room temperature before brushing with milk and baking.

- With a whisk or mixer, combine the egg, yogurt, olive oil and butter until well blended.
- Add the flour, salt and baking powder and stir to form a smooth dough.
- Cover and refrigerate for 15-20 minutes.
- Preheat oven to 400 degrees F.
- In another bowl, combine the cheese, salt, pepper, chives and parsley.
- Roll a piece of dough the size of a walnut into a smooth ball. Hollow out the middle and fill with 1/2 t of the cheese mixture. Seal the dough around the filling and form into a ball again. Continue until all the dough is used.
- Lightly butter a cookie sheet. Place the cheese balls on the pan. Brush each with milk.
- Bake in preheated 400 F oven for 20-25 minutes. Serve hot.

HOME-STYLE TURKISH 'POğAçA'
Steps:
- First, prepare the filling. Crumble the feta or goat cheese with a fork. Add about 1 tablespoon of finely chopped parsley. If you're adding herbs to the dough, omit the parsley in the filling.
- In a large mixing bowl, starting with about 2 cups of flour, add the yogurt, melted butter, salt, baking powder, and sugar. Work the mixture together with your hands. Keep kneading the mixture and adding flour gradually until you have a smooth, firm dough about as firm as an earlobe.
- If you are using fresh herbs in the dough, knead them into the dough thoroughly. Decide what size you wish to make your rolls. For breakfast rolls, make balls of dough about the size of a small plum. For bite-sized poğaça, make the balls about the size of an apricot.
- Take a ball of dough and press it down on a lightly floured surface to flatten it. Put a small amount of your chosen filling in the center. Fold the circle in half over the filling so the edges come together and pinch them closed very gently. On a baking tray lined with grease-proof baking paper, place the poğaça seam side down and tuck the ends under gently as you go. Your roll should be an oval that is wider and rounder in the center and narrower at the ends. Repeat this with all the dough balls, leaving about 1 inch between each roll.
- With a pastry brush, coat the top of each roll with egg yolk. Sprinkle the sesame, poppy or black cumin seeds on top of each roll. Bake in a 350 F/175 C oven until the rolls puff up and the tops turn a golden brown.
- Serve the poğaça while still warm with fresh fruit preserves and honey.

CHEESE PASTRY
Steps:
- Combine the cream cheese, butter and salt in a large bowl or in a food processor fitted with the metal blade. Mix or process until smooth. Add the Parmesan cheese and flour and mix to combine. Gather the dough into a ball, flatten to a disc and wrap in plastic wrap. Refrigerate for 30 minutes before rolling.
