1/4 cup cider vinegar
2 tablespoons freshly squeezed orange juice
2 teaspoons sugar
1 teaspoon freshly squeezed lime juice

1/2 cup warm bacon fat

Steps:

  • Whisk the vinegar, orange juice, sugar, lime juice and a generous pinch of salt together in a small bowl. Gradually whisk in the bacon fat, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a few grinds pepper.

2 pounds salmon fillets, cut into 4 pieces
2 tablespoons butter, softened
1 ½ teaspoons dried parsley
1 ½ teaspoons chopped garlic

Steps:

  • Heat wine and water over medium high heat in a large non-stick skillet for 5 minutes.
  • Slide salmon pieces into poaching liquid and dot with butter. Sprinkle with dried parsley, garlic, salt and pepper.

6 cups water
1 medium onion, chopped
2 celery ribs, chopped
4 sprigs fresh parsley
1/2 cup dry white wine
1 tablespoon soy sauce
8 whole peppercorns
1 bay leaf
1 salmon fillet (3 pounds)
Lemon slices and fresh dill

Steps:

  • In a large saucepan, combine the first 8 ingredients. Bring to a boil; reduce heat. Simmer, covered, 30 minutes. Strain, discarding vegetables and spices., Cut three 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 7-qt. oval slow cooker. Pour poaching liquid into slow cooker. Carefully add salmon., Cook, covered, on high 60-70 minutes or just until fish flakes easily with a fork (a thermometer inserted in fish should read at least 145°). Using foil strips as handles, remove salmon from cooking liquid. Serve warm or cold, with lemon and dill.

1/4 cup fresh orange juice
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 small clove garlic (peeled and forced through a press)
2 teaspoons finely chopped parsley
2 teaspoons finely chopped basil
2 teaspoons finely chopped mint
1 teaspoon grainy or Dijon mustard
1 teaspoon finely minced shallot
1/8 teaspoon salt
Freshly ground black pepper to taste
1 1/4 pounds salmon fillet

Steps:

  • Gather the ingredients. Preheat oven to 450 F.
  • In a pint jar with a lid, add the orange juice, balsamic vinegar, olive oil, garlic, parsley, basil, mint, mustard, shallot, salt, and pepper. Screw on the lid and shake well to blend.
  • Place the salmon in a foil-lined pan and spoon a little of the vinaigrette over the fish. Bake for 8 to 12 minutes per inch of thickness (measured at the thickest part), or until cooked through.

2 tablespoons Champagne vinegar
1/2 cup freshly squeezed citrus (blood oranges, oranges, key limes etc.)
Salt
1 to 2 teaspoons extra-virgin olive oilSalad:
2 heads endive
1/2 head frisee
1 head butter lettuce
2 grapefruit, peeled and sectioned
2 oranges, peeled and sectioned
6 beets, cooked and cut into quarters or bite size wedges
2 tablespoons chervil or parsley, chopped
1 avocado, peeled and cut into wedges

Steps:

  • Prepare the vinaigrette: Place shallots, vinegar, citrus juice, and salt in a small bowl. Let shallots macerate for 30 minutes. Whisk in the olive oil. In a large salad bowl, toss together lettuces, citrus, beets, herbs, avocado, and the vinaigrette. Taste and adjust seasonings. Serve immediately.
  • TIP: To turn this into an entree top with scallops, chicken or fish.

1 1/2 cups water
2 lemon slices
1 small onion, peeled and quartered
5 sprigs parsley
1 bay leaf
6 peppercorns
1 (3 pound) salmon fillet, skin on, scaled and pin bones removed
Salt and freshly ground pepper
6 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons orange juice
2 tablespoons lime juice
1 tablespoon finely chopped dill
Salt and freshly ground black pepper
6 cups watercress
Fresh dill

Steps:

  • To make the salmon: Combine all ingredients except the salmon in a medium skillet or saucepan. Bring to a boil then reduce to a simmer. Season the salmon with salt and pepper on both sides, add to simmering liquid, and cover. Cook for 5 to 8 minutes or until just done.
  • To make the vinaigrette: Whisk together the olive oil and citrus juices, add the dill, and season with salt and pepper, to taste.
  • Toss the watercress with 3 tablespoons of the vinaigrette and season with salt and pepper, to taste. Arrange the watercress on a large platter and place the salmon in the center. Drizzle with additional vinaigrette and garnish with dill.

3 tablespoons minced shallots
2 teaspoons grained Dijon mustard
1 teaspoon honey, or to taste
2 tablespoons rice wine vinegar
2 tablespoons apple cider vinegar
1 tablespoons blood orange juice (or regular orange juice)
1 tablespoon lemon juice
1 tablespoon lime juice
1/2 cup olive oil
1/2 cup peanut oil
Salt
1/2 teaspoon sesame oil
3 tablespoons sesame seeds
4 cups seeded watermelon pieces about 1-inch in size
6 cups watercress leaves (about 1 bunch)
1/4 cup Italian parsley leaves
1/2 cup scallions, sliced
1/2 cup fresh chervil tops (or fresh oregano)
Black pepper

Steps:

  • Make the vinaigrette: In a small non-reactive bowl or food processor, place the shallots, mustard, honey, vinegars, and fruit juices and whisk or process. Slowly incorporate the oils, teaspoon by teaspoon until emulsified. Add salt and pepper to taste.
  • In a small saute pan heat the sesame oil until just below the smoking point. Add the sesame seeds and cook until the oil colors slightly. Drain the oil and reserve the seeds.
  • In a large bowl combine 1/2 of the sesame seeds, the watermelon, watercress, parsley, scallions, and chervil and toss with the vinaigrette to taste. Divide the greens between 6 or 8 individual salad plates and place the watermelon pieces on top. Sprinkle with the reserved sesame seeds and serve immediately.

1/4 cup kosher salt
1/4 cup cayenne pepper
1/4 cup paprika
1/4 cup garlic powder
1/4 cup ground black pepper
2 tablespoons onion powder
2 tablespoons dried oregano
2 tablespoons dried thyme
4 ( 6 ounce) pieces of salmon
6 tablespoons Cajun spice mix
1 tablespoon peanut oil or vegetable oil
1 pint blueberries, juiced
1 orange, zested and juiced
1 lemon, zested and juiced
1 large shallot, diced
1 cup olive oil
Salt and fresh ground pepper, to taste
1 pound Blue Peruvian potatoes, peeled and diced
1 medium onion, diced
2 jalapenos, seeded and diced
1 red pepper, seeded and diced
2 tablespoons fresh thyme, picked
1 tablespoon garlic, chopped
1 1/2 cups peanut or vegetable oil
Salt, to taste
Fresh ground pepper to taste

Steps:

  • For the Cajun spice mix, combine ingredients and store in a jar until ready to use.
  • For the salmon, heat a nonstick skillet to almost smoking. Coat 2 sides of salmon in spice mix. Add oil to skillet and place salmon, on a spiced side down in skillet, turn salmon to the other side when spices start to blacken. If you like well done, transfer skillet to a 375 degree preheated oven for 3 minutes.
  • For the blueberry vinaigrette, In a small pan reduce the juices of the blueberries and orange by half. Let cool, add lemon juice and shallots, 1/2 teaspoon each, chopped zest of orange and lemon. Stir in olive oil and season with salt and pepper to taste. Bring vinaigrette to room temperature before using.;
  • For the potatoes, put diced potatoes on a dish or in a bowl and cover with plastic wrap. Place in microwave on and cook on full power for 4 minutes. Take out and stir, then put it back in for another 2 to 4 minutes until potatoes are tender. Heat oil in skillet to 350 degrees and fry off potatoes until crisp, about 11/2 minutes. Drain and reserve oil and put the potatoes aside. Put skillet back on stove top and add 3 tablespoons of reserved oil, add onions and saute until they start to turn golden. Then add jalapenos, red peppers, thyme and garlic. Saute 2 minutes, then add potatoes back to skillet. Cook 3 to 4 minutes more, tossing to combine ingredients. Salt and pepper to taste and keep warm in oven.;

4 (8-ounce) wild salmon fillets
Olive oil
Salt and pepper
Morel Vinaigrette, recipe follows
2 ounces dried morel mushrooms
1/4 cup Champagne vinegar
1/2 small shallot, thinly sliced
2 teaspoons Dijon mustard
Salt and freshly ground black pepper
1/2 cup olive oil
3 tablespoons coarsely chopped fresh parsley leaves

Steps:

  • Heat grill to high. Brush salmon on both sides with oil and season with salt and pepper. Grill on both sides until golden brown and cooked to medium doneness, about 3 minutes per side. Remove from the grill and immediately drizzle with the morel vinaigrette.
  • Place morels in a bowl and cover with boiling water. Let sit until soft, about 30 minutes, then drain, reserving liquid, and coarsely chop.
  • Whisk together vinegar, shallot, mustard and salt and pepper in a medium bowl. Slowly whisk in the olive oil until emulsified. Use a little of the morel soaking liquid to thin, if needed. Fold in the mushrooms and parsley.
