Poached Pears with Mixed Greens image

Special occasions call for deliciously different salads like this. Slices of pretty poached pears add fabulous flavor to a mixed green salad.

2 medium ripe Bartlett pears
1/2 cup dry red wine or grape juice
1 tablespoon red wine vinegar
1 teaspoon sugar
1 teaspoon olive oil
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
8 cups fresh arugula or baby spinach
2 cups torn curly or Belgian endive
1/4 cup crumbled blue cheese
3 tablespoons chopped walnuts

Steps:

  • Peel, core and quarter the pears. Place cut side down in an 11x7-in. baking dish. Add wine or grape juice. Bake, uncovered, at 350° for 15-20 minutes or until crisp-tender. Drain, reserving 1 tablespoon liquid. Cool pears to room temperature. , For dressing, in a small bowl, whisk the vinegar, sugar, oil, salt, cayenne, pepper and reserved poaching liquid. Thinly slice the pears. In a large salad bowl, combine the arugula, endive and pears. Drizzle with dressing; toss to coat. Sprinkle with blue cheese and walnuts.

I love figs, so when I found this recipe I knew I had to try it. The vinaigrette came out very thick, so I had to adapt it to suit my needs. Pared with the goat cheese and pears, this was wonderful. The vinaigrette's sweet-tart taste makes it well suited for a marinade for grilled or roasted pork and chicken.

1/2 cup balsamic vinegar (or white wine vinegar)
5 dried black figs, stemmed and coarsely chopped
10 tablespoons water (1/2 cup plus 2 T)
1 tablespoon fresh lemon juice
2 tablespoons shallots, minced
1 teaspoon fresh thyme, minced
1 garlic clove, minced
1/4 cup olive oil
1/4 teaspoon salt
6 cups mixed salad greens
1 1/2 cups bosc pears, thinly sliced
1/4 cup goat cheese, crumbled
candied walnuts (optional)
grape tomatoes, chopped (optional)

Steps:

  • Combine balsamic vinegar and figs in a small saucepan over high heat, and bring to a boil. Reduce heat, and simmer until reduced to 1/3 cup: about 5 minutes.
  • Combine the fig mixture, water, and lemon juice in a blender, and process until smooth.
  • Place the fig mixture in a small bowl. Stir in shallots, thyme, and garlic. Add olive oil and salt; stir well with a whisk.
  • To serve: Drizzle enough dressing on the greens to coat. Place the greens on 6 salad plates and top with pear and goat cheese.

Number Of Ingredients 7

6 cups Apple Juice
2 cups Champagne (you can substitute a sweet white wine)
2 cups Water
1 tsp Cinnamon
2 TB Honey
1 tsp Vanilla Bean Paste
6 Pears

Steps:

  • Bring apple juice, champagne, water, cinnamon, honey and vanilla to a boil. Place pears (do not remove skin) in the boiling liquid and cook for 10 minutes.
  • Once cooked, let pears cool. Serve on mixed salad greens and drizzle with honey and desired salad dressing. Stuffed Poached Pears: Once cooled slice the bottoms including stem off the pears. Using a knife, go around the center of the pear to cut a circle around the stem. Use a food scissors to cut out the stem. For cheese and wild rice stuffed poached pears, mix 1 cup cooked wild rice with 6.5 ounces of Garlic and Herbs Spreadable Cheese (Boursin). Other great ingredients to include in stuffed poached pears: goat cheese, blue cheese crumbles and dried fruit like figs and cherries.

  • Peel the pears and cut them in half lengthwise. Scoop out the cores with a teaspoon. Make sure you cut away the hard remains of the flower at the bottom of the pear. Arrange the pears in a circle inside the pan, cut sides up, thin ends towards the center.
  • Mix the sugar, ginger root and water together in a pan. Bring to a boil. When the sugar has dissolved, pour the liquid and ginger slices over the pears.
  • Bring the pears to a simmer over medium-high heat. Cover the pan, turn the heat down to low, and gently poach until the pears are tender, about half an hour. Paste the pears with the syrup from time to time. About 15 minutes into the cooking, flip the pears over, cut sides down, for even cooking. Check the liquid for sweetness. Add sugar to taste, plus a little more water if the pears look dry. The syrup should be light, not thick and sticky.
  • When the pears are just tender, turn the heat off and, leaving the lid on, let the pears cool in the pan. They will continue cooking and give out more of their juices as they steam.
