- In a saucepan large enough to hold all the pears, combine the wine, Simple Syrup, cinnamon stick halves, honey, and ginger. Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally, until the pears are tender. Remove the pears from the liquid and allow to cool.
- Continue to simmer the liquid until it thickens and is reduced by half, about 15 to 20 minutes. Cool to room temperature. Remove the cinnamon stick halves and the vanilla bean and discard.
- Place each pear on a small serving plate with a scoop of vanilla ice cream. Drizzle with the honey, ginger and cinnamon syrup. Serve immediately.
- In a small saucepan, combine the sugar and water over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool.

- Preheat oven to 375°. Core pears from bottom, leaving stems intact. Peel pears; cut in half vertically. Cut 1/4 in. from bottoms to level if necessary. Place in an ungreased 13x9-in. baking dish. , Place ginger ale and honey in a small saucepan. Cook and stir until combined; spoon over pears. - Gather the ingredients.
- Thinly peel the pears, making sure to keep the stem intact. Slightly slice the bottom of the pears so they will stand up in the pan and when serving.
- In a large and tall saucepan, stir together the white wine , water, cinnamon stick, vanilla bean, lemon zest, and lemon juice. Bring the mixture to a simmer over medium-high heat.
- Once the liquid is simmering, add the prepared pears and place them standing on the pan. The liquid should cover most of the pears' height.
- Poach the pears, uncovered, for 7 to 9 minutes until their meat is slightly tender, but they are still firm enough to hold their shape. Watch this process carefully as you do not want the pears to overcook or they will collapse.
- Remove the pears from the poaching liquor with a slotted spoon and place them on individual serving plates.
- Return the poaching liquid to a simmer. Add the sugar and allow the mixture to reduce in volume by half or about 6 to 8 minutes. The syrup is ready when it is thick enough to coat the back of a spoon.
- Remove the cinnamon stick and vanilla bean from the syrup and strain the liquid through a fine sieve.
- Drizzle each pear with the wine syrup and add any other topping that you'd like.

- With a vegetable peeler, pare yellow part only of peel from lemon.
- Cut peel into julienne strips to make 1 table- spoon.
- Ream enough lemon to make 1 tablespoon juice. In a 5 to 6 quart pan, combine lemon peel, lemon juice, ginger, sugar and 3 cups water.
- Bring to a boil.
- Add pears and more water, if needed, to cover them.
- Simmer, covered, until pears are tender when pierced, about 30 minutes.
- Put pears in 6 shallow-rimmed dishes or shallow bowls.
- On high heat, boil syrup, uncovered, until reduced to 1/2 cup, about 40 minutes.
- Pour syrup over pears.

- Peel gingerroot and slice thin. Cut slices into thin strips and in a saucepan simmer in 1 quart water 10 minutes. Drain gingerroot and discard water.
- In a saucepan just large enough to hold pears lying on their sides bring 3 cups water to boil with gingerroot, sugar, Port, and lemon juice, stirring until sugar is dissolved.
- Peel pears, leaving stems intact, and cut a thin slice from bottom of each if necessary to enable pears to stand upright when served. Arrange pears on their sides in poaching liquid, adding enough of remaining water as necessary to just cover. POACHED PEARS WITH CHOCOLATE SAUCE AND CRYSTALLIZED GINGER

- 1 Make the pears: In a saucepan just large enough to hold the pears, combine the apple cider, water, brown sugar, lemon zest, rosemary, if using, and peppercorns
- 2 Using a vegetable peeler, peel the pears, leaving them as smooth and neat as possible; try to leave the stem intact
- 3 Add the pears to the pot, and cover with a circle of wax or parchment paper to prevent discoloration as the pears cook
- 4 Use a lid or a heatproof plate that will fit just inside the diameter of the pot to hold the parchment down
- 5 Turn the heat to medium-high and bring the liquid to a simmer
- 6 Reduce the heat to maintain a gentle simmer and cook until the pears are fairly tender but not super-soft, turning every 10 minutes or so, so that all parts of the pear have a chance to be submerged, for 25 to 30 minutes total
- 7 The pears are done when the tip of a sharp paring knife or a wooden skewer glides fairly easily into the pear and meets some resistance as it heads toward the middle
- 8 To test this, gently lift a pear out of the pot and insert the tester into the bottom - this will keep them unblemished on the sides
- 9 Remove the pan from the heat and let the pears cool - with the parchment still on but the lid or plate removed - in the poaching liquid until they reach room temperature
- 10 The pears will continue to cook in the hot poaching liquid
- 11 Either hold at room temperature for a few hours, or transfer the pears to a container and refrigerate for up to 1 day
- 12 Make the chocolate sauce: When ready to serve, place the heavy cream in a small microwave-safe bowl and warm on HIGH until hot but not boiling, about 15 seconds
- 13 Place the chocolate chips and salt in another small bowl and pour the hot cream over
- 14 Let sit, without stirring, for about 2 minutes, then stir until smooth and the salt is dissolved
- 15 Slice a sliver off the bottom of each pear so they stand up straight
- 16 Place each pear on a plate and drizzle each with chocolate sauce
- 17 Sprinkle the pears with the chopped crystallized ginger, add a dollop of whipped cream, if using, and serve

- Peel the pears and cut them in half lengthwise. Scoop out the cores with a teaspoon. Make sure you cut away the hard remains of the flower at the bottom of the pear. Arrange the pears in a circle inside the pan, cut sides up, thin ends towards the center.
- Mix the sugar, ginger root and water together in a pan. Bring to a boil. When the sugar has dissolved, pour the liquid and ginger slices over the pears.

Paste the pears with the syrup from time to time. About 15 minutes into the cooking, flip the pears over, cut sides down, for even cooking. Check the liquid for sweetness. Add sugar to taste, plus a little more water if the pears look dry. The syrup should be light, not thick and sticky.
- When the pears are just tender, turn the heat off and, leaving the lid on, let the pears cool in the pan. They will continue cooking and give out more of their juices as they steam.
