Poached Chicken, Pear, and Walnut Salad image

This Poached Chicken, Pear, and Walnut Salad is a rendition of a Waldorf salad. Its lighter and crisper, featuring bitter escarole leaves, creamy shaved Pecorino Romano, and Bosc pear slices.

Number Of Ingredients 12

1 carrot, cut into thirds
1 stalk celery, cut into thirds
1 clove garlic
Coarse salt and freshly ground pepper
2 8-oz boneless, skinless chicken breast halves
2 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
4 large escarole leaves, torn
1 Bosc pear, sliced
1 shallot, thinly sliced
1/2 cup toasted walnuts, coarsely chopped
3 tablespoons (1/2 oz) shaved Pecorino Romano

Steps:

  • In a large pot, add carrot, celery, and garlic and cover with water by two inches. Bring to a boil. Season with salt. Reduce to a simmer and add chicken, flipping halfway, until cooked through, 15 to 18 minutes. Remove and let cool. Slice.
  • Whisk vinegar and oil; season with salt and pepper. Drizzle half vinaigrette over chicken slices. Divide escarole, pear, shallot, and walnuts among four plates. Top with chicken and Pecorino.
  • Season with salt and pepper. Drizzle with remaining vinaigrette.

Wine Poached Chicken, Pear and Walnut Salad image

A salad with wine poached chicken, walnuts, pears and cheese. Dressed simply with red wine vinegar and olive oil this recipe is a keeper!

Number Of Ingredients 14

2 whole skinless, boneless chicken breasts ((I poached 4 reserving two for later use))
½ teaspoon whole black peppercorns, (or coarsely ground pepper)
1 teaspoon Kosher salt
2 cups dry white wine
a few springs of fresh Thyme
a few springs of fresh Rosemary
2 tablespoons red wine vinegar
¼ cup extra-virgin olive oil
Coarse salt and fresh ground pepper to taste
4 large escarole leaves, (washed and torn)
1 Bosc pear, (sliced)
1 shallot, (thinly sliced)
½ cup toasted walnuts, (coarsely chopped)
1 ounce shaved Parmesan (or Pecorino Romano cheese)

Steps:

  • To poach the chicken combine the wine, herbs, and peppercorns in a high-sided frying pan, braiser or saute pan. Make sure the wine will almost cover the chicken breasts so use a pan that is just about large enough to fit them in one layer. Bring the wine mixture to a boil and reduce the heat to simmer. Add the chicken breasts and poach (not boil), turning once, about 15 minutes. Turn off the heat and cover the pan. Allow the chicken to rest in the wine liquid and finish cooking for about 15 more minutes. Remove the chicken, slice or shred as desired and enjoy it warm or refrigerate for later use.
  • Combine the red wine vinegar, olive oil and salt and pepper. Whisk until combined. Drizzle half the vinaigrette over the sliced chicken breasts. Divide the escarole leaves, pear, shallot and walnuts among four plates. Top with the chicken and cheese.
  • Season with salt and pepper if desired and drizzle lightly with remaining vinaigrette. Serve and enjoy!

If you have them on hand, you can also toss in a bay leaf, lemon peel, or whole peppercorns to add even more flavor to these Poached-Chicken-Salad Sandwiches.

2 boneless, skinless chicken breasts (about 1 pound total)
1 small yellow onion, halved and peeled
Coarse salt and ground pepper
1/4 cup chopped toasted walnuts
2 tablespoons golden raisins
1 celery stalk, finely chopped
1/2 small red onion, finely chopped
3 tablespoons mayonnaise
1/4 cup nonfat plain Greek yogurt
2 teaspoons chopped fresh tarragon leaves
Bread and lettuce leaves, for serving

Steps:

  • In a large straight-sided skillet or pot, cover chicken and onion with water by 1/2 inch; season generously with salt. Bring to a boil over high; cover, reduce heat to medium-low, and cook 5 minutes. Remove skillet from heat and let stand, covered, until chicken is cooked through (an instant-read thermometer should read 160 degrees), 12 to 14 minutes. Remove chicken from water and let cool completely. (To store, refrigerate in an airtight container, up to 3 days.)
  • Shred chicken, then mix with walnuts, raisins, celery, red onion, mayonnaise, yogurt, and tarragon. Make sandwiches with bread and lettuce.

Rumored to be the "best salad ever", this salad was a HUGE hit at a baby shower I attended. Fortunately the hostess shared the recipe with us! I have modified and simplified the recipe but the delicious flavors and textures remain. Dressing is so yummy too! Add as needed as recipe makes a lot!

1 large head romaine lettuce
1 tart apple
2 ripe tart pears
4 ounces feta cheese
1/4 cup dried cranberries
1/2 cup walnuts
2 grilled chicken breasts
1 cup sugar
2 tablespoons poppy seeds
3/4 cup raspberry vinegar
2 tablespoons prepared mustard
2 teaspoons salt
1 1/2 cups canola oil
1 small onion

Steps:

  • Tear or cut up lettuce. Cut apple and pears into bite size chunks. May use just apples or pears if desired. Add crumbled feta cheese and dried cranberries (or craisins). You can toast walnuts or use candied walnuts if you'd like. May substitute pecans or pinenuts. Shred chicken breasts and add to salad. Can also use rotisserie chicken or baked chicken.
  • For dressing combine sugar, poppy seeds, raspberry vinegar, mustard, salt, oil & onion in a food processor or blender. Refrigerate. May want to cut dressing ingredients in 1/2 as you will have a lot of dressing. Stays good in fridge for about 4 days.
