Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 1h

Yield 4

Number Of Ingredients 10

1 (32 fluid ounce) container chicken stock
32 fluid ounces water, or more if needed
1 yellow onion, peeled and slits cut into it
1 bunch celery, stalks (including leaves) separated
3 carrots
2 tablespoons tomato paste, or more to taste
1 tablespoon salt
5 whole black peppercorns
1 bay leaf
2 pounds skinless, boneless chicken breast halves, each cut in half

Steps:

  • Combine chicken stock, water, yellow onion, celery, carrots, tomato paste, salt, peppercorns, and bay leaf in a large pot; bring to a gentle simmer. Decrease heat to medium-low and simmer, checking the flavor occasionally, until vegetables are slightly tender, 30 to 45 minutes.
  • Bring stock to a boil and add chicken, pouring in more water if chicken isn't completely covered in liquid. Bring poaching liquid to a boil; remove pot from heat and cover tightly with a lid until chicken is no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CHICKEN NORMANDY (CHICKEN LEGS BRAISED IN APPLE CIDER & BRANDY)

Chicken Normandy (Chicken Legs Braised in Apple Cider & Brandy) image

Chicken Normandy, also known as 'Poulet á lá Normande,' is a super delicious, fall, French Chicken dish. It is whole chicken legs braised in apple cider and brandy; then cooked with onions, garlic, and herbs, and finally finished off with cream, dijon mustard, and fried apples. It's luxurious, has that definite "Wow" factor both in look and in taste - yet it's easy to make.

Provided by Edyta

Categories     Dinner     Main Course     Main Dish

Number Of Ingredients 14

2 tbsp Butter (unsalted, to fry apples)
2 whole Apples* (see notes) (peeled, cored, sliced)
4 Whole Chicken Leg Quarters
pinch of Salt (to season each chicken leg)
2 tbsp Butter (unsalted, to sear the chicken legs)
1 Yellow Onion (medium size, sliced )
1 clove Garlic (minced)
1 teaspoon Dry Thyme
1/2 cup Brandy ((ideally Apple Brandy))
2 cups Apple Cider ((Claudy Apple Juice))
1/2 cup Heavy Cream
1 tbsp Dijon Mustard
2 springs Fresh Thyme (chopped)
Salt & Pepper to taste

Steps:

  • Fry the apples: Peel, quarter, remove seeds and slice the apples. Heat 2 tablespoons of butter in the skillet, add the apples in one layer and fry them until golden brown, flipping a few times. Once cooked on both sides, remove apple slices and set them aside (about 5-7 minutes)
  • Sear the Chicken: To the same skillet add another 2 tablespoons of butter; season chicken with salt and pepper on both sides and sprinkle with flour. Sear the chicken on the hot pan for 5-7 minutes on each side until the skin is crispy and golden brown. Then remove the chicken from a pan and set aside.
  • Prepare the braising liquid: Preheat the oven to 375ºF. To the same pan add sliced onions. Sauté the onions on medium heat for approximately 5-7, add garlic and dry thyme and cook for another minute. Deglaze the pan with brandy and cook until half of it has evaporated, then add apple cider (cloudy apple juicer) and cook for about 5 minutes.
  • Braise the chicken: Add the chicken (skin side up) back to the skillet, cover the pan and move to the hot oven. Bake the chicken for 30 minutes. Carefully remove the pan from the oven using heavy-duty oven mittens.
  • Finish up the sauce: Remove your chicken onto a plate and finish up the sauce. First, add heavy cream and then Dijon mustard and mix well. Cook it for about 5 minutes until the sauce thickens out. Add fried apples, fresh thyme, and chicken back to the skillet (to soak up some of the sauce).
  • Serve: To serve place the sauce onto the plate, make sure each plate has onions, apples, and enough sauce to dunk in. Place a chicken leg on top of the sauce and serve. Enjoy!

2 chicken breasts (, boneless skinless, 250g/8.5 oz each (Note 1))
3 - 4 shallots / scallions (, green and white part thinly sliced (1 heaped cup))
2 tbsp finely grated ginger
1/4 tsp salt
5 tbsp vegetable oil ((or peanut or grapeseed oil))

1 tsp sugar
1 garlic clove

POACHED CHICKEN WITH TARRAGON CREAM SAUCE

Poached Chicken With Tarragon Cream Sauce image

This is a classic dish that I made in my basic culinary class. I thought it was delicious, so I decided to share. Enjoy!

Provided by SaffronMeSilly

Categories     Chicken

Time 25m

Yield 8 chicken breasts, 8 serving(s)

Number Of Ingredients 10

4 boneless skinless chicken breasts
1 1/2 ounces whole butter
4 ounces white wine
1 pint chicken stock
1 bay leaf
1/4 teaspoon dried thyme or 1 teaspoon fresh thyme
1 teaspoon dried tarragon or 1 tablespoon fresh tarragon
1 ounce flour
4 ounces heavy cream
fresh tarragon sprig (to garnish)

Steps:

  • Trim any rib meat and fat from the breasts. Cut breasts into 2 pieces, removing strip of cartilage that joins halves.
  • Select a pan that will just hold the breasts when they are placed close together.
  • Season both sides of chicken breasts with salt and white pepper, arrange them presentation side up.
  • Add wine, chicken stock, bay leaf, thyme, and dried tarragon.
  • Cut a piece of parchment paper to fit the pan you are using, rub butter on it. Place it butter side down on top of chicken mixture.
  • Bring liquid to a simmer and reduce the temperature to just below simmering (this is poaching temperature).
  • Allow chicken to cook through (about 7 minutes or until no longer pink in the middle). Remove chicken from pan.
  • Turn temperature up until remaining liquid is boiling. Allow to reduce for a minute or two.
  • Meanwhile mix 1 oz of butter and 1 oz of flour into a paste (this is called beurre manie).
  • Once the liquid in the pan has reduced a little, whisk in the beurre manie, and bring back to a boil.
  • Once liquid has thickened, add cream, and continue whisking until desired thickness.
  • Strain liquid through cheese cloth, and serve over chicken breasts, with a sprig of tarragon.

CLASSIC POACHED CHICKEN IN CREAM SAUCE (POULE AU POT)

Classic Poached Chicken in Cream Sauce (Poule au Pot) image

Provided by Frederic Van Coppernolle

Categories     dinner, main course

Time 1h20m

Yield Serves 4 to 6

Number Of Ingredients 14

4 carrots, peeled and halved
4 leeks, white and light green parts only, halved lengthwise and thoroughly rinsed
1 3 1/2 -pound chicken, left whole
Salt and freshly ground black pepper
4 small onions (about 2 inches in diameter), peeled
4 small turnips (about 2 1/2 inches in diameter), peeled and halved
4 cloves garlic, peeled
1 bouquet garni (sprig of thyme, sprig of parsley, 1 bay leaf and 5 peppercorns tied in cheesecloth)
1 tablespoon butter
1 tablespoon flour
1/2 cup heavy cream
Juice of 1 lemon
Cooked rice or noodles, for serving
1/4 cup sliced chives

Steps:

  • Spread the carrots and leeks across the bottom of a large soup pot. Season the chicken with salt and pepper to taste and add to the pot. Add the onions, turnips, garlic and bouquet garni. Add water to cover and bring to a boil. Reduce the heat to low and simmer, partly covered, until a leg pulls easily away from the body, about 1 hour.
  • Transfer the chicken to a cutting board and remove the skin. Detach the legs and wings and separate the drumsticks from the thighs. Remove the breast, discard the bones and slice the meat thinly. Cover and keep warm.
  • Transfer all the vegetables in the pot to a bowl; cover and keep warm. Discard the bouquet garni. Return the pot to high heat and boil until the broth is reduced by half. In a small saucepan over low heat, melt the butter, then whisk in the flour; do not allow to brown. Gradually whisk in 1 cups of the broth, allowing the mixture to thicken. Whisk in the cream and bring to a simmer. Remove from the heat and stir in the lemon juice. Season with salt and pepper to taste.
  • To serve, place a bed of rice or noodles in a large, deep serving dish. Top with the vegetables and then the chicken. Spoon the sauce over the top and garnish with chives. Serve immediately.
