This is my son's favorite thing to take on picnics.

1/2 c cooked,ground or shredded ham
2 Tbsp mayonnaise
1 1/2 tsp prepared mustard
2 tsp sweet relish
dash garlic powder
TO TASTE pepper

Steps:

  • 1. Mix all ingredients well. Spread on sandwiches.
  • 2. Good served on multigrain toast.

Growing up in the country yrs ago, we made this and loved it; I just made it again and found it is still as good as when I was a kid who didn't realize she was poor because she was happy on the farm....We couldn't afford the ham for it so we used our version of the poor man's steak and ham...good 'ole bologna....Brings back...

2 lb deli bologna cut in a chunk
8 oz block sharp cheddar cheese/or a pkg already shredded
6 eggs, hard boiled
2 medium dill pickles
3/4 c mayonnaise

Steps:

  • 1. take the bologna and shredd it up; usually I use a food processor but this time I used my grater and it worked fine with less clean up...Shred it in a large mixing bowl
  • 2. Shred the Cheese to the mix; or add the pkg. shredded cheese
  • 3. Shred the eggs with the grater; i found this so quick and easy; I use to chop my eggs for egg salad or recipes for chopped eggs but this time they just slid right over the grater and was so fast and easy..shred this into the mix in the bowl
  • 4. Shred the whole dills into mix as well...
  • 5. Add Mayonnaise to the mixture and stir well to blend it all together....adjust the mayo to taste; more or less depending on desired consistency...
  • 6. Taste test to make sure it is good;))) Put in container in fridge to chill and use it for sandwiches... So easy and so delicious....like I said earlier; it is my version of the poor man's ham salad and just as good;))))

I have been making this salad for years and recently traveled from NJ to Oklahoma to make a batch for one of my friends. I have also Overnighted this salad to a friend in Dallas who simply loves it. Of course, I pack it in dry ice. It's fast, simple and great for a cocktail party on party rye, on toast or a bagel for breakfast, on rye with lettuce, thinly sliced onions and dill (or sweet)pickles and mayo for lunch or with pea soup and sandwich for dinner. It's down right Yummy!!! And make no changes to the ingredients because the salad will not taste the same.

1 ½ pounds cooked ham, chopped
¾ cup mayonnaise, or as needed
⅓ cup dried minced onion
⅓ cup dill pickle relish
¼ cup brown mustard

Steps:

  • Process the ham in a food processor until finely chopped but not pasty, about 6 or 7 pulses. You may need to do this in batches. Place the finely chopped ham in a large bowl and continue processing the remaining ham.
  • Add the mayonnaise, onions, relish, and mustard to the processed ham. Mix well and, if the mixture is too dry, add more mayonnaise. Refrigerate until serving. The dried onions absorb some of the moisture from the mayonnaise and relish so you may need to add more mayonnaise before serving.

My Favorite Bologna or Ham Salad for Sandwiches image

I grew up only knowing this by Ham Salad which is what my Mom and local Deli's up North called it. She said it was the "Poor Man's Ham Salad" which never contained any ham, just bologna, but giving it the wonderful flavor and color of what could have been ham. We loved it. I made it for my children as they grew up and it is still requested though they are adults now. I am in my 50's and still make it for myself as a snack spread or sandwich. I've seen a variation of recipes for this, tried some and still think mine is my favorite. Let me know what you think?

1 lb of your favorite bologna
0.75 (12 ounce) package sliced American cheese
1/4 cup sweet pickle relish
1/4 cup real mayonnaise (can use Miracle Whip)

Steps:

  • Do not use Velveeta for this recipe, it does not store well.
  • I suggest a food processor for this recipe unless you prefer a meat grinder. Use a large bowl with tight lid for storing.
  • Take all the bologna out of the packaging and quarter.
  • Unwrap all the cheese slices (if in wrap) and quarter as well.
  • Place half the meat and half the cheese in processor and pulse until semi-chunky. It should look spreadable. Scoop in bowl.
  • Add remaining bologna and cheese, process.
  • Place rest in large bowl and add relish, mix well.
  • Add 1/2 of the mayo, stir. You can choose the consistency if you prefer. I like it a bit more mayonnaisy. Add rest if preferred.
  • You can use either Miracle Whip or real Mayo, both are great. I like the real mayo because it works better with crackers.
  • Serve on either a hamburger bun (kid's favorite), sandwich bread, or club crackers.
  • Store remaining spread in fridge, it can last up to one week.

Another trip down memory lane for me. I grew up on this stuff! I especially love it on toast, and it has to be cut diagonally or it just doesn't taste right! And if you can't have toast, the next best thing is white bread.

3 c finely ground cooked ham
2 Tbsp celery, finely chopped
2 or 3 medium eggs, hard boiled, chopped
4 tsp sweet pickle relish
2 tsp finely chopped onion or 1 tbsp. minced onion
1 c hellman's mayonnaise
1 Tbsp yellow mustard

Steps:

  • 1. Chop the ham in a food processor until it is the consistency you like. I prefer it very finely ground.
  • 2. Mix the ham, celery, eggs, onion and pickle relish in a large bowl.
  • 3. In a separate bowl, combine mayonnaise and mustard; then add to ham mixture. Stir to mix and refrigerate at least one hour.
  • 4. This is good on sandwiches, crackers, or as a dip for vegetables such as carrot sticks or anything else you like.

The ingredients in this recipe I never vary. They are what give it that "splendid" flavor. Great for sandwiches and as a cracker spread for hors d'eouvres. Or spread on Melba toast rounds and top with a slice of hard-boiled egg for a dainty brunch treat.

1 small can hormel smoked ham (5 oz.)
3-4 Tbsp duke's regular mayonnaise
3-4 Tbsp chopped sweet pickle or relish
3 large chopped spanish green olives, stuffed with pimento

When I was growing up, my Grandmother would make wonderful things on a very tight budget. A really great cook can take the cheapest ingredients and make astonishing things with them. I never knew she was using Bologna for this Ham Salad until I was older. I make this now for a group of friends and they call often to let me know...

3 pkg chicken-pork bologna
1~1 1/2 c real mayonaise
2 Tbsp yellow mustard
1/2 bottle sweet pickles
1 small white onion, diced (optional)
2 small jalapeno peppers, chopped (optional)

Steps:

  • 1. You'll need a grinder for this. The old crank type or electric, it you have one. Grind the Bologna through a coarse grind plate.
  • 2. Grind the Sweet Pickles into the ground Bologna, adding some of the juice to make moist. (You certainly can use Sweet Pickle Relish if you like) I've also used "Bread n' Butter" pickles when I was out of Sweet.
  • 3. My figures for the Mayo, Mustard etc. are approximate as I make a much larger batch and do it all by sight and taste. Mix the Mayo in first, then Mustard.
  • 4. I don't add the diced onion, because although it adds texture and taste, you can't hold this long w/ raw onion in it. Instead, I use a Jalapeno Relish that has pickled onion in it. It's available at Mexgrocer.com I add this after finishing for those whom desire a little kick, leave the main batch without.
  • 5. When it's all mixed and to your taste, pack in clean jars or Tupperware. It'll hold in the refrigerator for two weeks and better. If it begins to get a bit dry, just mix a little more Mayo into it.
  • 6. This is great on sandwiches and also works well as a canape or cracker topper, just sprinkle a little Paprika on it to look pretty.
  • 7. My first time to post anything here, so I hope I've been clear and haven't broached any protocols...LOL
