PLUM LAMB CASSEROLE
A family favorite. I don't even like chops and I like this recipe! I ran out of plum jam for this recipe once and used apricot instead. It still tasted good. I normally leave out the celery.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large pot over medium heat until melted. Add onion; cook and stir until softened, about 5 minutes.
- Season flour with salt and pepper in a shallow dish. Dredge lamb chops in flour mixture on both sides.
- Layer lamb chops with onion, carrot, and celery in a casserole dish.
- Mix stock, plum jam, tomato sauce, and Worcestershire sauce together in a small bowl. Pour over lamb in the casserole dish.
- Bake in the preheated oven until lamb is tender, about 1 hour 30 minutes.

SUCCULENT LAMB STEW

Steps:
- Preheat the oven to 170ºC/325ºF/gas 3.
- Place a 30cm shallow casserole pan on a high heat, strip in the rosemary leaves, add 1 tablespoon of olive oil, and crisp up for 1 minute while you dice the lamb into 3cm chunks.
- Scoop out the rosemary and put aside, adding the lamb to the pan for 2 minutes to get some colour.
- Meanwhile, squash the olives and remove the stones. Drain the pickled onions and stir into the pan with the olives. Toss well, then pour in the tinned tomatoes, breaking them up with a wooden spoon, as well as 2 tins' worth of water.
- Cover and cook in the oven for 2 hours, or until thick, delicious and tender, stirring halfway and loosening with a splash of water, if needed.
- Taste, season to perfection with sea salt and black pepper, sprinkle over the crispy rosemary leaves, and serve. Simple.

MICROWAVE PLUM LAMB CHOPS FOR 2
Going back 17 years when I was a newly wed - we didn't have the money to fix our broken oven so I made most of our meals in the microwave . This was one of our favourites.

Steps:
- Place flour, herbs & chops in a freezer bag & shake until lamb chops are coated with the seasoned flour.
- In a casserole dish - place oil, onion, celery and carrot & mix to coat.
- Microwave for 3 minutes on HIGH.
- Remove chops from freezer bag and place on top of the vegetable mix.
- In a separate bowl, mix together the jam , sauces, & stock.
- Pour over the chops.
- Cover & cook on MEDIUM for 10 minutes turning chops after the 1st 5 minutes. (power level 6 on my microwave).
- Then reduce to DEFROST and cook for 25 minutes.
- Allow to stand for 5 Minutes.
- Serve with mixed veg.

- Preheat oven to 325°. Place lamb on a rack in a shallow baking pan, fat side up. Season with salt and pepper. Bake, uncovered, 1-3/4 to 2-1/4 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain plums, reserving 1/2 cup syrup. In a food processor, place the plums, reserved syrup, garlic, lemon juice, soy sauce, Worcestershire sauce and basil. Cover and process until smooth; set aside half of the plum sauce., Baste lamb every 15 minutes during the last hour of roasting. In a small saucepan, simmer reserved sauce 5 minutes; serve with meat.
