APPLE CRISP WITH OAT TOPPING

Apple Crisp with Oat Topping image

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

  • Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper or a silicon baking sheet.Combine the flour, oats, both sugars, salt, cinnamon, ginger, and nutmeg in a large bowl. Stir vigorously with a balloon whisk until all the ingredients are evenly distributed.
  • Stir the melted butter and vanilla together in a small bowl or glass measuring cup. Drizzle the liquid over the dry ingredients, tossing to coat them, until all the liquid is absorbed and the dry ingredients start to clump together.
  • Spread the mixture in an even layer onto the baking sheet. Bake for 15 minutes. The edges should JUST start to darken but there shouldn’t be much change in color.
  • While the topping is baking, make the filling by cutting the plums into 1-inch thick slices into a large bowl. Gently toss with 4 tablespoons of sugar, cornstarch, vanilla, as well as the lemon zest and crystallized ginger if you are using. If your plums are particular tart and sour, add a tablespoon or two of sugar to help balance it. Grate the peeled apple with the hole from a larger grater into the bowl and mix in.

  • PLUMS: Preheat the oven to 180 °C or 350 °F. Pit your plums and cut them in halves. Mix them with maple syrup, ground cinnamon and cloves and coconut flour. The juicier the plums, the more coconut flour you should use. Transfer your plums to a medium-sized baking dish (I used 17 x 27 cm or 6.7 x 10.5 inches dish) and bake for 15 minutes or until they release a bit of juice.
  • TOPPING: In the meantime, prepare the topping. Combine old fashioned oats with coconut flour, chopped almonds (or almond meal), maple syrup, salt, liquid coconut oil and coconut milk. The mixture should be somewhere in between granola and cookies, not too dry, and not too mushy. Top your roasted plums with the oat topping and bake for 20 more minutes or until golden brown. Top with a generous scoop of coconut milk and enjoy!
