- Place the plums and water into a large pot, and bring to a boil. Reduce heat to medium-low, cover, and simmer for 5 minutes. Stir in the sugar, and add butter to reduce foaming, if needed. Bring the mixture to a full, rolling boil over high heat, stirring constantly, and then mix in the pectin quickly. Return the jam to a full boil, and boil for 1 minute, stirring constantly. Remove from heat, and skim off and discard any foam.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the plum jam into the hot, sterilized jars, filling the jars to within 1/8 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area. Refrigerate opened jars for up to 3 weeks.

JAM MUFFINS, APRICOT ETC
This recipe is adapted from a New Zealand cookbook called Quick n' Easy Muffins, Cakes, Biscuits, Slices, Loaves, Scones, and was voted a winner after being served to my daughter's teachers at school as a birthday tray. DO grease the pan well so that they slip out easily and if the jam leaks out, get the muffin out of the form while it's still warm because once the jam is cold, it's hard to remove (I used a plastic picnic knife to ease mine out of my muffin form). And yes, you read correctly, the original recipe does say 5 teaspoons baking powder!

- Preheat the oven at 200°C (400°F).
- Sift the flour, baking powder and salt together into a baking bowl. Make a hollow in the dry ingredients. Beat the eggs and milk together and add with melted butter into the middle of the dry ingredients mixing just enough to moisten the mixture.
- Spoon a largish tablespoon of the mixture into the bottom of the muffin form,making certain that it covers the bottom of the muffin form. Make a small hollow in the middle if the muffin mixture and set a teaspoon of apricot jam into the hollow, try not to let the jam run out to the sides very much.
- Cover the apricot jam with another spoonful of the muffin mix and run a clean finger around it so that the jam is as enclosed by the muffin mixture as possible.
- Bake at 200°C (400°F) for 15 minutes or until cooked.
- Ease the muffins out of the form while warm and put onto a wire rack to cool.
- Once cool, dust the tops with powdered sugar.
PLUM AND APRICOT JAM MUFFINS

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin with baking spray.
- Combine pastry and all-purpose flours, sugar, baking powder, and cinnamon in a medium mixing bowl; stir until well blended.
- Put plums in a large bowl with jam and eggs. Beat with an electric mixer until well combined. Slowly add dry ingredients and mix until flour is totally absorbed into the batter. Drop batter into the prepared muffin cups.
- Bake in the preheated oven until nicely browned on top, about 20 minutes. Cool in the tin for 10 minutes. Transfer to a plate to cool completely.

PLUM JAM
This plum jam is delicious added to cakes, in muffins, on pancakes, ice cream and any other way your heart desires! You can make it either with or without pectin.

- Wash the plums, cut them in half, discard the pits and place the plums in a large pot.To chop or not to chop:If you're NOT using pectin and are letting the jam simmer for a long time, there's no need to chop them because they'll break down by themselves and you can always give the jam a mash or use a hand blender to puree part of it later on if you don't want as many chunks.If you ARE using pectin the jam will only need boil for a few minutes and the plums will not break down, so go ahead and chop the plums up.Add the sugar and lemon juice and heat the pot, initially over medium heat so the plums or sugar don't scorch. Once the plums juices start to run you can increase the heat.
- If you're NOT using pectin: Simmer the plum uncovered until an instant read thermometer reads 220 degrees F. That's important in order for the jam to set and not be too runny. (Alternatively, freeze a couple of spoons and drop some jam onto them: If the jam sets and is spreadable, but not runny, it is done.) Don't bother skimming off the foam because that will all dissolve by itself towards the end.If you ARE using pectin: Follow the package instructions of whatever pectin you are using. Skim off the foam.If you like you can use a potato masher or a hand-held immersion blender to mash/blend part of the jam until the desired amount of chunkiness is reached.
- Using sterilized jars, ladle the hot jam into the jars and wipe off the rims with a moist towel to make sure no jam is on the rims. Fill each jar to no less than 1/4 inch from the top. Wash the lids with soapy water and, place them on the jars and screw on the sterilized rings. Boil them in a water bath canner for 10 minutes.Carefully remove the jars and let them sit undisturbed for 24 hours before removing the rings (optional) and storing them in a cool place. They will keep for up to a year. Once opened, store in the fridge, will keep for at least a month.
- Makes about 7 half pints.

SUGAR PLUM MUFFINS

- Place the plums into a saucepan with the golden syrup. Bring to the boil and then stew and simmer until the plums are deliciously soft but still holding some shape. Reserve to cool.
- Set the oven to 180C/fan. Line a deep muffin pan with 12 cases.
- Place the butter and sugar in a large bowl and using either a wooden spoon or hand-held electric mixer, cream together until fluffy. Add the egg and beat the mixture (adding a little flour if it curdles) to blend. Stir in the cooled plums and all the syrup liquid. Place the flour, ginger, baking powder and salt together in a sieve and shake into the mix. Mix well and divide between the 12 muffin cases. Bake in the middle of the oven for 20 minutes.
- Remove the cooked muffins from the pan after 5 minutes and cool on a wire rack. When almost completely cooled, sieve a good dousing of icing sugar over the muffins (or top with sugar crystals if you prefer) and serve.
PLUM JAM MUFFINS

- Combine the flour, sugar, baking powder and salt in a large bowl. Make a well in the center of the mixture. Combine the egg, milk and oil, then add the mixture to the dry ingredients. Stir until just moistened and no flour streaks remain. Spoon into muffin tins, that have been coated with a non-stick spray, filling each cup ⅔ full. Spoon 1 teaspoon of the plum jam into the center of each filled muffin cup. Bake at 375℉ (190℃) Fahrenheit for 20 minutes or until golden brown. Serve warm.

STRAWBERRY SWEET POTATO MUFFINS
These are called Yam and Jam Muffins in the BH&G Kid Favorites Made Healthy cookbook. I made them for my kids on the first day of school as a healthy after school snack. I was amazed when my pickiest eater asked for another. The original recipe says you can use plum, strawberry, peach, or apricot jam or preserves.

- Spray muffin pan with butter flavored non-stick spray or line with paper cups.
- Mix flour, brown sugar, baking powder, baking soda, spice, and salt. Make a well in the center; set aside.
- In another bowl, mash potatoes with a fork. Add egg, milk, jam, and oil.
- Pour potato mixture into the flour mixture and stir until moist.
- Fill muffin cups approximately 3/4 full. Bake at 400 for 18-20 minutes.
- Cool slightly.
- Drizzle with icing and top with additional jam.
- To make icing, stir together powdered sugar, jam, vanilla, and milk. Add more or less milk to create the desired consistency.
