A deliciously simple dessert, which is perfect for a mid week treat or after a Sunday roast.

Number Of Ingredients 9

2 apples (approximate weight 450g / 1lb before peeling) (medium sized, note 1)
4 plums (approximate weight 200g / 7oz before de-stoning) (any variety, note 2)
¼ teaspoon ground cinnamon
2 tablespoons white sugar
2 tablespoons water
160 g plain flour ((all purpose flour))
115 g unsalted butter (cut into small cubes)
85 g brown sugar
2 tablespoons oats (any kind such as jumbo or quick cook)

Steps:

  • Preheat the oven to 170°C fan / 190°F / 375°F.

A fail-safe apple crumble recipe with plums added. Serve this autumnal dessert with custard or ice cream - it can be ready in 45 minutes.

Number Of Ingredients 10

6 large plums
3 Bramley apples, about 500 g (1lb 2oz)
50 g (2oz) light brown soft or caster sugar
1 tsp. ground cinnamon
Finely grated zest of 1 lemon
For the crumble topping
175 g (6oz) plain flour
125 g (4oz) butter, chilled and cut into cubes
50 g (2oz) rolled oats
75 g (3oz) demerara sugar

Steps:

  • Preheat oven 200°C (180°C fan) mark 6. Halve and stone the plums, then roughly chop and put into a large pan. Peel and core the apples, roughly chop, and add to the pan with the sugar, cinnamon, lemon zest and 5tbsp water. Cover and heat gently until apples are softening, about 5min.
  • Empty fruit into a shallow, ovenproof serving dish. Set aside.
  • To make the topping, put the flour into a bowl and rub in the butter with your fingers until the mixture resembles fine rubble. Mix in the oats and demerara sugar, then scatter the topping over the fruit.
  • Bake for 25-30min or until the crumble is golden. Serve immediately with our Foolproof Custard (see left) or vanilla ice cream.

Use two types of sugar and ground almonds for the perfect crunchy crumble topping, layered on top of cinnamon-spiced plums

800g ripe cooking plums, such as Victoria or dessert plums, halved and stoned
50g light brown sugar
finely grated zest 1 orange
1 tsp ground cinnamon
1 tsp plain flour
250g plain flour
150g butter
80g caster sugar
80g demerara sugar
50g ground almonds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the plums into the base of a shallow gratin dish about 28cm long. Mix together the sugar, orange zest, cinnamon and flour and sprinkle over the plums. Trickle over 2 tbsp water.
  • Put all the crumble ingredients into a food processor, and using the pulse button, whizz until the mixture just starts to clump together. Take care not to over process at this stage. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
  • Scatter the crumble over the plums and bake in the oven for 30-40 mins until golden brown. Leave for about 15 mins before serving with custard or cream.
