6 large potatoes, peeled and thinly sliced
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1 cup whole milk
2 cups shredded cheddar cheese
Minced fresh parsley

Steps:

  • In a large nonstick skillet, cook potatoes in butter until crisp-tender and lightly browned. Sprinkle with salt and pepper. Pour milk over all; cover and cook until milk is absorbed. Sprinkle with cheese; stir until melted. Garnish with parsley.

1 package (32 ounces) frozen Tater Tots
3 large eggs, lightly beaten
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
1 cup sour cream
1/4 cup chopped green pepper
1/4 cup chopped onion
4 cups shredded cheddar cheese

Steps:

  • Arrange Tater Tots in a greased 13x9-in. baking dish. In a bowl, combine the eggs, soup, sour cream, green pepper and onion until blended. Stir in the cheese. Pour over Tater tots. Bake, uncovered, at 350° for 50-55 minutes or until bubbly and golden brown. Let stand for 10 minutes before serving.

1 liter canola oil
3 to 6 whole eggs, as needed
1 to 2 cups half-and-half, as needed
2 cups all-purpose flour, or as needed
1/2 cup huckleberry seasoning
2 cups panko bread crumbs, or as needed
8 skin-on chicken breasts
1/4 cup chopped chives, for garnish
16-ounce package elbow macaroni
1/2 cup butter
1 cup chopped white onion
1/2 cup all-purpose flour
1/2 to 1 cup chicken broth
1/2 cup heavy cream
2 cups shredded Cheddar
Salt
White pepper
3 tablespoons quince jelly
4 large potatoes, peeled and cut into chunks
2 tablespoons unsalted butter, cut into cubes
1/4 cup milk
Salt
White pepper

Steps:

  • Bring 2 pots of water to aboil, 1 each for the pasta and potatoes.
  • For the Chicken:
  • Heat oil in a deep-fat fryer, then set up a breading station. Whisk together 3 eggs and a cup of the half-and-half for the egg wash. (Begin with this amount and whisk more together if needed.) Combine flour and huckleberry seasoning. Set up a bowl, each of: flour mixture, egg wash, and bread crumbs. Evenly coat chicken with flour (not too much or bread crumbs won't stick). Dip floured chicken into egg wash, then into bread crumbs. Preheat oven to 325 degrees F. In a deep-fat fryer, lightly fry chicken until golden brown. Finish in the oven until completely cooked, at least 15 minutes. Remove from oven and let rest.
  • For the Macaroni and Cheese:
  • While the chicken is cooking, boil the pasta until al dente and drain well so that you don't have excess cooking water which will dilute the flavor. Melt butter in a large saucepan over medium heat, add the onion and cook until translucent. Gradually add the flour to make a roux. Cook roux 5 minutes, until light golden in color. Incorporate enough of the chicken broth a little at a time to form a smooth sauce. Simmer for at least 10 minutes to allow the flour to cook out. Add the heavy cream and Cheddar and then season with salt and white pepper. Then fold in as much pasta as you need to acquire the right consistency for macaroni and cheese. Cover and set aside in a warm place.
  • For the Mashed Potatoes:
  • Boil the potatoes until tender and drain well. Then mash the potatoes and stir in cubed butter. Whip milk, salt and pepper into the potatoes with a beater.
  • To Plate:
  • Form a bed of mashed potatoes make a well in the center. Spoon enough macaroni and cheese into the well until so that it just begins to breach the edges of the well. Spoon some of the quince jelly in the center of the mound of macaroni and cheese. Place a chicken breast on top of the macaroni and cheese, and garnish with fresh chopped chives.

I work at a big box store; somehow I ended up having to cook for our Christmas party. The problem? I only had a deep fryer or an oven to cook in! I came up with these potatoes. They were a huge hit.

10 lbs red potatoes, sliced
3 large onions, chopped
1 (6 ounce) package bacon bits (this is a precooked, real bacon found on the salad dressing aisle)
8 cups colby-monterey jack cheese, shredded
2 cups heavy whipping cream
1/4 cup butter
salt
pepper
garlic powder

Steps:

  • Spray a large food service pan (12x20-inch) with cooking spray.
  • Place 1/3 of the potatoes into pan; sprinkle with salt, pepper, garlic, 1/3 onions, 1/3 bacon, and 1/3 cheese.
  • Repeat layers for a total of 3 layers. Leave cheese off last layer (keep for later in cooking).
  • Pour cream over top; dot with butter. Cover tightly with foil. Bake at 400°F for 1 hour 15 minutes.
  • Uncover; sprinkle with remaining cheese. Return to oven for 15 minutes or until cheese is melted.

2 cups chicken broth
1 cup milk
10 slices bacon, cooked, crumbled and divided
4-1/2 lb. Yukon gold potatoes (about 12), cut into 1/4-inch-thick slices
1 onion, thinly sliced
1 cup shredded Colby & Monterey Jack Cheeses

Steps:

  • HEAT oven to 400ºF. COOK first 3 ingredients in saucepan on medium heat until cream cheese spread is melted and mixture comes to boil, stirring constantly with whisk. RESERVE 2 Tbsp. bacon. Layer half each of the potatoes, onions and remaining bacon in 13x9-inch baking dish; repeat layers. Add cream cheese sauce; cover. BAKE 1-1/2 hours or until potatoes are tender and top is golden brown, uncovering and topping with shredded cheese and reserved bacon for the last 10 min.

Anyways, the recipe here is the simple plain way with added herb flavoring, if you like you can make different variations such as cheese by adding 2 tbsp grated Parmesan and 1 cup grated cheddar to the end result instead of herbs. Mix and match to your, or your fella's, own tastes :)

2 lbs russet potatoes, peeled (about 6 cups)
1/4 cup fat-free margarine, cut into pats
1 -1 1/2 teaspoon salt, divided
1/4 teaspoon pepper
1/2 cup skim milk, hot
3 tablespoons parsley, chopped
2 tablespoons scallions, chopped
1 tablespoon thyme, chopped

Steps:

  • Cut potatoes into uniform pieces and place in a large pot filled with enough water to cover. Bring to a boil and reduce heat and simmer about 10 minutes.
  • Drain and return to pot.
  • Add butter, 1 tsp salt and pepper to pot. Mash the mix with a potato masher. Add more salt and pepper as desired.
  • Add milk, a little at a time while mashing potatoes until smooth.
  • In another bowl combine the parsley, scallions, and thyme.
  • Mix into potatoes and serve immediately.
