Steps:
- Combine dry ingredients.
- Add liquid ingredients.
- Beat to blend well.
- Fold in pecans and coconut.
- Pour batter into greased and floured bundt pan.
- Bake at 325° for 1 hour and 30 minutes or until tests done.
- Let cake cool 10 minutes before removing from pan.
- Pour glaze over warm cake.

PECAN SOUR CREAM POUND CAKE
I won first place with this cake at the Cuyahoga County Fair (Cleveland, Ohio) in 1993. For a nuttier variation, you can substitute 1 cup of the flour with 1 cup of ground pecans.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a 10 inch Bundt or tube pan. Sprinkle pecans on bottom of pan; set aside. Sift together flour, salt, and baking soda into a medium bowl; set aside.
- In a large bowl, cream butter and white sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Add flour mixture alternately with sour cream. Pour batter over pecans in prepared pan.
- Bake in the preheated oven for 75 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 20 minutes, then turn out onto a wire rack and cool completely.
- To prepare the glaze: In a small bowl, combine confectioners' sugar, orange juice and 1 teaspoon vanilla. Drizzle over cake while still warm.

- Mix together first 6 ingredients. Combine small amount of mixture with flour; blend into remaining mixture. Gently fold in pecans. Pour into pie shell. Bake at 325F for 1 hour or until center is firm to touch
PLANTATION PECAN CAKE
This recipe was given to my mother by a friend. The only change I like to make about it is I prefer to use the yellow butter cake mix. This is a very delicious cake for company coming or to take to a church get together.

- Amount of coconut and pecans you add is to your own taste.
- Stir with a fork. Do not mix with a mixer.
- Bake in a Bundt or Tube pan after spraying with Baker's Joy or after greasing and flouring the cake pan. Bake at 350 degrees for 1-1 hour 15 minutes until done.
