Steps:
- Preheat oven to 350°F. Grease or line two baking sheets with parchment paper.
- In a large bowl, mix the butter with a wooden spoon until it is light and fluffy. Add 1 cup of sugar and mix until well combined. Add remaining sugar and mix well.
- Add the egg, vanilla, and salt; mix to combine. Add flour in three additions, mixing until the flour is just incorporated after each addition. The mixture should be loose and crumbly.
- Using your hands, press the dough against the bottom and sides of the bowl to bring it together into one cohesive mass.
- Shape dough into 1 1/2-inch balls (about 1 tablespoon each) and place them about 1-inch apart on prepared baking sheets. Using the bottom of a glass or the tines of a fork, flatten the cookies gently. If the dough sticks to the glass or fork as you work, dip it in granulated sugar between cookies.
- Bake until the cookies' edges just begin to brown, about 10 to 12 minutes. Serve warm or at room temperature.

Steps:
- Heat the oven to 190C/170C fan/gas 5. Cream the butter in a large bowl with a wooden spoon or in a stand mixer until it is soft. Add the sugar and keep beating until the mixture is light and fluffy. Sift in the flour and add the optional ingredients, if you're using them. Bring the mixture together with your hands in a figure-of-eight motion until it forms a dough. You can freeze the dough at this point.
- Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet (you don't need to butter or line it). Flatten the balls a little with the palm of your hand and bake them in the oven for around 10-12 mins until they are golden brown and slightly firm on top. Leave the cookies on a cooling rack for around 15 mins before serving.

- Mix and sift the dry ingredients. Put the flour, salt, and baking powder in a bowl and whisk them together.
- Cream the butter and sugars in a separate bowl. Place them in a large bowl and use a hand mixer to beat them together until the butter and sugars are fully combined and the mixture has turned light and fluffy.
- Add the eggs and vanilla. Keep beating the mixture until the eggs and vanilla are completely blended in.
- Stir in the flour mixture. Use a long-handled spoon to stir the dry ingredients in with the wet; keep stirring until you can't see any white specks of flour.
- Drop spoonfuls of batter onto a baking sheet. Use a spoon or a small ice cream scoop to scoop even amounts of batter onto a baking sheet. Space them an inch or two apart so they'll have room to spread while baking.
- Bake the cookies. Place the cookie sheet in the oven and bake the cookies for 15 minutes, or until they turn golden brown on top and the edges look slightly crisp.
- Remove the cookies from the oven to cool. Place them on a cooling rack or move them to a plate and let them cool until they aren't too hot to eat.
