While I normally like using all fresh ingredients, sometimes it's just not feasible. I like to keep comfort foods simple and this is no exception.

Steps:
- Drain chicken very well and empty into mixing bowl.
- Add remaining ingredients and mix well with a fork shredding chicken as you do so.
- Place in fridge to chill and let flavors disperse, think 30-60 minutes. Spread on your favorite bread with some romaine lettuce and enjoy!

EASY CHICKEN SALAD RECIPE
Made using just three simple ingredients, this basic chicken salad is great on a sandwich or atop a bed of lettuce. You can also use it to make bite-sized party appetizers. You can make it using poached chicken, grilled chicken, rotisserie chicken or canned chicken -- whatever you have on hand.

Steps:
- Shred chicken with fork.
- Add pickle relish. Slowly add mayonnaise, stirring to combine. Be careful not to add more mayonnaise than is required to bind the chicken salad together or it could overpower the dish.
- Serve on a bed of lettuce, on white bread or toasted wheat bread or in phyllo cups as an appetizer.

OLD FASHIONED CHICKEN SALAD
There's lots of good chicken salad recipes out there. My favorite is Old Fashioned Chicken Salad made the way my Granny did.

Steps:
- To stew the hen, place hen, breast down, in a large stockpot. Add remaining ingredients and fill stockpot with water. Use a colander insert if you have one for your stochpot. It makes removal of the hen and vegetables much easier.
- Cover and place on medium heat.
- Bring the pot to boil. Turn the heat down to medium low and simmer for one hour or until the hen is good and tender.
- Remove hen and vegetables. Discard vegetables.
- Set aside hen to cool. As soon as it's cool enough to handle, remove skin and bones.
- Shred the meat.
- To make the salad, place meat in a large mixing bowl.
- In a small mixing bowl, mix remaining ingredients to make the dressing.
- Add to chicken and mix.
- If mixture is too dry, add more mayo.
- Taste and adjust for seasoning.
- Chill before serving.
SIMPLE CHICKEN AND NOODLES
This is a recipe my grandmother used. She lived on a chicken farm, so it is as basic and simple as it can get. Usually all we have to accompany this recipe is mashed potatoes. It's really nice on cold days and extremely cheap to make.

- Remove any giblets, rinse the chicken with cold water, and place it into a large saucepan of water. Add 1 teaspoon salt, and bring to a boil over high heat. Reduce heat to a medium low, and simmer about 1 hour, skimming foam from the broth, until the chicken meat is tender.
- Mix the flour with a dash of salt in a bowl. With your fingers, make a depression in the top of the flour and drop in the eggs. Add the oil, and stir the eggs into the flour to make a stiff dough. Knead the dough for about 10 minutes, until smooth and elastic, and let it rest, covered, for about 10 minutes.
- Cut the dough in half, and roll each piece out, on a well-floured surface, into a rectangle shape until it's about 1/8 of an inch thick. Sprinkle the dough sheet with flour, and roll it up into a loose cylinder. With a sharp knife, cut 1/2 inch wide noodles from the roll. Unroll the noodles, and sprinkle with flour to prevent them from sticking together.
- Remove the chicken from the broth and let cool about 10 to 15 minutes, until it's cool enough to handle. Remove the skin and strip all of the meat from the bones, and return the chicken meat to the broth. Bring the broth back to a boil, drop in the fresh noodles, and let simmer over medium-low heat for about 10 minutes, until the noodles are tender, slightly puffed and lighter in color.

CLASSIC CHICKEN SALAD SANDWICHES

- To bake boneless chicken breasts, preheat the oven to 350 F. Line a baking pan with foil.
- Arrange the chicken on the pan and season lightly with salt and freshly ground black pepper.
- Bake until the chicken registers 165 F on a food thermometer. Depending on the size and thickness of the boneless chicken breasts, it will take 22 to 30 minutes. Let cool and chop.
- To poach boneless chicken breasts, place chicken in a single layer in a deep skillet or sauté pan.
- If desired, add some herbs and chopped aromatic vegetables, such as onions, garlic, or carrots. Cover the chicken with water (about 1/2 to 1 inch above the chicken breasts) and bring to a boil over high heat.
- Reduce the heat to a simmer, cover the pan, and continue cooking for 8 to 15 minutes, depending on the size of the chicken pieces.
- Check the chicken breasts with a food thermometer to ensure they are done to at least 165 F. Let cool and chop.
- Once you've cooked the chicken, gather all of the ingredients.
- In a medium bowl, combine the cooked, chopped chicken, onion, celery, and egg. Stir to combine.
- Add 1/3 cup of mayonnaise, the dill pickle relish, salt, and pepper to the chicken. Stir to blend well.
- Add more mayonnaise to moisten, if desired.
- Serve on bread with lettuce and enjoy.

- Wash celery stalks under cool water, chop very fine.
- Add chopped celery to mixing bowl.
