This Piña Colada recipe is refreshing, not overly sweet, and tastes distinctly like coconut and pineapple. We love it and we could drink it all summer long!

4 ½ oz pineapple juice (135 ml) (3 PARTS)
3 oz coconut rum (90 ml) (such as Malibu, 2 PARTS, not white rum)
1 ½ oz coconut milk* (45 ml) (1 PART, or cream of coconut)
1 teaspoon lime juice
1 teaspoon sugar (omit when using cream of coconut)
6 ice cubes
3 oz (90g) frozen fresh pineapple chunks (seven large (1-inch / 2.5 cm) chunks)
3 oz coconut rum (90 ml) (such as Malibu)
1 ½ oz coconut milk* (45 ml) (or cream of coconut)
1 oz pineapple juice (30 ml)
1 teaspoon lime juice
4 ice cubes

Steps:

  • BLENDER Pina Colada (Frozen Pina Colada - this version is served more often in restaurants) - add all ingredients into a blender container and blitz until almost smooth. Blender Pina Colada will have a slushie/smoothie consistency. You can also use a good immersion (hand) blender to mix the ingredients.
  • SHAKEN Pina Colada - add all the ingredients into a shaker or a big jar. Shake it thoroughly, for a minimum of 30 seconds. It's best to use crushed ice here. You can also serve it on the rocks (simply pour the drink over ice). This drink will be a little thinner.
  • Add all the ingredients into a blender container and blitz until the drink has a slushie consistency (or until smooth). You can also use a good immersion (hand) blender to mix the ingredients.
  • Serve chilled and enjoy!

Here's what you need: caster sugar, butter, eggs, coconut milk, pineapple juice, coconut cream, plain flour, baking powder, bicarbonate of soda, salt, icing sugar, butter, double cream, coconut rum, pineapple juice

2 ½ cups caster sugar
¾ cup butter, melted
2 eggs
½ cup coconut milk, malibu preferred
2 tablespoons pineapple juice
2 tablespoons coconut cream
2 cups plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 pinch salt
3 ½ cups icing sugar
1 cup butter
¼ cup double cream
1 tablespoon coconut rum
1 tablespoon pineapple juice

Steps:

  • Whisk the melted butter and sugar together until noticeably thicker in consistency (about 3 minutes).
  • Add the eggs, coconut rum, pineapple juice and coconut cream and whisk again until combined.
  • In a separate bowl, combine the flour, baking powder, bicarbonate of soda and salt. Add gradually to the butter and rum mixture, mixing each time.
  • Pour the cake batter into a jug and then pour into 12 cupcake cases, about ¾ of the way up. Bake for 15-18 minutes at 180°C (350˚F).
  • Once the cupcakes are out and have cooled, prepare the topping. Whisk the icing sugar, butter, double cream, coconut rum and pineapple juice together until thick and creamy.
  • Using a piping bag or zip top bag with a small corner cut off, pipe the topping onto the cupcakes and decorate with some dessicated coconut, cherries and a straw.
  • Enjoy!

2-1/4 cups unsweetened pineapple juice
1 can (15 ounces) cream of coconut
1-1/2 cups light rum
6 cups crushed ice
Pineapple wedges

Steps:

  • In a 2-qt. pitcher, combine pineapple juice, cream of coconut and rum. Refrigerate, covered, until chilled. For each serving, add a generous cup of rum mixture and 1 cup ice to a blender. Process, covered, until smooth. Pour into a chilled hurricane or highball glass. Cut a 1-in. slit into tip of a pineapple wedge; slide wedge over rim of glass.

Summer is almost over but we are still dreaming about piña coladas! These piña colada bombs are the perfect poolside treat.

2 cups unsweetened coconut flakes
½ cup candied pineapple chunks, chopped
½ cup dehydrated tart cherries, chopped
⅔ cup sweetened condensed milk
2 tablespoons coconut flour
½ cup pure cane sugar
½ cup water

Steps:

  • In a large bowl, stir together the coconut flakes, pineapple chunks, cherries, condensed milk, and coconut flour until evenly combined.
  • Roll the mixture into 1-inch (2½-cm) balls and place on a plate. Refrigerate for about 30 minutes, or until firm.
  • In a small saucepan over medium heat, combine the sugar and water. Bring to a boil over medium-high heat and cook for about 15 minutes, or until the temperature of the sugar reaches 300°F (150°C).
  • Carefully insert a skewer into a piña colada ball and dip in the sugar syrup to coat. Return to the plate to cool for 5 minutes and repeat with the remaining balls.
  • The piña colada balls will keep in an airtight container at room temperature for up to 3 days.
  • Enjoy!
