PIZZA WITH TURKEY SAUSAGE, ORANGE PEPPERS, AND ARUGULA
Savory turkey sausage is offset by sweet orange bell peppers in this perfectly balanced pizza. Arugula is scattered over the top after it bakes.

Steps:
- Place pizza stone or inverted baking sheet on rack in top third of oven.
- Heat oven to 450 degrees.
- Transfer stretched dough to parchment.
- Spread sauce on dough.Scatter garlic and cheese blend. Top with bell pepper slices and cookedsausage. Drizzle with olive oil.
- Transfer to oven: Slide parchment ontostone or baking sheet. Bake for 13 to 15 minutes, until cheese is bubbly and bottom is crisp. Top with arugula.

SAUSAGE PIZZA WITH ARUGULA AND GRAPES

Steps:
- Put a pizza stone or an inverted baking sheet on the lowest rack of the oven and preheat to 450 degrees F. Place a piece of parchment on another inverted baking sheet and brush with 2 teaspoons olive oil. Stretch and lightly pat the pizza dough into a 10-by-14-inch rectangle on the parchment. Prick the dough with a fork everywhere but the edges. Brush with the remaining 2 teaspoons olive oil. Slide the dough (on the parchment) onto the hot stone or baking sheet and bake until lightly browned on the bottom, about 8 minutes.
- Season the ricotta with 1/4 teaspoon salt and a few grinds of pepper. Remove the crust from the oven and spread the ricotta on top. Sprinkle with the thyme and top with the Cambozola, grapes and sausage. Slide back onto the hot stone or baking sheet and continue baking until the sausage is cooked through and the crust is golden, about 10 minutes.
- Remove from the oven and immediately scatter the shallot rings on top. Drizzle with the honey and top with the arugula.

ITALIAN TURKEY SAUSAGE PIZZA
This is a really simple pizza recipe, so much better than store-bought or even delivery. I love to make this pizza for our Saturday night movie! I use my recipe for Recipe #142364 for a topper on this recipe. Cook time includes time to rise. Mmmmm...so good!

Steps:
- Mix yeast and water in a large bowl; place in warm spot for about five minutes.
- Sift flour, salt, and sugar into the yeast. Mix well, then add olive oil and form a soft ball.
- Knead on floured surface until soft and elastic (about five minutes).
- Shape into ball and place in a lightly oiled bowl.
- Cover with a clean towel and place in a warm spot for about one hour.
- Punch down dough and reshape into ball. Cover and let sit another 20 minutes, or until it rises again.
- Preheat oven to 375 degrees.
- Shape dough into flat round shape and stretch onto pizza pan or hand toss and place on floured surface.
- Press fingertips into surface of dough until entire surface is dimpled.
- Brush olive oil over entire surface of pizza dough.
- Combine tomatoes, basil, 1 tsp salt, garlic and onion powder, and garlic together.
- Divide and spread evenly over dough.
- In layers add sausage, onion, mushroom, and cheeses.
- Sprinkle crust with left over parmesan cheese.
- Bake in oven for 25 minutes or until crust is golden and cheese is gooey.
- Remove from oven and let rest for 5 minutes before slicing.

DOUBLE-CRUSTED TURKEY SAUSAGE PIZZA

- Preheat oven to 450°F. Sauté sausages in heavy large skillet over medium-high heat until cooked through, breaking into small pieces with back of spoon, about 5 minutes. Using slotted spoon, transfer sausage to bowl. Mix in 1/2 cup cheese, red peppers and pesto; season with salt and pepper.
- Lightly sprinkle heavy large baking sheet with flour. Unfold dough on prepared sheet; cut dough in half crosswise. Stretch and/or roll each dough half into thin rectangle, approximately 7 by 10 inches. Press sausage mixture atop 1 dough rectangle, leaving generous 1/2-inch border. Top with second dough rectangle. Roll edges of dough together and press with tines of fork to seal. Cut several slits in top to allow steam to escape.
- Bake until crust is pale golden, about 10 minutes. Sprinkle with 3 tablespoons cheese. Bake until cheese melts, about 3 minutes longer. Transfer pizza to work surface. Cut into squares; serve hot.

- Heat oven to 425. Prepare your pizza crust in whatever way you prefer and prebake on a greased pan for 10 minutes.
- While crust is baking, saute the turkey sausage links in skillet until done. Cool briefly and dice into chunks.
- Spread pizza sauce over crust, top with sausage chunks, sliced pepper rings, mushrooms and mozzarella.
- Bake for an additional 10-12 minutes or until cheese is melted and lightly browned.
