HOMEMADE PIZZA SAUCE

Homemade Pizza Sauce image

For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! When I prepare my sauce, I usually fix enough for three to four pizzas and freeze it. Feel free to spice up the sauce to suit your own family's tastes. -Cheryl Kravik, Spanaway, Washington

How to Make Homemade Pizza Sauce image

Number Of Ingredients 11

2 tablespoons olive oil
2 anchovy fillets
3 cloves garlic, minced
2 tablespoons finely chopped fresh oregano leaves
½ teaspoon red pepper flakes
½ teaspoon dried oregano
1 (28 ounce) can whole peeled tomatoes (preferably San Marzano), crushed
salt to taste
½ teaspoon white sugar
1 pinch freshly ground black pepper
1 small pinch baking soda

Mix garlic into oil and cook just until fragrant, 1 minute more. Add fresh oregano and reduce heat to low; cook until oregano is wilted, 2 or 3 more minutes.
  • Mix red pepper flakes, dried oregano, and tomatoes into olive oil mixture. Bring sauce to a simmer and season with salt, sugar, and black pepper. Turn heat to low; simmer sauce until thickened and oil rises to the top, 35 to 40 minutes, stirring occasionally.

BEST PIZZA SAUCE RECIPE (NO COOK, AUTHENTIC ITALIAN STYLE)

Best Pizza Sauce Recipe (No Cook, Authentic Italian Style) image

The best and easiest Italian pizza sauce recipe.

Provided by Christina Conte

Categories     Dressings, Sauces, Syrups & Toppings

Time 5m

Number Of Ingredients 6

14 oz (400g) can of European tomatoes (preferably pomodoro pelato S.Marzano dell'Agro Sarnese-Nocerino D.O.P) THIS IS THE MOST IMPORTANT INGREDIENT-do not use inferior quality tomatoes
3 Tbsp good quality extra virgin olive oil
1/2 tsp sea salt
a few pinches of dried oregano
2 or 3 leaves of fresh Italian basil, torn into small pieces
(optional: a clove of fresh garlic, minced) my Italian family uses garlic, but it's only used on one type of pizza in Naples

Steps:

  • Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
  • Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

  • If using fresh tomatoes, bring a large pot of water to a boil. Make a small X in the bottom of each tomato and plunge into the boiling water until the skins are slightly loosened, 30 seconds to 2 minutes. Transfer to a bowl of ice water for 1 minute. Peel with a paring knife, starting at the X. If using frozen tomatoes, run each under warm water and peel or rub the skin off. Thaw in the refrigerator or defrost in the microwave until mostly thawed. Chop the tomatoes, reserving any juice.
  • Heat oil in a Dutch oven over medium heat. Add onions and cook, stirring, until beginning to brown, about 4 to 6 minutes. Add garlic and cook, stirring, for 1 minute. Add the tomatoes (and any juice), basil, thyme, oregano, salt, pepper and sugar (if using). Bring to a boil. Reduce heat to maintain a simmer and cook until thickened to the consistency of pizza sauce, about 2 hours. Taste and season with additional salt, pepper and/or sugar.
  • Transfer the sauce to a blender, add tomato paste and blend until smooth. (Use caution when pureeing hot liquids.)

  • Add all of the ingredients to a blender or food processor (starting with just 1/4 teaspoon salt), and blend until smooth. This is important so that the dried herbs are pureed throughout the sauce well for full flavor. Taste and add more salt if desired. If your tomato sauce has added salt, you may want more.
  • If using as a pizza sauce, just add it to your pizza crust of choice, add the toppings, and bake. If serving over pasta (my favorite use) simply warm it on the stove first just until heated through. Since the sauce is oil-free and made from pureed tomatoes, it will thicken up a lot in the fridge, so be sure to reheat in the microwave or over low heat on the stove to bring it back to a sauce consistency.
  • This sauce will keep for 2 weeks in the fridge or the freezer for 3 months. Thaw and reheat over low heat on the stove to use again.

HOMEMADE PIZZA SAUCE RECIPE | EATINGWELL
This recipe for garden-fresh pizza sauce makes a batch large enough to top several pizzas. You can make it right now with fresh tomatoes, but if you have a bumper crop or just want to buy a lot of in-season tomatoes and put them up for another day, canning is not your only option: try freezing them. Just remove the cores and freeze them whole.
