HOMEMADE PIZZA SAUCE
For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! When I prepare my sauce, I usually fix enough for three to four pizzas and freeze it. Feel free to spice up the sauce to suit your own family's tastes. -Cheryl Kravik, Spanaway, Washington

Steps:
- Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
- Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

- If using fresh tomatoes, bring a large pot of water to a boil. Make a small X in the bottom of each tomato and plunge into the boiling water until the skins are slightly loosened, 30 seconds to 2 minutes. Transfer to a bowl of ice water for 1 minute. Peel with a paring knife, starting at the X. If using frozen tomatoes, run each under warm water and peel or rub the skin off. Thaw in the refrigerator or defrost in the microwave until mostly thawed. Chop the tomatoes, reserving any juice.
- Heat oil in a Dutch oven over medium heat. Add onions and cook, stirring, until beginning to brown, about 4 to 6 minutes. Add garlic and cook, stirring, for 1 minute. Add the tomatoes (and any juice), basil, thyme, oregano, salt, pepper and sugar (if using). Bring to a boil. Reduce heat to maintain a simmer and cook until thickened to the consistency of pizza sauce, about 2 hours. Taste and season with additional salt, pepper and/or sugar.
- Transfer the sauce to a blender, add tomato paste and blend until smooth. (Use caution when pureeing hot liquids.)

- Add all of the ingredients to a blender or food processor (starting with just 1/4 teaspoon salt), and blend until smooth. This is important so that the dried herbs are pureed throughout the sauce well for full flavor. Taste and add more salt if desired. If your tomato sauce has added salt, you may want more.
- If using as a pizza sauce, just add it to your pizza crust of choice, add the toppings, and bake. If serving over pasta (my favorite use) simply warm it on the stove first just until heated through. Since the sauce is oil-free and made from pureed tomatoes, it will thicken up a lot in the fridge, so be sure to reheat in the microwave or over low heat on the stove to bring it back to a sauce consistency.
- This sauce will keep for 2 weeks in the fridge or the freezer for 3 months. Thaw and reheat over low heat on the stove to use again.

- In a large plastic or glass bowl, whisk the tomato sauce, tomato paste, and water together. Whisk in honey and all remaining ingredients. Can use immediately. Cover and refrigerate when not in use.
- Best if covered tightly and let sit for at least an hour. Taste and adjust seasoning if needed. Store in the refrigerator for up to a week or frozen for 3 months.
- I like to freeze the sauce in 1/2 cup sections, so I can defrost the amount I need to make a pizza.
