A deep-dish cousin to quiche that's packed with Italian deli meats and cheeses like prosciutto, pepperoni, soppressata, mozzarella and provolone, this rich pie, also called Easter pie, is traditionally made on Good Friday and served on the holiday to celebrate the end of Lent. This version came to The Times from Carlo's Bakery, in Hoboken, N.J., of "Cake Boss" fame, and it is the only savory item the bakery makes. It's typically eaten at room temperature, but the staff at Carlo's enjoys it warm right out of the oven.

6 cups all-purpose flour, plus more as needed
1/4 teaspoon salt
1 pound chilled salted butter, cut into large pieces
5 large eggs, beaten
12 ounces prosciutto, in 1/4-inch dice
8 ounces boiled ham, in 1/4-inch dice
8 ounces pepperoni, in 1/4-inch dice
8 ounces soppressata, in 1/4-inch dice
8 ounces mozzarella, in 1/4-inch dice
8 ounces provolone, in 1/4-inch dice
2 pounds ricotta
4 ounces grated pecorino Romano
10 large eggs, beaten
1 teaspoon pepper
1 large egg, beaten, for brushing crust

Steps:

  • For the dough: In a large bowl, whisk together 6 cups flour and the salt. Using a pastry cutter, large fork, or two knives, cut the butter into the flour until the mixture resembles coarse crumbs. Add eggs and knead for 1 minute. Add about 1 1/4 cups ice water, a little at a time, to form a cohesive dough. Knead the dough on a lightly floured surface until it forms a large smooth ball, about 5 minutes. Cover with plastic wrap and set aside for 30 minutes.
  • For the filling: Mix the meats, cheeses, the 10 eggs and pepper in a large bowl.
  • Heat oven to 350 degrees. Divide the dough into two pieces: two-thirds for the bottom crust and one-third for the top. On a lightly floured surface, roll out the larger portion of the dough into a rectangle to line the bottom and sides of a 10-by-15-inch glass baking dish, with some overhang. Add the filling and smooth it lightly. Moisten the edges of the dough with a little water.
  • Roll out the remaining dough to cover the top of the dish with some overhang. Trim off excess dough and crimp the edges to seal. Poke several sets of holes across the top with a fork. Bake for 45 minutes. Remove from the oven and brush top and edges with the beaten egg, then return to the oven until golden brown, another 45 minutes. Let pie cool completely before serving.

2 cups warm water
1 tablespoon sugar
½ cup olive oil
1 tablespoon instant yeast
5 ½ cups all-purpose flour
1 tablespoon salt
10 large eggs
16 oz ricotta cheese
1 cup fresh parsley, chopped
4 oz grated pecorino romano
8 oz ham, boiled, cubed
8 oz pepperoni, cubed
8 oz provolone cheese, cubed
8 oz salami, hard, cubed
4 oz prosciutto, chopped
1 ½ cups bread crumbs
1 large egg, beaten

Steps:

  • In a large mixing bowl, combine the warm water, sugar, olive oil, and instant yeast.
  • Add the flour and salt, and mix the dough together with a wooden spoon until it forms a ball. Then knead the dough for 1 minute, or until it feels smooth and springy.
  • Cover the dough in the bowl with a kitchen towel or plastic wrap. Let rise in a warm place for 2 hours.
  • Preheat the oven to 350°F (180°C).
  • In a large bowl, add 10 eggs, ricotta, parsley, and Pecorino Romano. Whisk the mixture until smooth.
  • Add the ham, pepperoni, provolone, hard salami, prosciutto, and bread crumbs. Fold in the cubed meats and cheeses. The texture should be thick and slightly wet.
  • Once the dough has doubled in size, dump it onto a floured surface, knead for 2 minutes, and shape it into a ball. Roll the dough out to a rough circle, about ¼-inch (½-cm) thick.
  • With a pizza cutter or knife, cut out a large disc that is 2 inches (5-cm) wider than a 9-inch (23-cm) springform pan or round baking dish. With the rest of the dough, cut thick strips about 9 inches (23-cm) long and 1 inch (2 cm) thick.
  • Transfer the dough disc into the springform pan or baking dish. Gently press the dough against the bottom and sides of the pan, allowing the excess to hang over the sides.
  • Pour the egg, cheese, and meat mixture into the pan. Pack the filling down and smooth the top with a spatula.
  • Weave the strips of dough on top to create a decorative pattern. Trim any excess dough, then fold and crimp the edges. Brush the top with egg wash.
  • Bake the pizza rustica for 2 hours, or until the filling is cooked through and the pizza dough has browned.
  • Let the the pizza rustica cool completely. Remove from the pan. Chill in the refrigerator overnight on a wire rack.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook and stir sausage in a large skillet over medium heat until browned, 5 to 8 minutes. Drain.

2 tablespoons olive oil
8 ounces hot Italian sausage, casings removed
1 teaspoon minced garlic
2 (12-ounce) bunches fresh spinach, stemmed, coarsely chopped (about 12 cups), or 1 (10-ounce) package frozen cut-leaf spinach, thawed and drained
1 (15-ounce) container whole milk ricotta
12 ounces mozzarella cheese, shredded
1/3 cup plus 2 tablespoons freshly grated Parmesan
4 ounces thinly sliced prosciutto, coarsely chopped
4 large egg yolks, beaten to blend
Pastry Dough, recipe follows
1 large egg, beaten to blend
3 1/2 cups all-purpose flour
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
1/4 cup cold solid vegetable shortening, cut into pieces
1 teaspoon salt
3 large eggs, beaten to blend
2 to 4 tablespoons ice water

Steps:

  • Position the rack on the bottom of the oven, and preheat the oven to 375 degrees F.
  • Heat 1 tablespoon of oil in a heavy large frying pan over medium heat. Add the sausages and saute until golden brown, breaking the sausage into pieces, about 5 minutes. Add the garlic and saute until fragrant, about 1 minute. Transfer the mixture to a small bowl and set aside to cool.
  • Meanwhile, heat 1 tablespoon of oil in the same frying pan over medium heat. Add the spinach and cook until the spinach wilts and the juices evaporate, stirring often, about 10 minutes. Cool to room temperature. Squeeze the spinach to drain as much liquid as possible.
  • Into a large bowl, add egg yolks and beat lightly. Stir in the ricotta, mozzarella, and 1/3 cup of Parmesan cheese. Add the sausage, the spinach and prosciutto to the mixture and stir to combine.
  • Roll out larger piece of dough on a lightly floured work surface to a 17-inch round. Transfer the dough to a 9-inch springform pan. Trim the dough overhang to 1 inch. Spoon the ricotta mixture into the dough-lined pan. Roll out the remaining piece of dough into a 12-inch round. Place the dough over the filling. Pinch the edges of the doughs together to seal, then crimp the dough edges decoratively. Brush the beaten 1 large egg over the entire pastry top. Sprinkle the remaining 2 tablespoons Parmesan over the top. Bake on the bottom shelf until the crust is golden brown, about 1 hour.
  • Let stand 15 minutes. Release the pan sides and transfer the pizza to a platter. Cut into wedges and serve.
  • Blend the flour, the butter, the shortening and salt in a food processor until the mixture resembles coarse meal. Blend in the eggs. With the machine running, add the water 1 tablespoon at a time until the dough forms. Gather the dough into a ball. Divide the dough into 2 pieces, with 1 piece twice as large as the second piece. Flatten the dough pieces into disks. Wrap in plastic wrap and refrigerate until the dough is firm enough to roll out, about 30 minutes.

DOUGH: 1/2 batch Crazy Dough*
FILLING:
500 g ricotta cheese
3 eggs, (slightly beaten)
100 g Mozzarella cheese
50 g grated Parmesan or Pecorino or Grana Padano cheese
150 g boiled ham
100 g spicy salami
150 g pork cracklings
2 hard boiled eggs
1 egg for brushing

Steps:

  • Roll 2/3 of the Crazy Dough on your table or counter. Transfer it to the buttered spirng form pan. You can use quite a lot of flour while kneading/rolling, because Crazy Dough is very soft and additional flour will help you transfer the dough easier to the pan.
  • FILLING: Cube all of the filling ingredients, place in a large bowl together with ricotta cheese and eggs. Mix to combine. Put into baking pan lined with the dough.
  • Roll out remaining 1/3 of the Crazy Dough and cover the top of the pizza. Pinch bottom and upper dough together. If the pizza is uneven, press lightly with your hands to shape it nicely. Cut a few slits in the top dough. Brush the egg wash over the top.
  • Bake Pizza Rustica in preheated 175 C (350 F) oven for about 1 hour and 15 minuts. After 45 minutes I put a piece of aluminum foil losely over it because it turned brown too quickly. Be sure to let the steem escape from under the foil.
  • Let cool before cutting.

This most typical savory pie is served for Carnevale (the day before Ash Wednesday) and then again for Easter. Though many recipes for pizza rustica specify that the dried sausage, mozzarella and other filling ingredients be layered, in the Neapolitan version, they are diced and added to the ricotta filling, making the resulting pie easier to cut into wedges. The listed ingredients are sufficient to fill an 8x8x3 inch caserole. It is interesting to note that some of the folks warmed this dish. We always ate it at room temperature.

  • Heavily spray the pan with cooking oil or line with parchment then set aside.
  • For the crust:
  • In a medium-sized bowl mix flour, salt, pepper, 2 eggs, milk and oil, and baking powder.
  • Cut the dough in half.
  • Roll out bottom crust and place in two deep-dish pie plates, a disposable 12 x 9 pan or you can use a springform pan.
  • For the filling (this is layered however you want and a guideline):
  • Add to a large bowl two of the eggs, ricotta, salt, garlic, and pepper, and set aside.
  • Place some of the prosciutto and half the ricotta on the crust.
  • Next, add the salami and brush with a little beaten egg.
  • Place the boiled eggs next then pepperoni, brush with more egg e.
  • Add the soppressata and hot ham, add the remaining ricotta and salami.
  • Brush with more egg., add the mozzarella and provolone.
  • Top with remaining thinly rolled out crust either full sheet or lattice top, and more egg wash.
  • Bake at 375 degrees for 55 minutes or until the top is nicely browned.

milk, as much as needed
basket cheese or ricotta cheese
large eggs
provolone - sharp
mozzarella

  • Get the Ingredients used in this recipe HERE! Prepare the Dough: In a stand mixer, add the flour, salt and the shortening or lard cut in cubes. Let the flour absorb all the shortening or lard. Add the eggs and let them mix well. Add enough milk (about 1/4 + Cups) until you have a firm ball of dough. Let it rest. Prepare the Filling: Cut all the meats and cheeses in small cubes and put in a large bowl. Add the grated Pecorino and mix. Add the eggs and mix. Add the basket cheese and mix well. Add fresh black pepper as desired. Set aside. Assemble the Pizza Rustica: Preheat the oven at 350F Butter and flour a 9" springform pan. Cut a little less than 1/3 of the dough and set aside. For the crust:
3 cups all-purpose flour
2 teaspoons granulated sugar
2 teaspoons kosher salt
12 tablespoons (1½ sticks) cold unsalted butter, cubed
1 large egg
7 tablespoons ice water
Nonstick cooking spray
For the filling:
8 ounces sweet Italian sausage, casings removed
1 (15-oz.) container whole-milk ricotta cheese
8 ounces low-moisture mozzarella cheese, cubed
0.13 teaspoon freshly-ground black pepper
4 large eggs
8 ounces salami, cubed
8 ounces hot capicola, cubed
8 ounces smoked ham, cubed
2 ounces thinly sliced proscuitto
1 cup tightly packed whole roasted red bell peppers (about 7 oz.), drained and patted dry with paper towels
2 (10-oz.) pkg. frozen chopped spinach, thawed and squeezed dry and pressed between paper towels to remove all moisture
2.5 ounces Parmesan cheese, finely shredded (about 1 cup)

Steps:

  • Prepare the crust: Combine flour, sugar, and salt in the bowl of a food processor and pulse until combined, 3 to 4 times. Add butter and egg; pulse until mixture resembles coarse meal, 8 to 10 times. Sprinkle ice water over dough; pulse until dough begins to form a ball. Turn dough out onto a lightly floured surface; divide in half, and shape into 2 (4-inch) disks. Wrap each in plastic wrap, and refrigerate 30 minutes or overnight.
  • Preheat oven to 350°F with rack in middle position. Unwrap 1 disk of dough on a lightly floured surface. Roll to a 16-inch circle, and carefully fit into a 9-inch springform pan coated with cooking spray, leaving a 1-inch overhang. Refrigerate until ready to use.
  • Prepare the filling: Cook Italian sausage in a large nonstick skillet over medium-high, breaking up sausage with a spoon until crumbled and cooked through, 5 to 7 minutes. Transfer sausage to a plate and let cool completely, about 15 minutes. Whisk ricotta, mozzarella, pepper, and 3 of the eggs in a large bowl. Stir in salami, capicola, and ham.
  • Shingle prosciutto slices in bottom of prepared dough-lined pan. Spread ricotta mixture over prosciutto. Scatter browned sausage over ricotta mixture, pressing lightly into an even layer. Shingle red bell peppers over sausage; top with spinach and Parmesan.
  • Roll remaining dough into a 12-inch circle on a lightly floured surface. Carefully place over filling. Trim overhang so that it's even with bottom crust; pinch top and bottom crusts firmly together. Fold dough under and crimp edges.
  • Lightly beat remaining egg and brush liberally over top of pie. Using a paring knife, cut 4 (1-inch) vents in top of dough in a circular pattern. Place pie on a rimmed baking sheet. Bake until crust is golden brown, about 1 hour. Cover with aluminum foil and bake until a thermometer inserted in center of pie registers 150°F, about 30 more minutes. Transfer pie to a wire rack, and let cool at least 3 hours before serving. Carefully remove sides of pan, and cut pie into slices to serve. Or cool completely, and refrigerate for up to 2 days.

2 ½ cups all purpose flour
½ cup cold butter, cubed ((one stick))
2 tablespoons olive oil
1 large egg
1 teaspoon kosher salt
4 tablespoons cold water
15 ounces ricotta cheese
8 ounces shredded mozzarella cheese ((about a cup))
2 ounces shredded parmesan ((about ¼ cup) )
4 large eggs, beaten
6 ounces ham, diced ((about 1 ½ cups))
2 ounces salami, chopped ((about ½ cup))
2 ounces prosciutto, chopped ((about ½ a cup))
½ teaspoon kosher salt
¼ teaspoon pepper
1 large egg, beaten

Steps:

  • In a food processor fitted with the blade attachment, combine the flour, cold cubed butter, olive oil, egg, and salt. Pulse just until the mixture is combined; it should resemble coarse sand. With the food processor running, pour 4 tablespoons of cold water in and mix until the dough comes together and forms a ball.
  • Lay out a piece of plastic wrap. Dump the dough on to the plastic wrap and press together into a disk shape. Wrap in plastic wrap and refrigerate for at least an hour or overnight.
  • In a large bowl, combine all of the filling ingredients, and mix until combined. Set aside.
  • Preheat oven to 425 degrees. Divide the dough into two pieces: two-thirds for the bottom crust and one-third for the top crust. On a lightly floured surface, roll out the larger piece of dough into a circular shape. Carefully place the dough in a greased springform pan and line the insides and bottom with it. You can use any scrap pieces to fill in the gaps in the pan.
  • Pour the ricotta filling into the crust. Use a spatula to smooth and even it out.
  • Roll out the remaining pie crust into a circle. Place it over top of the ricotta filling. Trim any excess overhang and use the side crust to roll over the top crust of the pie. Brush the pie with a beaten egg and make a small "x" shape in the middle of the pie to allow steam to escape.
  • Place the pie on the middle rack of the preheated oven and immediately reduce the temperature to 350 degrees. Bake for about 75 minutes or until the crust is golden brown. Let cool for five minutes before removing the collar; let sit for another 10 minutes before slicing and serving.

1 cup cold unsalted butter (cubed)
1 large egg
500 grams mild Italian sausage (without the casing)
300 grams swiss chard (1/2 bunch, stems removed)
1 tbsp. olive oil
1 clove garlic (finely minced )
100 grams prosciutto cotto ((about 3 slices))
475 grams whole milk ricotta (drained if very watery)
1 cup mozzarella cheese (shredded)
1 cup provolone cheese (shredded)
5 tbsp Parmigiano/Pecorino Romano cheeses (grated (or only 1 of 2 if you prefer))
4 large eggs
pepper (to taste )
1 large egg (for brushing on the crust )

Steps:

  • Combine flour, salt and baking powder in the bowl of your food processor. Add cubed butter and pulse until the mixture resembles a course meal. Add the egg and blend until combined.
  • With the motor running begin adding a tbsp of ice cold water at a time until a dough is formed and wraps itself around the blade. I added 5 tbsps of water to my dough. Remove the dough from the food processor, shape into a disc. Cover with plastic wrap and refrigerate for an hour.

Pizza Rustica image

This traditional Easter tart recipe combines a creamy cheese and meat center encased in a bread crust.

1 Pound Ricotta Cheese
8 Ounces Diced Mozzarella
1 Cup Diced Fontina Cheese
1/2 Cup Grated Pecorino Romano Cheese
2 Cups Diced Cooked Ham
1 1/2 Cups Diced Soppressata Sausage (Spicy or Mild)
1 Teaspoon Black Pepper
1 Teaspoon Dried Oregano
3 Large Eggs
2 1/2 Cup Unbleached All-purpose Flour
1 Stick, 1/2 Cup Unsalted Butter Cut Into Pieces
Pinch of Salt
2 Large Eggs
4 to 5 Tablespoons Freshly Squeezed Lemon Juice
1 Egg
1 Tablespoon Water

Steps:

  • Place the flour, salt and butter in a food processor, and pulse a few times to break down the butter.
  • Add the eggs and lemon juice, and pulse just until the mixture comes together.
  • Dump he mixture onto the counter and shape into a disc.
  • Wrap with plastic wrap and refrigerate for 1 hour.
  • While the dough is resting in the refrigerator, preheat oven to 350 degrees F.
  • In a bowl, mix together the filling ingredients with a wooden spoon until they are blended.
  • Cut the dough into two pieces, one large than the other.
  • Oil a 9 inch springform pan.
  • Between two pieces of plastic wrap or parchment paper, roll out the larger portion of the dough until it is about 1/4 inch thick.
  • Carefully roll the dough over the rolling pin to transfer the dough to the pan.
  • The dough should be large enough to cover the bottom and sides of the springform pan.
  • Spoon the filling into the pan.
  • Roll out the second piece of dough into a circle, and place over the filling.
  • Trim the extra dough allowing an additional 1 inch, then pinch together the top and bottom pastry circles, enclosing them completely.
  • Beat the egg with the water, then brush the top of the pie with the egg mixture.
  • Use a knife to cut slits into the pie, then bake for about 1 hour, or until golden brown in color.
  • Transfer pie to a wire rack, and cool to room temperature before slicing.
