- Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, cook and stir sausage and onion until sausage is no longer pink and onion is tender, 5-7 minutes, breaking up sausage into crumbles; drain. Press cancel., Stir in mushrooms and broth. Add quinoa (do not stir). Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 2 minutes. Quick-release pressure. Press cancel., Stir in pizza sauce, pepperoni and green pepper; cover and let stand until pepper softens slightly, 5-10 minutes. Sprinkle servings with cheeses. If desired, serve with optional toppings., , Slow-cooker option: In a large skillet, heat oil over medium heat; cook sausage and onion until sausage is no longer pink, 5-7 minutes, breaking up sausage into large crumbles. Drain. , Transfer sausage and onion to a 4- or 5-qt. slow cooker. Stir in mushrooms, broth and quinoa. Cook, covered, 5 hours; stir in pizza sauce, pepperoni and green pepper. Cook, covered, 1 hour or until pepper is tender. Sprinkle servings with cheeses. If desired, serve with optional toppings.

- Heat oven to 400°F.
- In 4-quart saucepan, heat 2 tablespoons of the olive oil over medium heat. Add quinoa, and cook about 5 minutes, stirring constantly, until lightly toasted. Add water and a large pinch of salt. Heat to boiling over medium-high heat; cover, and reduce to a simmer. Cook 15 to 20 minutes or until all of the water is absorbed into the quinoa.
- In 10-inch skillet, heat remaining 2 tablespoons oil over medium heat. Cook onion in oil 5 to 7 minutes, until soft and translucent. Add garlic, black pepper and crushed red pepper; cook 1 minute longer. Add spinach, tomato, pineapple and ham; cook until heated through, stirring constantly. Salt to taste.
- In small bowl or measuring cup, mix ricotta, 1 cup of the mozzarella, 1/2 cup of the Parmesan, and the milk.
- Add the quinoa and cheese mixture to the skillet with the onion mixture, and fold together the ingredients. Taste and adjust seasonings, if desired. Transfer to 13x9-inch (3-quart) casserole, and spread evenly.
- Top with remaining mozzarella and Parmesan cheese. Cover with foil, and bake 20 minutes. Remove foil and, if desired, place under the broiler for a few minutes until cheese browns.
- Serve immediately, or recover with foil and keep warm in oven until ready to serve.

- Rinse quinoa well and combine with water in a small pot over high heat. Bring to a boil, cover and turn down to low and simmer for 15 minutes until all the liquid is absorbed, the quinoa is tender and completely cooked. Remove from the heat and leave covered in the pot for 5 minutes while assembling other ingredients.
- Preheat oven to 350 degrees. Grease 4 – 1 cup ramekins, 2 – 2 cup dishes or a larger casserole dish, depending on how you want to bake and serve this.
- In a small bowl, combine the tomato paste with the garlic and onion, water and olive oil. Mix well. Add all the seasonings including the nutritional yeast if using. Mix well again before adding the quinoa. Once the mixture is completely mixed, taste for seasonings and add more salt as needed. Then divide evenly among the dishes for baking, sprinkle with cheese if desired and place in the oven. I baked mine in two larger dishes, but this could easily be done in smaller ramekins for individual servings, or in one larger dish.
- Bake 30-35 minutes until the cheese is golden and bubbly or until the quinoa on top is golden and crispy. If desired, sprinkle with more nutritional yeast and fresh basil or parsley and serve.

- Add chicken broth, mushrooms and quinoa to Instant Pot, making sure to add quinoa last. Set to manual and pressure cook on high for 2 minutes. Instant Pot will take about 10 minutes to pre-heat and then the 2 minutes to cook. When complete, press cancel and do a quick release of the steam, waiting until the pressure gauge drops back down and the lid is safe to open.
- Remove lid and add pizza sauce, green pepper and red onion, then stir. Replace lid, then let sit 5 minutes to soften veggies. Remove lid and add in pepperoni, then stir.
- Divide mixture among 6 bowls (or however many bowls you need at time of serving), then top with cheese, and microwave for 2 minutes to melt cheese. Serve and enjoy!
- Note: Melted cheese is not ideal to store as leftovers, so store any remaining pizza quinoa mixture without cheese in the fridge. When ready to serve leftovers, add to a bowl and microwave 2 minutes, stir, then top with cheese and microwave another 1 minute before serving.
