- Lay flatbread on work surface and spread pizza sauce evenly over entire flatbread.
- On one half of flatbread, sprinkle about 2 tablespoons cheese and basil. Lay pepperoni slices evenly on top, and then sprinkle the remaining cheese evenly on top of the pepperoni.
- Fold quesadilla in half, bringing the sauce-only half of the flatbread on top of the side with toppings.
- Preheat a medium nonstick skillet over medium heat. Cook quesadilla, covered, for about 3 minutes on the first side, just until toasty golden-brown.
- Flip quesadilla over and continue cooking on the second side, covered, for about an additional minute, until cheese is melty and the second side of the flatbread is a light, toasty golden-brown.
- Remove from heat, cut into wedges, and serve with additional pizza sauce for dipping, if desired.

- Heat a large skillet over medium heat. If you use higher heat the outside of the tortilla will be brown and the insides will still be cold.
- Add butter and let it melt.
- Put a tortilla in the pan. You can use flour, gluten-free, low carb, corn, or whole wheat tortillas.
- Sprinkle a thin layer of grated mozzarella cheese over the tortilla.
- Add a layer of pepperoni slices over cheese. You can also use other meats like chicken, steak, ham, etc.
- Add vegetables or pineapple (optional)
- Sprinkle on another layer of cheese.
- Place another tortilla on top.
- Continue cooking until the bottom tortilla is golden brown, then flip the quesadilla.
- Cook the other side until it's golden brown.
- Move to a cutting board to cool for one minute. Cut into wedges.

- Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer onto a paper towel to drain.
- Brush each tortilla with a thin layer of pizza sauce. You want the layer so thin that if you turned it over, none would drip.
