1 Light Italian Herb Flatout flatbread
2 tablespoons of your favorite pizza sauce
1/3 cup shredded, reduced-fat Italian cheese blend
1/8 teaspoon dried basil
5 slices turkey pepperoni
additional pizza sauce, if desired, for dipping

Steps:

  • Lay flatbread on work surface and spread pizza sauce evenly over entire flatbread.
  • On one half of flatbread, sprinkle about 2 tablespoons cheese and basil. Lay pepperoni slices evenly on top, and then sprinkle the remaining cheese evenly on top of the pepperoni.
  • Fold quesadilla in half, bringing the sauce-only half of the flatbread on top of the side with toppings.
  • Preheat a medium nonstick skillet over medium heat. Cook quesadilla, covered, for about 3 minutes on the first side, just until toasty golden-brown.
  • Flip quesadilla over and continue cooking on the second side, covered, for about an additional minute, until cheese is melty and the second side of the flatbread is a light, toasty golden-brown.
  • Remove from heat, cut into wedges, and serve with additional pizza sauce for dipping, if desired.

4 ounces pepperoni (sliced)
1 cup mozzarella cheese (grated)
1 tsp butter
1/2 cup marinara sauce (for dipping)
sliced olives
peppers
mushrooms

Steps:

  • Heat a large skillet over medium heat. If you use higher heat the outside of the tortilla will be brown and the insides will still be cold.
  • Add butter and let it melt.
  • Put a tortilla in the pan. You can use flour, gluten-free, low carb, corn, or whole wheat tortillas.
  • Sprinkle a thin layer of grated mozzarella cheese over the tortilla.
  • Add a layer of pepperoni slices over cheese. You can also use other meats like chicken, steak, ham, etc.
  • Add vegetables or pineapple (optional)
  • Sprinkle on another layer of cheese.
  • Place another tortilla on top.
  • Continue cooking until the bottom tortilla is golden brown, then flip the quesadilla.
  • Cook the other side until it's golden brown.
  • Move to a cutting board to cool for one minute. Cut into wedges.

2 cups (500 mL) shredded mozzarella cheese
2 oz (60 g) sliced pepperoni (about 30 slices)
1 cup (250 mL) pizza sauce, heated

Steps:

  • Heat coals or gas grill for direct heat. Place 2 of the tortillas on cookie sheet. Sprinkle each with 1/2 cup of the cheese. Top each with half of the pepperoni. Sprinkle 1/2 cup of remaining cheese over each. Top each with tortilla.
  • Transfer quesadillas to grill 4 to 6 inches from low heat. Cover and grill 2 to 3 minutes, rotating occasionally, until bottom tortilla is golden brown. Turn over with broad pancake turner. Cover and grill 2 to 3 minutes longer or until bottom tortilla is golden brown.

8 ounces of shredded mozzarella cheese
6 ounces sliced pepperoni
1 (16-ounce) jar of pizza sauce
butter for pan

Steps:

  • Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer onto a paper towel to drain.
  • Brush each tortilla with a thin layer of pizza sauce. You want the layer so thin that if you turned it over, none would drip.
  • Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).
  • Preheat a medium cast-iron skillet over medium heat. Add a little butter if desired and melt.
  • Gently place quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.

2 White 7" tortillas / tortillas blanches 7"
4 tbsp Pizza sauce / sauce à pizza

  • Heat a large non-stick frying pan over medium heat. Arrange pepperoni and cook until crispy on both sides, flipping halfway, about 30 seconds per side. Carefully wipe the pan clean. (If short on time, skip this step and simply add the un-crisped pepperoni with the cheese in the next step.) ##Working quickly, lay both tortillas on a work surface and divide 2 tbsp pizza sauce over both, spreading with the bottom of a spoon. If using, sprinkle oregano over 1 tortilla. Top with a 1/2 cup of cheese, then layer with the pepperoni and remaining cheese. Top with the remaining tortilla, sauce side down. ##Place the pizza quesadilla on the frying pan, still at medium heat, and cook until browned, about 2 minutes. Carefully flip and cook another 2-3 minutes, pressing slightly. It's done when the cheese is melted and the tortilla is lightly browned on both sides. ##Transfer to a cutting board and let cool for 2 minutes before cutting into 4-6 triangles. Let cool a couple of minutes more and place in a sealed lunch container with another small container filled with the remaining pizza sauce, for dipping. If using, garnish with basil leaves before sealing the container. ##Time-Saving Tip: For an even easier morning, assemble the pizzadilla the evening before, but don't cook it. Store it in the fridge overnight and skip straight to step three in the morning.
