HOMEMADE POTATO SKINS
Homemade potato skins are great while watching football or serving at a casual party. There is absolutely no need to deep fry them. As long as the skins are cooked at a high heat, they will be perfectly crispy! After eating these my boyfriend proclaimed, "no need to spend ten bucks at a restaurant anymore!"

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Rub potatoes with olive oil and place on a baking sheet.
- Bake in the preheated oven until tender, about 1 hour. Remove from the oven and let sit until cool enough to handle, about 10 minutes. Increase the oven temperature to 450 degrees F (230 degrees C).
- Cut potatoes in half lengthwise. Scoop out the flesh, leaving 1/4 inch on the skin. Brush canola oil all over the potato skins, outside and inside, and sprinkle with salt. Reserve flesh for another use.
- Bake skins in the preheated oven for 10 minutes. Flip and continue to bake for 10 minutes more. Remove from the oven. Turn on the oven's broiler.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
- Arrange the potato skins flesh-side up on a roasting pan or rack. Sprinkle the insides with pepper, Cheddar cheese, and crumbled bacon. Return to the oven and broil until cheese is bubbly, about 2 minutes. Remove from the oven.
- Add a dollop of sour cream to each skin and sprinkle with green onions.

PIZZERIA UNO'S PIZZA SKINS
Warm cheesy mashed potatoes on top of a deep dish pizza crust. Yummy appetizer. Loved this in the restaurant. Have not tried this recipe yet. Found it on www.recipegoldmine.com Measurements were not on the original, so I just made them up. When I try the recipe, I will come back and edit the amounts It seems so easy, I can't wait to try it (although its not on my diet).

Steps:
- Heat oven to 350 degrees F.
- Place mashed potatoes to a thickness of about 1/2 inch on top of pizza crust.
- Bake until potatoes are warm (about 160 degrees F).
- Top with a heavy layer of shredded Cheddar cheese and sprinkle bacon bits on the top of cheese. Place back into oven and heat until cheese is melted.
- Serve with sour cream and chives.

" PIZZA PAN" POTATO SKINS
There's a pub we go to that makes their own french fries, and instead of throwing out the skins, they fry them up and bake them with toppings in a pizza pan. They bring them sizzling to your table in the pizza pan with sour cream for dipping. Dare I say that they are better than the french fries? Not a low calorie item but so good. This is my attempt to duplicate them.

Steps:
- Preheat oven to 375°F.
- Cook the diced bacon until crispy, remove from bacon fat and drain on paper towel.
- Forget everything you were ever taught about peeling potatoes, and peel them with a knife leaving a good bit of potato on the skin.
- Retain center of potatoes for another recipe, or slice them into wedges and cook in the same manner as the potato skins.
- Deep fry the potato skins until crispy and golden.
- Drain thoroughly and salt to taste.
- Spread the potato skins evenly on a pizza pan.
- Sprinkle evenly with the green onions, cheese and bacon.
- Bake for 10-15 minutes until hot and cheddar is melted.
- Serve hot with sour cream for dipping.

- Using a spoon, make a shallow trough in the cut side of the potato to hold filling, leaving at least a ¼" border around edges. Be careful not to take too much potato out, just enough to keep filling from sliding off.
- Brush potatoes with unsalted butter and season lightly with salt and pepper. Turn potatoes over and butter and season the skin side. Place them on a baking sheet skin side-up and broil 2–3 minutes until starting to brown. Turn over and broil 2–3 minutes more then remove from oven.
