FRIED CHICKEN PIZZA

Steps:
- Position an oven rack in the bottom third of the oven and preheat to 475 degrees F. Drizzle a baking sheet with 2 tablespoons of the olive oil.
- Mix together the chipotle mayo, honey and lime zest and juice in a bowl. Add the slaw mix to a medium bowl, top with two-thirds of the dressing and toss; season with salt and pepper. Cover the slaw and remaining dressing and refrigerate until ready to use.
- Pull or roll the risen bread dough into a large rectangle and place onto the prepared baking sheet. Drizzle the remaining 2 tablespoons olive oil over the dough. Spread with the BBQ sauce and top with the mozzarella. Arrange the chicken strips over the sauce and cheese. Bake on the bottom oven rack until the crust is golden brown, 12 to 15 minutes.
- Transfer the pizza to a cutting board, pile on the slaw, sprinkle over the pickles and jalapeños and drizzle with the remaining dressing. Slice into pieces and serve.
PIZZA-FIED CHICKEN 2.0
Steps:
- Evenly pound chicken to 1/4-inch thickness. Season with salt and pepper.
- Bring a skillet sprayed with nonstick spray to medium heat. Cook chicken for 3 - 4 minutes per side, until cooked through.
- Meanwhile, to make the sauce, combine these ingredients in a small bowl: crushed tomatoes, garlic powder, and onion powder. If you like, add salt and pepper. Mix well.
- While still in the skillet, top chicken with sauce, and sprinkle with cheese. Top with pepperoni.
- Cover and cook for 2 minutes, or until sauce is hot and cheese has melted.

PIZZA-FIED CHICKEN

- Season chicken with garlic powder, onion powder, 1/8 teaspoon salt, and black pepper. Set aside.
- Bring 2 skillets sprayed with nonstick spray to medium heat on the stove. In one skillet, cook bell pepper, mushrooms, and onion until softened, 4 to 6 minutes.
- In the other skillet, cook chicken until cooked through, about 3 minutes per side.
- Cook's Note: Alternatively, use one skillet and cook the veggies and chicken consecutively.
- Place crushed tomatoes in a small bowl and season to taste with garlic powder, onion powder, salt, and pepper. Evenly spoon seasoned tomatoes onto chicken in skillet. Tear string cheese into pieces and place over the tomatoes.
- Top chicken with vegetables and turkey pepperoni. Cover with a lid and continue to cook until the cheese softens, 1 to 2 minutes.
- Plate your pizza-fied chicken and sprinkle with grated topping. Garnish with crushed red pepper and oregano, if using. Enjoy!

- Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.
- Pound chicken to 1/2-inch thickness. Season with salt and black pepper. Bring an extra-large skillet sprayed with nonstick spray to medium heat. Cook for about 4 minutes per side, until cooked through. Transfer to a cutting board.
- Meanwhile, in a large bowl, combine cream cheese with 1/4 teaspoons garlic powder and 1/4 teaspoons onion powder. Stir until smooth and uniform.
- Remove skillet from heat; clean, if needed. Re-spray, and bring to medium-high heat. Add mushrooms and bell pepper, and sprinkle with remaining 1/4 teaspoons garlic powder and 1/4 teaspoons onion powder. Cook and stir until slightly softened and lightly browned, about 6 minutes.

GOURMET CHICKEN PIZZA
Here is a chicken pizza recipe that you may love. We do. We used to purchase this already prepared for the oven, so now I have come up with my own recipe. A perfect piece of pizza!

- Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.
- Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.
- Unroll dough, and press into the prepared pizza pan or baking sheet. Bake crust for 7 minutes in the preheated oven, or until it begins to turn golden brown. Remove from oven.
- Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.
