- Remove dough from refrigerator and let rest to room temperature. Preheat oven with baking steel on top shelf at 500 F for one hour. Remove sausage from casing, place in the center of a 12 inch long plastic wrap. Take a second piece of plastic wrap and place on top. Using a rolling pin, press and roll the sausage into a patty by about 9 inches x 6 inches. Refrigerate until needed. Flour your work surface and stretch or roll the dough to about 12 x 8 inches. Position the dough long side facing you. Remove sausage from fridge and peel off top piece of plastic wrap. Using the bottom piece of plastic wrap flip and center the sausage on the dough, positioning it 1/2 inch from the edges. Remove plastic wrap. Trim and leave a 1 inch border around all sides. Fold up the border of the dough nearest you and then continue to roll up as you would a stromboli or jelly roll. Turn the roll seam side up and stretch the edge of the dough over to compact the roll as much as possible. Press on the seam to seal and pinch it closed. Pinch and close the ends. Brush the top with olive oil. Brushing the dough with oil will help soften it and prevent it from shattering when the roll is cut. Carefully launch the roll onto the baking steel and bake for 7 minutes. Lift and rotate 180 degrees and bake for another 3 or 4 minutes. Transfer roll to a cutting board and let it rest for 2 to 3 minutes. Add some seasonings, pecorino, oregano, pepper flakes. Slice on a diagonal into 6 or 8 pieces. This can also be served with a dabble of fresh tomato sauce.

- Cook and stir sausage in a skillet over medium heat until crumbly, evenly browned, and no longer pink, 8 to 10 minutes. Drain and discard any excess grease.
- Spread pizza dough evenly onto a 9x13-inch baking sheet; sprinkle with sausage and mozzarella cheese. Roll the dough around the sausage and mozzarella, using the method similar to rolling a cinnamon roll. Crimp the roll closed; place seam side down on baking sheet. Brush the roll with olive oil.

- Place pie crust dough onto a flat surface. Spread them generously with mustard. Spread 1/2 pound of sausage onto each pie crust. Flatten the sausage down with a spatula. Roll the pie crust mixture up like a jelly roll. Slice the roll into 1/2-inch circular pieces.

- In a large skillet, cook the sausage, onion and peppers over medium heat until the meat is no longer pink; drain. Combine crust mixes; prepare according to package directions. - Preheat the oven to 375˚F (190˚C).
- Heat olive oil in a pan and add sliced peppers and onions.
- Stir and add Italian seasoning and garlic. Cook until peppers and onions are soft and set aside to cool.
- In the same pan, brown the sausage until it's fully cooked and remove from heat to cool.
- Roll out pizza dough into an oval about 14 inches (35 cm) wide and about 8 inches (20 cm) long. Place rolled-out dough on a piece of parchment paper.
- Along the center of the dough, layer the sausage, peppers, ham, salami, provolone, and mozzarella.
- Fold the longer sides in first, one at a time, and pinch the edges to seal.
- Cut off any excess dough and pinch together.
- Flip it over and apply an egg wash to the outside of the dough.

- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
- Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat. Add the onions and 1/2 teaspoon of the oregano, season with 1 teaspoon salt and cook, stirring occasionally, until soft, about 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the tomato puree, 1/4 cup water, 5 torn basil leaves and the red pepper flakes. Bring to a simmer and cook until slightly thickened, about 4 minutes. Season with salt and pepper.
- Meanwhile, heat the remaining tablespoon olive oil in a large skillet over medium-high heat. Add the sausage rounds and brown on both sides, about 4 minutes. Transfer to a paper-towel-lined plate. Mix the Parmesan with the remaining 1/2 teaspoon oregano in a small bowl.
- Divide the pizza dough into 8 portions. Flatten into 4-inch squares either by stretching with your hands or using a rolling pin. Spoon 1 tablespoon of sauce onto a square and spread around. Top with 1/4 cup of the Italian cheese blend, one-eighth of the sausage and 1 basil leaf. Wrap the dough around the filling and pinch the edge and ends to seal. - Brush the rolls with olive oil and sprinkle with the Parmesan oregano mixture. Cut 2 slashes across the top. Bake until golden and bubbly, 20 to 25 minutes. Serve warm with the remaining sauce on the side for dipping.
DOUBLE SAUSAGE PIZZA
This recipe has been in the family since I was a kid. It was a Sunday night ritual then, and remains one today in my home. A dressed-up hot roll mix gives us enough dough for two flavorful crusts, so there is plenty of sausage-pepperoni pizza to serve company.
