EASY PIZZA CALZONES
These are yummy, quick, and easy calzones that can be eaten hot or frozen and taken for a easy heat up lunch. They're also versatile and you can put in any kind of pizza toppings you like!

Steps:
- Preheat the oven to 425.
- Unroll the pizza dough onto a large cookie sheet.
- Press the dough out so that it is about the same thickness all around and so that it covers the cookie sheet.
- Cut into 4 equal size rectangles.
- In a bowl, mix sauce, cheese, and toppings.
- Spoon equal amounts of toppings into the middle the rectangles.
- Lightly spread out the sauce mixture.
- Fold one corner so that it meets with the opposite corner.
- Crimp the edges so that the calzones seal.
- Mix olive oil and parmesan cheese mix.
- Brush with olive oil and parmesan cheese mixture.
- Bake in oven for 10 minutes.
- Serve hot or freeze for later.

Steps:
- Mix 1/2 cup lukewarm water and yeast together in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Combine 1/2 cup water, olive oil, honey, and salt in a separate bowl; add 1 cup flour and mix well. Mix yeast mixture into flour mixture. Add remaining flour, 1 cup at a time, until dough is well combined.
- Knead dough on a floured work surface until dough is soft, smooth, and elastic, about 8 minutes. Roll dough into 4 calzone shapes.

- In a large skillet, saute mushrooms, onion and green pepper in oil until tender. Add tomatoes; cook and stir 3 minutes. Stir in tomato paste; set aside. Combine cheeses and set aside. , On a lightly floured surface, divide dough into eight pieces. Roll each piece into a 7-in. circle. Spoon a scant 1/2 cup of vegetable mixture and 1/4 cup of cheese mixture over one side of each circle. Brush edges of dough with water; fold dough over filling and press edges with a fork to seal. - Heat oven to 375°F. Lightly grease 12-inch pizza pan. Unroll 1 can of dough; placing in greased pan. Starting at center, press out dough with hands to edge of pan. Layer pepperoni, mushrooms, olives and provolone cheese over dough.

- To Make Dough: In a small bowl, dissolve yeast in water. Add the oil, sugar and salt; mix in 1 cup of the flour until smooth. Gradually stir in the rest of the flour, until dough is smooth and workable. Knead dough on a lightly floured surface for about 5 minutes, or until it is elastic. Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40 minutes, or until almost doubled.
- To Make Filling: While dough is rising, combine the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl. Mix well, cover bowl and refrigerate to chill.
- Preheat oven to 375 degrees F (190 degrees C).
- When dough is ready, punch it down and separate it into 2 equal parts. Roll parts out into thin circles on a lightly floured surface. Fill each circle with 1/2 of the cheese/meat filling and fold over, securing edges by folding in and pressing with a fork. - Preheat oven to 425 degrees.
- Cook ground beef, mushrooms, and green pepper in a medium frypan till meat is no longer pink, drain.
- Stir in the mozzarella cheese and the 1/3 cup pizza sauce.
- Unroll pizza dough.
- Roll or stretch dough into a 10 x 15 inch rectangle.
- Cut dough into 6- 5 inch squares.
- Spoon some of the meat mixture onto one-half of each square.
- Brush dough edges with water.

- Preheat oven to 450 degrees F. Set pizza stone in oven to get hot while oven preheats (or use a baking sheet turned upside down).
- Divide pizza dough into 8 portions. Roll a piece into a flat disk, about 1/4 inch thick. Add about ¼ cup of toppings to one side, including a generous sprinkle of cheese. Fold the other half of dough over the toppings and seal the edges together.
- Place calzones on a large piece of parchment paper.

- Preheat the oven: Preheat the oven to 375°F
- Divide the dough: Using the prepared pizza dough, split the dough into 4 evenly sized balls for large calzones or 6 for smaller ones. Work with one dough ball at a time and keep the remaining dough balls covered so they don't dry out.
- Roll out the dough: Transfer dough ball to a lightly floured surface. Using a rolling pin roll it out until you have a circle that is 6-8 inches in diameter, again depending on size you are looking for. If you are making four larger calzones, I would shoot for around 8 inches in diameter. If making the smaller version go for 6-inches. Roll out all the dough balls, so you can have an assembly line when it comes to time to fill the calzones. In the end you should have what looks like 4 to 6 mini pizza crusts waiting to be filled.
- Brush with egg wash: Once your calzones are sealed, make the egg wash. Add the egg and 1 tablespoon of water in small bowl and beat with a fork until combined. Use a pastry brush to brush the egg wash over the top of the calzones.
- To Serve: Serve the calzones while warm with extra marinara for dipping.
