PIZZA MARGHERITA IN 4 EASY STEPS

300g strong bread flour
1 tsp instant yeast (from a sachet or a tub)
1 tsp salt
1 tbsp olive oil, plus extra for drizzling
100ml passata
handful fresh basil or 1 tsp dried
1 garlic clove, crushed
125g ball mozzarella, sliced
handful grated or shaved parmesan (or vegetarian alternative)
handful of cherry tomatoes, halved
handful of basil leaves (optional)

Steps:

  • Make the base: Put the flour into a large bowl, then stir in the yeast and salt. Make a well, pour in 200ml warm water and the olive oil and bring together with a wooden spoon until you have a soft, fairly wet dough. Turn onto a lightly floured surface and knead for 5 mins until smooth. Cover with a tea towel and set aside. You can leave the dough to rise if you like, but it's not essential for a thin crust.
  • Make the sauce: Mix the passata, basil and crushed garlic together, then season to taste. Leave to stand at room temperature while you get on with shaping the base.
  • Roll out the dough: if you've let the dough rise, give it a quick knead, then split into two balls. On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin. The dough needs to be very thin as it will rise in the oven. Lift the rounds onto two floured baking sheets.
  • Top and bake: heat the oven to 240C/220C fan/gas 8. Put another baking sheet or an upturned baking tray in the oven on the top shelf. Smooth sauce over bases with the back of a spoon. Scatter with cheese and tomatoes, drizzle with olive oil and season. Put one pizza, still on its baking sheet, on top of the preheated sheet or tray. Bake for 8-10 mins until crisp. Serve with a little more olive oil, and basil leaves if using. Repeat step for remaining pizza.

If you like rolls with a tough crust, this is your roll. These are exactly like the rolls I ate when I lived in Germany. My brother found this recipe and had me test it out. Turns out really yummy.

2 1/2-3 cups flour
2 1/2 teaspoons dry active yeast
1 teaspoon sugar
1 teaspoon salt
1 teaspoon oil
1 cup warm water
1 egg white

Steps:

  • Preheat oven to 450°F.
  • Pour 2 1/2 cups flour into a large bowl and form a well in the center.
  • In a separate container, mix yeast, sugar, and two tablespoons water (water comes from the 1 cup above).
  • Pour yeast mixture into the well but do not mix with the flour at this time.
  • Cover bowl with a cloth and set it in a warm place for 15 minutes to rise.
  • Add remaining water and oil and beat until mixed. Add SALT.
  • Turn dough out onto counter and knead until smooth. Adding remaining 1/2 cup flour as needed.
  • Put dough in bowl, cover and let rise until double in size. (about 30-40 minutes).
  • Punch down and divide dough into 12 parts.
  • Shape into oval rolls and place 3" apart on greased and floured cookie sheet.
  • Cover and let rise until double in size.
  • Beat egg white and 1 tsp water with a fork until frothy and brush onto rolls.
  • Bake for 15-20 minutes or until golden brown.
  • The time is an estimate, depending on how fast your dough rises.

These rolls are nice and chewy with a very firm crumb. Most enjoyable.

2 tablespoons active dry yeast
1 tablespoon white sugar
2 ½ cups warm water (110 degrees F)
2 tablespoons shortening
2 teaspoons salt
7 cups all-purpose flour
3 egg whites, stiffly beaten
1 egg white (for egg wash)
2 tablespoons cold milk

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy; about 10 minutes.
  • Mix in shortening, salt and 3 cups of the flour. Beat with dough whisk or heavy spoon for 2 minutes. Fold in egg whites. Gradually add flour 1/4 cup at a time, until dough forms a mass and begins to pull away from bowl. Turn onto a floured surface. Knead, adding more flour as necessary, for 8 to 10 minutes, until smooth and elastic with bubbles.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour. Deflate the dough, form into a round and let rise again until doubled, about 45 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into 24 equal pieces and form into oval rolls about 3 1/2 inches long. Place on lightly greased baking sheets, cover and let rise until doubled in volume, about 40 minutes.
  • Place an empty baking sheet on the bottom rack of the oven. In a small bowl, lightly beat the egg white with the 2 tablespoons of milk to make the egg wash. Lightly brush the risen rolls with the egg wash. Place 1 cup of ice cubes on the hot baking sheet in the oven and immediately place the rolls in the oven.
  • Bake at 425 degrees F (220 degrees C) for about 20 minutes or until the tops are golden brown. Remove to a wire rack and cool.

Our German host daughter is a lovely girl. Her parents sent this recipe to me along with several others when I felt she might be craving some foods from home. The entire family loves these. The best way I can describe them is like a baked pizza hush puppy. Just fabulous! I have included both the metric and US measurements (or as close as I could figure them from the metric- I actually weigh my flour for the grams). You may need to adjust to your taste.

2 1/3 cups flour or 300 g flour
2 teaspoons baking powder or 11 g baking powder
1 cup shredded mozzarella cheese (or a combination) or 100 g provolone cheese (or a combination)
2 7/8 ounces bacon bits or 100 g bacon bits
1 (3 ounce) can French-fried onions or 85 g French-fried onions
1 cup yogurt cheese or 250 g plain Greek yogurt
5 tablespoons milk or 75 g milk
3 tablespoons oil
1 teaspoon oil

Steps:

  • Heat oven to 450F, or 200c. Grease a large baking sheet with sides.
  • Mix together well the flour and baking powder. Add the cheese, bacon, and onions to the flour mixture. Stir well to combine.
  • In a separate bowl, combine well the quark, oil and milk. Add to the flour mixture and stir until thoroughly combined. You might as well use your hands, because they will get involved in the next step, anyhow. :-).
  • Roll the mixture into 15 balls. Place balls onto the prepared sheet.
  • Bake 20 minutes. Eat when hot or warm.
