CURRIED CHICKPEA SALAD PITAS



Curried Chickpea Salad Pitas image

1/2 cup mayonnaise
1/4 cup plain yogurt
2 tablespoons fresh lemon juice
2 teaspoons curry powder
2 teaspoons honey
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 (15.5 ounce) cans chickpeas, rinsed and drained
1/4 cup golden raisins
2 tablespoons cilantro, chopped
4 to 6 pieces pita bread, for serving
Packaged slaw mix, for serving
Ryan's Pickled Onions, for serving (recipe follows)
1 large red onion, sliced
1/4 cup apple cider vinegar
1/4 cup white vinegar
2 tablespoons sugar
1 tablespoon black peppercorns
2 teaspoons salt

Steps:

  • Add the mayonnaise, yogurt, lemon juice, curry powder, honey, salt and pepper to a food processor. Pulse a few times to combine. Add the chickpeas and pulse until the chickpeas are slightly smashed, 5 or 6 more times.
  • Empty the mixture into a serving bowl. Fold in the raisins and cilantro until everything is fully coated. Serve immediately or refrigerate until ready to serve. Serve in a pita with cabbage mix and Ryan's Pickled Onions.
  • Add the onions, apple cider vinegar, white vinegar, sugar, peppercorns, salt and 1 cup water to a glass pint jar. Stir or shake well to mix. Let marinate overnight in the refrigerator, then keep for up to a month in the fridge.

This can either be a light lunch or served as a salad that you eat with your hands! It can be prepared the day before and taken, refrigerated, to a picnic at the lake or beach or camping. From a July 1986 issue of Bon Appetit magazine in the "Great Cook" section in a menu that featured a Fourth of July Cookout on the Lake.

8 cups chopped fresh parsley (about 4 bunches)
4 (15 1/2 ounce) cans garbanzo beans, drained (chick-peas)
2 large bell peppers, chopped
2 large tomatoes, peeled, seeded and diced
4 green onions, chopped
1/2 cup lemon juice
2 garlic cloves, minced
salt & freshly ground black pepper
1 cup olive oil
24 mini pita breads (or 12 standard pita breads, halved)

Steps:

  • Combine parsley, chick-peas,bell peppers,tomatoes and onions in large bowl.
  • Whisk together lemon juice, garlic and salt and pepper in another bowl.
  • Whisk in olive oil in thin stream.
  • Toss dressing with chick-pea mixture.
  • (Can be prepared 1 day ahead; cover and refrigerate.
  • To serve, divide mixture among pita bread.

1 (5 ounce) package mixed salad greens
1 (6 ounce) package diced cooked chicken
½ cup fresh pineapple chunks
½ cup seedless red grapes, halved
½ cup cherry tomatoes, halved
½ cup fresh blueberries
1 teaspoon salad seasoning mix (such as Mrs.Dash®)
½ cup mayonnaise
¼ cup honey
3 tablespoons slivered almonds
6 pita bread rounds, split

Steps:

  • Rinse salad thoroughly in a colander; shake as dry as possible and place in a large bowl. Add chicken, pineapple, grapes, tomatoes, blueberries, and salad seasoning and mix together.
  • Whisk mayonnaise and honey together in a separate bowl. Pour over salad mixture and toss until all ingredients are coated. Add almonds. Serve in pita pockets.
