Steps:
- Heat oil in a large skillet over medium-high heat. Add onions; cook until softened, about 5 minutes. Add garlic, jalapeno, chili powder, cumin, and coriander; cook, stirring, 1 minute.
- Add beef; cook, breaking up meat with a wooden spoon, until no longer pink, about 5 minutes. Stir in tomatoes; cook, stirring occasionally, until liquid has evaporated, 15 to 20 minutes. Season generously with salt.

Steps:
- In a large skillet over medium heat, cook ground beef with onion, garlic and jalapeno, breaking the meat into small pieces, until beef is cooked through, 6-8 minutes; drain grease if needed.
- Stir in all of the spices, along with salt and pepper, to taste. Cook for an additional minute or two.
- Stir in the tomato sauce. Cover and simmer for 15-20 minutes. Reseason with salt and pepper, to taste, if needed.
- Serve with taco shells, tortillas, and your favorite taco toppings.

BEST GROUND BEEF TACOS
Steps:
- Gather the ingredients.
- Heat the cooking oil over medium-high heat.
- When the oil is hot, add the ground beef and onion; use a spatula to break up the beef and cook for about 5 minutes, or until the beef is no longer pink and the onion is softened. At this point, if desired, drain off any excess fat.
- Add the garlic to the beef and onions, sprinkle with salt and pepper, and add the chili powder, cumin, and oregano. Continue to cook for 1 minute.
- Add the tomato paste along with the water or stock and stir to blend. Reduce the heat to low and simmer for about 4 minutes, or until the mixture is reduced and thickened. Taste and adjust the seasonings.
- Serve the beef mixture in warm tortillas or taco shells with the desired toppings.

TACO BELL TACOS
I love the "fake"-ish meat in Taco Bell tacos... I'm hoping this recipe will come close to achieving that thick, greasy, salty meat I love!

Steps:
- Meat Directions.
- Mix together all ingredient except the meat.
- Stir the spice mixture well making sure that all spices have been blended well.
- Crumble ground beef and brown stirring well.
- Remove from heat, rinse with hot water and drain water and grease from beef.
- Return beef to the pan and add spice mix.
- Add 3/4 - 1 cup water to ground beef and seasoning and simmer on medium low temperature for 20 minutes.
- Simmer until most of moisture has cooked away.
- Remove from heat when moisture in meat as dissipated but meat is not dry.
- Assembling the taco.
- You can refresh the taco shells by placing them in a baking dish into a hot oven, 350 degrees for 7-10 minutes.
- To assemble tacos add a couple of tablespoons of ground meat, lettuce, cheese, tomatoes, and sour cream if desired.
PITA FILLING / TACO MEAT
This is awsome with homemade pitas, which you can also find on Zaar. It really makes alot, but it saves well in the fridge and is almost better the next day for leftovers. I like this recipe because it's a good way to get my family to eat vegies. My family doesn't like summer squash, but this is also good with squash sauted in with the other vegies. Happy eating!

- Saute carrots, celery, and onion in olive oil and set aside.
- Brown hamburger, drain, and add fajita seasoning along with the chili and garlic powder.
- Add water and black beans/corn.
- Cook down for about 5-10 min and add the vegitables that were set aside earlier.
- Remove from heat and add cooked rice and tomato.
- Fill pita breads or tortilla shells. I've also had this wrapped in romaine after I ran out of pita bread.
- Could top with lettuce, sour cream, or taco sauce.

- Make the spicy minced beef: Heat a large pan or saucepan over high heat and when it’s hot enough add the minced meat and the olive oil. Cook the beef stirring often with a wooden spatula, breaking up any lumps, until it is browned and all the juices have evaporated (about 10 minutes). Add the spices and stir for 1 more minute, then add the wine and cook for another minute until it’s evaporated. Transfer the mixture to a plate.
- Make the filling: Reduce heat to medium/high and transfer in the same pan the olive oil, the onion, the corn, the red pepper, and the green pepper. Cook until the onion is soft (about 5 minutes) and then add the minced beef, the beans, the parsley, the green onions, and the tomato. Cook for 2 more minutes and turn off the heat. Add half of the grated cheese, the yogurt and the avocado and mix.
- Make the pitacos: Divide the filling to the pitas, fold them in the middle and transfer them to a pan so that the one is next to the other, in order to retain their shape. Top with the remaining cheese and bake for 10 minutes, until the cheese at the top melts.
