CRISPY COOKIE BARK RECIPE BY TASTY

Crispy Cookie Bark Recipe by Tasty image

Here's what you need: all-purpose flour, baking soda, salt, unsalted butter, white sugar, dark brown sugar, vanilla extract, water, egg, chocolate chips, semisweet baking chocolate, coarse sea salt

Provided by Jordan Kenna

Categories     Snacks

Yield 8 servings

Number Of Ingredients 12

1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter
½ cup white sugar
¼ cup dark brown sugar
1 teaspoon vanilla extract
1 teaspoon water
1 egg
⅓ cup chocolate chips
24 oz semisweet baking chocolate
coarse sea salt

Steps:

  • Preheat the oven to 325˚F (160˚C).
  • Make the cookies: in a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a larger bowl, add the butter and sugars. Mix (either by hand or using an electric mixer) until smooth.
  • Add the egg, vanilla extract, and water to the butter mixture and mix until thoroughly incorporated.
  • Add the chocolate chips and dry ingredients, then use a spatula to gently fold them together, being careful not to overmix.
  • Using a small ice cream scoop or spoon, measure out 6 tablespoon-sized balls of dough and space them 2-3 inches (5-7 cm) apart on a prepared baking sheet.
  • Bake the cookies for 18 minutes. They should be thin with crispy edges when finished.
  • Remove the cookies from the oven and allow them to cool for 5 minutes on the baking sheet before transferring them to a wired cooling rack. Bake off the second half of the dough and allow all the cookies to reach room temperature before proceeding.
  • Once thoroughly cooled, place the baked cookies back in the oven, directly on the oven rack, and toast them at 325˚F (160˚C) for 7 minutes. This will completely dry out the cookies leaving them very crispy and brittle.
  • Carefully transfer all the toasted cookies to a parchment-lined baking sheet. Using the back of a heavy spoon or measuring cup, firmly smack the top of the cookies. Set the baking sheet of shattered cookies aside.
  • Make the bark: slowly melt 1 pound (455 g) of the baking chocolate either in a double boiler or in a glass bowl over just-simmering water. Allow the chocolate to melt undisturbed until about two-thirds of it has melted, then stir until it is completely smooth with no visible chunks.
  • Remove the chocolate from the heat and allow it to cool for 10 minutes before adding in the remaining chocolate. The residual heat will melt the solid chocolate. Mix until smooth.
  • Arrange the shattered cookie pieces in a layer on the baking sheet. Pour the melted chocolate over the pieces and use a spatula to quickly and evenly spread the chocolate across the tops of the cookie pieces.
  • Sprinkle with salt and any other desired toppings. Transfer the baking sheet to the refrigerator for at least 30 minutes for the chocolate to set.
  • Once the bark is set, remove the baking sheet from the refrigerator and cover the bark with parchment paper. Use something heavy (like a meat tenderizer) to break the bark into snack-sized pieces.
  • Serve the pieces immediately or store in the refrigerator until desired.
  • Enjoy!

HOT CHOCOLATE COOKIE MUGS RECIPE BY TASTY

Hot Chocolate Cookie Mugs Recipe by Tasty image

Here's what you need: unsalted butter, light brown sugar, sugar, large egg, semisweet chocolate chip, all purpose flour, cocoa powder, baking powder, kosher salt, semi-sweet chocolate chips, heavy cream, mini marshmallows, mini candy canes

Provided by Kiano Moju

Categories     Desserts

Yield 24 servings

Number Of Ingredients 13

½ cup unsalted butter, room temperature
¾ cup light brown sugar, packed
¼ cup sugar
1 large egg, room temperature
6 oz semisweet chocolate chip, melted
1 ¼ cups all purpose flour
¼ cup cocoa powder
½ teaspoon baking powder
¼ teaspoon kosher salt
6 oz semi-sweet chocolate chips, divided
⅓ cup heavy cream, warmed
1 cup mini marshmallows
12 mini candy canes, plus more in case some break

Steps:

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, cream together the butter and sugars with an electric hand mixer until light and fluffy.
  • Beat in the egg, then add the melted chocolate chips and beat to incorporate.
  • Sift in the flour, cocoa powder, baking powder, and salt. Beat until just combined.
  • Scoop a rounded tablespoon of cookie dough into each cup of a mini muffin tin.
  • Use your fingers to spread the dough evenly across the bottoms and up the sides of the cups, being careful not to spill over the edges.
  • Bake for 8 minutes, until cookies have slightly puffed up. Let cool completely. If the centers have puffed up, use the back of a wooden spoon to reshape.
  • Prep the decorations: Add 4 ounces (100 grams) of chocolate chips to a liquid measuring cup or heatproof bowl. Pour over the warm heavy cream and let sit for 1 minute, then stir until well combined and smooth.
  • Pour the ganache into the cooled cookie cups until level with the tops.
  • Decorate the tops of each cookie cup with mini marshmallows and let sit at room temperature until the ganache has firmed up about 1 hours.
  • In a liquid measuring cup or heatproof bowl, melt the remaining chocolate in the microwave, then allow to sit at room temperature until thickened, about 10-15 minutes.
  • Use to scissors to cut the curved end of the mini candy canes into small handles.
  • Use a knife to gently lift the cookie cups from the muffin tin so one side sticks up. Dip the ends of the candy cane handles into the cooled melted chocolate, then stick onto the sides of the cookie cups. Let set for at least 1 hour before serving.
  • Enjoy!

BROWN BUTTER SNICKERDOODLES SUBMITTED BY LYNNE HOWARD RECIPE BY TASTY

Brown Butter Snickerdoodles Submitted by Lynne Howard Recipe by Tasty image

Here's what you need: all-purpose flour, baking soda, cream of tartar, cinnamon, salt, unsalted butter, dark brown sugar, granulated sugar, large egg, egg yolk, vanilla extract, plain greek yogurt, sugar, cinnamon

Provided by Tasty

Categories     Desserts

Yield 20 cookies

Number Of Ingredients 14

2 ½ cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
½ teaspoon cinnamon
¼ teaspoon salt
2 sticks unsalted butter
1 ¼ cups dark brown sugar, packed
½ cup granulated sugar
1 large egg
1 egg yolk
1 teaspoon vanilla extract
1 tablespoon plain greek yogurt
¼ cup sugar
2 teaspoons cinnamon

Steps:

  • Whisk together the flour, baking soda, cream of tartar, ½ teaspoon cinnamon, and salt in a bowl and set aside.
  • Melt butter in a saucepan over medium heat. The butter will begin to foam. Make sure you whisk consistently during this process. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to brown and give off a nutty aroma.
  • Immediately transfer the butter to a bowl to prevent burning. Set aside to cool for a few minutes.
  • With an electric mixer, mix the butter and sugars until thoroughly blended.
  • Beat in the egg, yolk, vanilla, and yogurt until combined.
  • Add the dry ingredients slowly and beat on low-speed just until combined.
  • Chill your dough for 3 hours or as long as possible in the refrigerator (important!).
  • NOTE: You can place it in the freezer for 30 minutes if you are super eager, although I cannot promise the same results if you do this. Fridge is always best! You want the dough VERY cold. If you desire a 'puffy' cookie, place them in the fridge overnight.
  • Preheat the oven to 350°F (180°C).
  • Once dough is chilled measure about 2 tablespoons of dough and roll into a ball.
  • Meanwhile mix the rolling mixture in a bowl.
  • Roll balls in cinnamon-sugar mixture. Place dough balls on cookie sheet, 2 inches (5 cm) apart.
  • Bake the cookies 8-11 minutes or until the edges of the cookies begin to turn golden brown. They will look a bit underdone in the middle, but will continue to cook once out of the oven. Bake longer if you like crispier cookies.
  • Cool the cookies on the sheets at least 2 minutes. Remove the cooled cookies from the baking sheets after a few minutes and transfer to a wire rack to cool completely.
  • Repeat with remaining dough.
  • Enjoy!

BROWN BUTTER TOFFEE CHOCOLATE CHIP COOKIES RECIPE BY TASTY

Brown Butter Toffee Chocolate Chip Cookies Recipe by Tasty image

The ultimate chocolate chip cookie indulgence, bolstered by chunks of homemade toffee, brown butter, and large pockets of chocolate.

Provided by Alvin Zhou

Categories     Desserts

Yield 9 cookies

Number Of Ingredients 16

6 tablespoons unsalted butter
¾ cup light brown sugar, lightly packed
1 teaspoon kosher salt
water, as needed
1 cup unsalted butter
4 ice cubes
¾ cup granulated sugar
1 ½ cups dark brown sugar, packed
2 teaspoons espresso powder
2 teaspoons kosher salt
½ teaspoon baking soda
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all purpose flour
6 oz cacao chocolate, 50-70% cacao, chopped
flaky sea salt, for sprinkling

Steps:

  • Make the toffee: Line a baking sheet with parchment paper.
  • In a medium nonstick saucepan over medium heat, melt the butter, brown sugar, and salt, stirring until evenly incorporated. If there are grainy lumps or if the fat starts to separate, add a couple splashes of water and stir vigorously to emulsify. Continue to cook, stirring constantly, until the mixture reaches 290°F (143°C), about 10-15 minutes.
  • Pour the toffee onto the prepared baking sheet and spread out slightly with a spatula. Freeze until ready to use, about 30 minutes.
  • Make the cookie dough: Add the butter to a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty. Watch carefully so the butter does not burn. Remove the pot from the heat.
  • Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining 3 ice cubes and gently stir until melted.
  • In a large bowl, combine the granulated and brown sugar, espresso powder, salt, and baking soda.
  • Pour the brown butter into the sugar mixture and mix until combined. Don't worry if it looks separated.
  • In a small bowl, whisk together the eggs and vanilla. Pour into the sugar and butter mixture and whisk until glossy and smooth.
  • Add the flour and fold with a rubber spatula to incorporate until the dough has no visible flour streaks.
  • Remove the toffee from the freezer (it should be a frozen disc) and break it into chunks that will fit inside a gallon zip-top bag. Double bag the toffee and seal both bags. With a rolling pin, break the toffee into small pieces.
  • Fold the crushed toffee and chopped chocolate into the dough until evenly distributed.
  • Using a large ice cream scoop or a ½ cup (65 g) measure, scoop the dough onto a parchment-lined baking sheet. Wrap the baking sheet in plastic wrap, but leave a small opening at the corner of the tray. Let the dough rest in the refrigerator for at least 36 hours. This will allow the flavor to develop and the dough to dry out a little as it rests, which will result in less spread when it bakes.
  • When ready to bake, preheat the oven to 325°F (163°C). Line 2 baking sheet with parchment paper.
  • Arrange the cookies on the baking sheets, leaving at least 2 inches (5 cm) of space between the cookies and away from the edges of the pan.
  • Bake until the cookies are golden brown with crispy edges, but are still slightly soft in the center, 18-20 minutes.
  • Immediately sprinkle the cookies with flaky sea salt. then let cool completely. The cookies will be very soft at first but will set after they are fully cooled.
  • Enjoy!
