This is a very quick, easy bread, and is also very moist.

1 (18.25 ounce) package yellow cake mix
4 eggs
¼ cup vegetable oil
2 tablespoons water
1 (3 ounce) package instant pistachio pudding mix
1 cup sour cream
½ cup maraschino cherries
½ teaspoon green food coloring
½ teaspoon ground cinnamon
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 x 5 inch loaf pans.
  • Mix together cake mix, eggs, oil, water, pudding mix, sour cream, cherries, and food coloring. Pour into prepared pans. In a small bowl, stir together cinnamon and sugar. Sprinkle tops of loaves with mixture.
  • Bake for 45 minutes. Cool.

Pistachio bread is a lovely, festive dessert bread that makes a perfect gift for teachers, neighbors, friends, and family! It's an easy Christmas treat you can enjoy without a lot of work!

1 box yellow cake mix
2 or 3 (**see note below) 3.4-oz boxes instant pistachio pudding mix
1 cup hot water
1/2 cup vegetable oil
4 eggs
2-3 drops green food coloring (optional)
holiday sprinkles (optional)

Steps:

  • Grease two 8x4" loaf pans (or 6 foil mini pans or desired combination thereof) and preheat oven to 350F.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl with an electric hand mixer), combine dry cake mix, dry pudding mixes, hot water, vegetable oil, eggs, and food coloring (if using). Beat on low speed for about 30 seconds, then increase speed to medium and continue beating for about two minutes.
  • Divide batter among prepared pans. If desired, top with holiday sprinkles.
  • Bake for about 40-50 minutes for full-size pans, or until a toothpick inserted in the center comes out clean. If using mini pans, begin checking on them at about 25 minutes, then continue checking every five minutes until a toothpick comes out clean.
  • Allow to cool before serving.

PISTACHIO MELBAS (AUSTRALIA)

This biscotti-like cookie is derived from the Eastern European/Jewish cookie Mandelbrot. Australians adopted it, and renamed it Mandel-Melba, due to its textural similarity with the Australian favorite Melba toast (named, of course, for the opera singer Dame Melba). We've used pistachios here, with lemon and orange zests to brighten the flavor. They're not super-sweet; they're more of a cookie to have with your tea or coffee. The key to this is to slice it super-thin so it crumbles in the mouth.

Unsalted butter, softened, for greasing pan
1 1/2 cups all-purpose flour, plus more for the pan
1/4 teaspoon fine salt
1 cup sugar
Finely grated zest of 2 lemons (about 1 tablespoon, packed)
Finely grated zest of 1 orange (about 2 teaspoons, packed)
4 large eggs
1 cup whole raw peeled pistachios

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Brush a 9 by 5-inch loaf pan with butter and dust it with flour.
  • Whisk the flour and salt together in a bowl.
  • In another medium bowl, rub the citrus zests into the sugar with your fingers until the sugar is fragrant and takes on a bit of the fruit color. Beat the eggs into the sugar with a wooden spoon until blended. Stir in the flour mixture to make a smooth, sticky but pourable batter. Stir in the pistachios. Pour the batter into the prepared pan, and smooth the surface lightly with a spatula.
  • Bake until the loaf is lightly browned and pulling away from the sides of the pan, about 40 to 45 minutes. A skewer inserted into the center should come out clean, and the loaf will look like a not so great pound cake. Let stand for 10 minutes, then remove from the pan and cool on a rack for 1 hour.
  • Wrap the loaf in plastic and freeze until firm, about 30 minutes.
  • Preheat the oven to 300 degrees F.
  • Slice the chilled loaf as thin as you can -- 6 to 8 slices to the inch. (It helps to mark the loaf lightly with a serrated knife every half-inch and use that as a guide.) Lay the slices flat on 2 baking sheets and bake until brown, 10 to 15 minutes. (Take care -- the cookies can go from pale to dark brown quickly.)
  • Let stand overnight or for at least 12 hours on a rack to cool and crisp up. Serve. Store in a well-sealed jar or other container.

LEMON-PISTACHIO LOAF

Don't even think about lifting this cake out of the pan before it's completely-and we mean completely-cool. Because it's vegan, with no eggs for structure, its delicate crumb needs time to set.

⅓ cup vegetable oil, plus more for pan
¾ cup raw pistachios
Zest of 2 lemons
1¾ cups all-purpose flour
1 cup granulated sugar
2 tsp. baking powder
¾ tsp. kosher salt
5 Tbsp. extra-virgin olive oil
7 Tbsp. fresh lemon juice, divided
2 cups powdered sugar

Steps:

  • Place a rack in middle of oven; preheat to 325°F. Grease a 9x5" loaf pan with vegetable oil, then line with parchment paper, leaving overhang on long sides. Oil parchment paper (for insurance and an easy release).
  • Pulse pistachios in a food processor until finely ground (it's okay if some of the pieces are a bit larger). Set aside a heaping tablespoonful.
  • Whisk lemon zest, flour, granulated sugar, baking powder, salt, and remaining pistachios in a large bowl. Whisk olive oil, 2 Tbsp. lemon juice, remaining ⅓ cup vegetable oil, and ½ cup water in a small bowl to combine. Pour oil mixture into dry ingredients and fold with a rubber spatula to combine, being very careful not to overmix (this batter contains a high ratio of liquid, which means it can get gummy if overworked). Pour into prepared pan and tilt to distribute; batter should come halfway up the sides.
  • Bake cake until golden brown all over, it springs back when gently pressed, and a tester inserted into the center comes out clean, 50-60 minutes. Transfer pan to a wire rack and let cake cool completely in pan, at least 2 hours. Using parchment overhang, lift cake out of pan and place on rack. Peel away parchment.
  • Whisk powdered sugar and 3 Tbsp. lemon juice in a medium bowl, drizzling in remaining 2 Tbsp. lemon juice as needed until you have a thick but pourable glaze. Pour glaze over cake, letting it drip down the sides. Immediately top cake with reserved pistachios, then let sit until glaze is set, at least 30 minutes.
  • Do Ahead: Cake can be made 3 days ahead. Store airtight at room temperature.

Steps:

  • In a bowl, combine cake and pudding mixes. Add sour cream, eggs, oil and water; beat until blended. Pour into five greased 5-3/4x3x2-in. loaf pans. Combine the pecans, brown sugar and cinnamon; sprinkle over batter., Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

I picked up this recipe around ten years ago at a health food convention. It was put out by either the California Fig Board or Pistachio Board - I forget which. Plainly, they were in cahoots. Anyway, this is just delicious - probably my all-time favourite loaf cake. Prep time includes soaking of fruit and nuts.

1 cup chopped dried fig
1 cup shelled pistachios
1 cup boiling water
1/2 cup butter
2/3 cup dark brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups flour (I use soft whole wheat flour)
1 teaspoon baking soda

Steps:

  • Soak the figs and pistachios for 1 hour in the boiling water (If you can only find salted pistachios, rinse them first).
  • Grease a standard loaf pan.
  • Preheat the oven to 350°F.
  • Cream the butter and the sugar, then beat in the egg and vanilla.
  • Mix the flour with the soda and salt.
  • Mix it into the butter mixture and then add the figs and the pistachios in their soaking liquid.
  • Scrape into the loaf pan and bake for 1 to 1 1/4 hours.

Pistachios are the star of this cake. Instead of a butter cake with the occasional bite of pistachio, this is a dense, nutty cake completely permeated by nuts. Replacing most of the flour with ground pistachios gives the cake a coarse, almost chewy texture and intense flavor. It's lovely without, but if you'd like you can also top it with a simple lemon glaze made by combining lemon juice and confectioners' sugar.

10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, plus more for the pan
1 cup all-purpose flour, plus more for the pan
1 cup plus 2 tablespoons raw, unsalted, shelled pistachios
1 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1/2 teaspoon finely grated lemon zest
1 cup buttermilk

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2- by 4 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the entire pan. Pulse 1 cup of the pistachios and 1/4 cup of the sugar in a food processor until very finely ground. Transfer the pistachio mixture to a large bowl. Whisk in the flour, baking powder, baking soda and salt.
  • In a large bowl, beat the butter and the remaining 3/4 cup sugar with an electric mixer on medium speed until pale and fluffy, about 2 minutes. Beat in the eggs, one at a time, and beat until combined. Beat in the lemon zest. In three additions, beat in the pistachio-flour mixture, alternating with additions of buttermilk, starting and ending with pistachio-flour mixture. Transfer the batter to the prepared pan and smooth the top. Bake until a toothpick inserted into the center of the cake comes out with moist crumbs attached, 50 to 60 minutes.
  • Transfer the pan to a rack to cool for 15 minutes. Run a knife around the edge of the pan to loosen the cake and then tip the cake out of the pan. Remove the parchment, turn the cake right side up, and let it cool completely. Sprinkle the remaining pistachios on top of the cake before serving.
