LEMON PISTACHIO CHEESECAKE BARS



Lemon Pistachio Cheesecake Bars image

Lemon Pistachio Cheesecake Bars are a sweet, tart, nutty treat. The combination of lemons and pistachios is irresistible!

16 ounces (454g) cream cheese, at room temperature
3/4 cup (150g) granulated sugar
2 large eggs
juice of 1 or 2 medium lemons*
2 cups (240g) all-purpose flour
1 & 1/2 cups (148g) old-fashioned rolled oats
1 cup (200g) granulated sugar
1/2 teaspoon salt
zest of 1 medium lemon
1 cup (236g) unsalted butter, cold and cut into 1/2-inch cubes
1 cup (120g) chopped pistachios

Steps:

  • Preheat oven to 350°F. Grease a 9"x 13"x 2" baking pan.
  • Combine the flour, oats, sugar, salt, and lemon zest. Add the butter, and mix with a pastry blender, a fork, or your fingers until the mixture is thoroughly combined and forms crumbs. The mixture should hold together when pinched.
  • Mix in the pistachios.
  • Reserve about 1 cup of the mixture for the crumb topping.
  • Transfer the remaining mixture to the prepared pan. Press firmly and evenly into the bottom of the pan.
  • Bake 15 minutes. Set aside to cool slightly.
  • Using an electric mixer on medium speed, beat the cream cheese, sugar, eggs, and lemon juice until thoroughly mixed and smooth. Pour the filling over the partially baked crust, and spread evenly.
  • Sprinkle the reserved crumb topping over the top of the filling.
  • Bake 40 to 45 minutes, or until the edges are browned and the filling appears set.
  • Cool in the pan on a wire rack for about 20 minutes. Then cover and refrigerate at least 2 hours before serving.

These delightful and easy lemon bars have everything the traditional ones do - tang, sweetness and a buttery base - plus the added benefit of pistachios folded into the filling and the crust.

1 cup all-purpose flour
1/4 cup confectioners' sugar
1/4 teaspoon kosher salt
1/2 cup cold, unsalted butter, cut into small pieces
1/4 cup shelled unsalted pistachios, roughly chopped
2 eggs
1 cup sugar
1/2 teaspoon baking powder
2 tablespoons all-purpose flour
1 teaspoon grated lemon zest
4 tablespoons fresh lemon juice
1/3 cup shelled unsalted pistachios
Confectioners' sugar, for garnish

Steps:

  • To make crust, preheat oven to 350 degrees. Line an 8-inch square pan with parchment paper (if using foil, lightly butter it). Place flour, sugar and salt in a food processor and pulse a few times. Add butter and process until well combined. Stir in chopped pistachios. Firmly press mixture into the bottom of the lined pan using the flat bottom of a glass or measuring cup (if it sticks, place a piece of parchment paper on the dough before pressing). Bake until lightly browned, about 20 minutes.
  • Meanwhile, whisk together the filling ingredients. When the crust is baked, pour the filling into the pan and bake until set, about 20 minutes. Let cool completely. Sprinkle with confectioners' sugar and cut into 2-inch squares.
