- For the oregano vinaigrette: In a medium bowl, whisk together the olive oil, vinegar, Dijon, honey, dried oregano and some salt and pepper to combine.
- For the salad: Set aside 2 tablespoons each of the feta and pistachios for serving, then add the remaining feta and pistachios to a large bowl. Add the spinach and watermelon, drizzle over the dressing and toss to coat. Transfer to a serving bowl and garnish with the reserved feta and pistachios.

- Make The Pomegranate Molasses-Balsamic Sauce: Combine the pomegranate molasses and balsamic in a bowl and add enough honey to balance out the tartness (the amount will depend on how tart your pomegranate molasses is). Add a pinch of salt, and a crack of pepper, taste, and adjust seasoning as desired.
- Make The Salad: Peel the watermelon then cut into 1-inch thick slabs. Cut each slab up so you have some wedges. To serve, arrange the wedges on a platter, top with pistachios, mint, and cheese, drizzle with oil, a few spoonfuls of the drizzle, top with a pinch of salt, and serve.

- In a medium skillet, toast pistachios over medium heat, stirring frequently, until fragrant and golden, about 7 minutes. Transfer to a plate; let cool. In a large bowl, whisk together 1/4 cup oil and vinegar; season with salt and pepper, and set dressing aside.
- Heat remaining tablespoon oil in skillet over medium. Sprinkle chicken with coriander; season with salt and pepper. Cook (in batches if necessary), turning once, until opaque throughout, 2 to 3 minutes per side. Transfer to a cutting board, and thinly slice crosswise.
