PIONEER WOMAN FAVORITE MEATLOAF
Enjoy this, my friends! If you're on the fence about meatloaf, or even if you've written it off entirely as something you'd never ever try, give this a shot. Consider it adventure eating, like huitlacoche. Or calf nuts.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
- Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes.
- Pour another 1/3 of the sauce over the top.
- Bake for another 15 minutes.
- Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!

- Preheat oven to 350 degrees F. Prepare a 2-part broiler pan by lining the bottom one with foil and spraying the top one with cooking spray.
- In a very large bowl, tear the bread into 1/2 inch pieces. Pour the milk over and add the eggs and beat until a wet smooth mixture forms. Add the beef, cheese and seasonings. Using your hands, squeeze and mix until everything is evenly distributed throughout.
- Form into a loaf shape on the prepared broiler pan. Place strips of bacon crosswise and slightly overlapping on top of the loaf. Tuck ends underneath.
- Stir catsup, brown sugar and seasonings together and spread evenly on top of the loaf. Bake for about 1 hour or until loaf tests 150 degrees F in the center using a quick-read baking thermometer.

My mother was hungry for meatloaf, so I wanted to make something different and found this recipe. I didn't use the bacon as I felt there was enough fat in the ground beef and believe me, it didn't need it. I added onion and peppers to mine, as I can't imagine a meatloaf without. - 1. Preheat oven to 350 degree F. In a bowl add bread and milk. Swish around so all bread is soaking the milk. Leave set for 15 minutes or so. In a large bowl, add ground beef, seasonings, eggs, parsley, soaked bread, peppers, onions and Parmesan cheese. Mix well, I use my hands.
- 2. I split the mixture in half and shaped 2 loaves. Placed in a 9 x 13 baking dish. Make glaze by placing all ingredient in a bowl, and whisk until thoroughly blended. Spoon half the glaze between the 2 loaves. Bake for 45 minutes. Add more glaze and continue baking another 20 - 25 minutes or until meat is completely cooked.
- 3. Leave set up before cutting, as this is a very tender loaf. Quite delicious! Enjoy!

- Preheat the oven to 350°F. Then add the bread into a large-bowl and then pour the milk in top to the slices. Let them soak for 5 minutes.
- Add the remaining meatloaf ingredients then use your hands to blend. Try to ensure that the bread is sufficiently combined into the mixture, although try not to overmix as the ground beef will become tougher and lose some flavor.
- Form the meat into a loaf (roughly 5-inches wide) and put it above a broiler pan to allow the fat to drain. Lining the bottom of the broiler pan with foil will make for easier cleanup.
- Line the bacon on the top of the loaf and carefully tuck the ends under the bottom. The bacon can be utilized to support the shape of the loaf. I love to line them that they are touching, but not overlapping so you could readily slit in between every piece of bacon if it is cooked.
- Combine the sauce ingredients and brush 1/3 of it on the meatloaf. Bake the meatloaf for 45 minutes on the center rack. Remove it from the oven and brush the following 1/3 of this sauce . Bake for another 25 minutes.
- Remove from the oven and allow it to sit for 10 minutes before slicing, allowing it to rest lets the juices to absorb back into the meat, cutting too early will get the juice to run-out from the loaf.
- Serve with the remaining sauce.

- Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.
- Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
- Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
- Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.

CAJUN MEATLOAF
Steps:
- Preheat oven to 400 degrees.Chop all of the fresh vegetables (peppers, onions, celery) into a small dice and mince the garlic. Over medium-high heat, melt 6 tablespoons butter. Once butter begins to start browning, add the diced vegetables and garlic. Add about 1 teaspoon salt. After these have cooked for a few minutes add 1 tablespoon Worcestershire sauce, 1 teaspoon black pepper, 1 teaspoon nutmeg and 1 teaspoon cayenne pepper. If you like it hot, add a couple shakes of your favorite hot sauce. Next add about ½ cup of ketchup. Continue cooking and stirring for a few more minutes. Remove from heat.After allowing the mixture to cool for a couple of minutes, add about ½ cup of milk. Stir until combined. Next add at least 1 cup of breadcrumbs. Continue adding breadcrumbs and stirring until mixture is a nice, thick paste. In a large mixing bowl place the ground beef and pork. Whisk 3 eggs and add to the meat. After allowing the pasty vegetable mixture to cool down a bit, begin incorporating it into the meat. Keep working all of the Cajun-Vegetable mix into the meat until all is blended well.Spray a sheet pan with some non-stick cooking spray. Next, using your hands, form your meat mixture into a loaf on the sheet pan. Make the loaf around 6-8 inches wide and about 1 ½ inches thick. In a small bowl or measuring cup, mix together ¾ cup of ketchup with about 2 tablespoons honey. Slather this sauce over the whole meatloaf.Place in a 400 degree oven for about 40 minutes.
