- For the cake: Preheat the oven to 350 degrees F. Grease a 10-cup Bundt pan with baking spray.
- Mix together the cake mix, milk, butter, eggs, chocolate chips and vanilla in a large bowl until completely combined. Pour into the prepared Bundt pan and bake until a toothpick inserted in the center comes out clean, about 40 minutes.
- Let the cake cool for about 15 minutes before turning it out onto a cooling rack. Allow to cool completely, an additional 20 to 25 minutes.
- For the simple chocolate ganache topping: Meanwhile, heat the cream in a small pan until just bubbling. Add the chocolate chips to a small bowl and pour the hot cream over the top. Let sit for 1 minute, then mix until smooth.
- Transfer the cake to a cake stand or serving platter and pour the ganache over the top, allowing it to drip down the ridges. Sprinkle with rainbow sprinkles and serve.

- Note: I use an 18x13 sheet cake pan. In a mixing bowl, combine flour, sugar, and salt. In a saucepan, melt butter. Add cocoa. Stir together. Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.
- In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.
- While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. - Coconut-Pecan frosting (recipe follows). Preheat the oven to 350° F. Melt chocolate in water, and let cool. Cream together butter and sugar. Beat in egg yolks. Stir in vanilla and chocolate. Mix flour, soda, and salt. Beat in flour mixture alternately with buttermilk. Beat egg whites until stiff peaks form; fold into batter. Pour batter into three 9-inch layer pans, lined on bottoms with waxed paper. Bake for 30 minutes or until cake springs back when lightly pressed in center. Remove and cool on rack for 15 minutes. - Make the cake: Position a rack in the center of the oven and preheat to 325 degrees F. Butter two 9-inch-round cake pans and line the bottoms with parchment paper. Whisk the flour, baking powder, baking soda and salt together in a medium bowl.
- Melt the 12 tablespoons butter in a medium saucepan over medium heat. Whisk in the cocoa powder and cook for 1 minute. Remove from the heat, add the muscovado and granulated sugars and whisk until the sugar has dissolved. Add the coffee, buttermilk, eggs and vanilla extract and continue whisking until smooth and just combined. Add the dry ingredients and stir until the batter is smooth.
- Divide the batter evenly between the prepared cake pans and bake until a toothpick inserted into the center comes out with a few moist crumbs attached, 40 to 45 minutes. Let the cakes cool in the pans on a wire rack for 20 minutes. Invert the cakes onto the wire rack and let cool at least 1 hour before frosting.
- Make the frosting: Combine the whole milk, coconut milk and goat's milk in a small saucepan and bring to a simmer over low heat. Keep warm while you prepare the caramel.
- Combine the sugar and 1/4 cup water in a medium saucepan over high heat and cook without stirring until a deep amber color, 8 to 10 minutes. Slowly and carefully whisk in the warm milk mixture and continue whisking until smooth. Add the vanilla seeds and corn syrup. Bring to a boil, reduce the heat to medium and cook, stirring occasionally with a wooden spoon, until the sauce is reduced by half and the consistency of a caramel sauce, about 55 minutes.
- Remove from the heat and whisk in the butter, vanilla extract, salt and rum (if using). Transfer the sauce to a medium bowl and stir in the pecans and shredded coconut. Let the frosting cool to room temperature, stirring it occasionally, before frosting the cake.
- To assemble the cake, slice each cake in half horizontally. Place 1 cake layer on a cake round and spread one-third of the frosting evenly over the top. Repeat to make 3 layers, then top with the remaining cake layer, top-side up.
- Make the ganache: Bring the cream to a simmer in a small saucepan. Put the chocolate in a medium heatproof bowl, add the hot cream and the corn syrup and let sit for 30 seconds. Gently whisk until smooth. Let sit at room temperature for 10 minutes.
- Set the cake on a wire rack placed over a rimmed baking sheet. Pour the chocolate ganache over the cake, letting the excess drip down the sides. Sprinkle the top with toasted coconut and pecans. Let sit at room temperature for at least 30 minutes and up to 4 hours before slicing.
- Slice the cake and top with a dollop of Coconut Whipped Cream.

- Into a 12-ounce microwave-safe mug, add the flour, sugar, cocoa powder, baking powder, and salt. Stir with a fork. Add the milk, vegetable oil, and vanilla and stir until smooth. Stir in the chocolate chips. Use a damp paper towel to wipe excess off the sides of the mug.Microwave for 90 seconds, then let the cake stand for 1 1/2 to 2 minutes before eating. - For the cake: Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray and flour three 8-inch cakes pans and line the bottoms with parchment circles.
- Combine the chocolate and 4 tablespoons of the butter in the top of a double boiler and heat until melted. Stir until smooth, then stir in the milk. Set aside to cool slightly.
- Sift together the flour, baking soda and salt in a bowl.
- Whisk the egg whites in a mixer fitted with the whisk attachment to firm peaks. In a new mixer bowl, combine the sugar and remaining 1 1/2 sticks butter. Beat with the paddle attachment on high speed until light and fluffy, 1 to 2 minutes. On medium speed, add the egg yolks one at time and beat until smooth. Beat in the vanilla. Add the chocolate mixture and beat just to combine. Add the flour mixture in 3 additions, alternating with the buttermilk, beginning and ending with the flour. Beat just until the batter is smooth.
- Remove the bowl from the mixer. Add the egg whites and fold with a spatula just to incorporate (there should be no streaks of egg whites, but fold gently so as not to deflate too much). Divide the batter among the prepared pans.
- Bake until a tester inserted in the center comes out clean, about 30 minutes. Cool on a rack in the pans for about 10 minutes, then remove and cool completely. Remove the parchment.
- For the topping: To assemble, set a cake layer on a cake stand flat-side up. Spread 1/2 cup of the jam almost to the edges of the layer. Top with a second cake layer. Spread with the remaining jam and top with the third cake layer, flat-side up. Pour the fudge sauce over the cake and use an offset spatula to cover the top and let it drip down the sides of the cake. Sprinkle toasted coconut on top to garnish right before serving.
GERMAN CHOCOLATE CAKE
This chocolatey classic is all about the coconut filling. We like ours with a cooked custard so it is extra rich and creamy. Made with cocoa powder and semisweet chocolate, the cake has a light texture and a light chocolate flavor. Semisweet chocolate also flavors the simply delicious ganache frosting.

- For the cake: Preheat the oven to 350 degrees F. Lightly coat two 9-inch round cake pans with oil and dust with flour. Whisk together the flour, cocoa, baking soda and salt in a small bowl; set aside.
- Microwave the chocolate in a small microwave-safe bowl on high power for 45 seconds; remove and stir. Microwave again at high power in 30-second increments, stirring in between, until the chocolate has melted completely; set aside.
- Beat the granulated sugar, oil and eggs in a large bowl with an electric mixer on medium speed until smooth. Beat in the melted chocolate. Alternate beating in the flour mixture and the milk, adding the flour in three additions and the milk in two, starting and ending with the flour, until just incorporated. Add half the milk, and mix until just incorporated. Repeat with the remaining flour mixture and milk, making sure not to overmix. Divide the batter evenly between the prepared pans.
- Bake until a toothpick inserted in the center comes out with moist crumbs, 30 to 35 minutes. Let cool in the pans for 10 minutes, run a thin spatula around the edges and then turn the cakes out onto a cooling rack to cool completely. (They will have a sugary "crust" on the top. This is from the melted chocolate and is not a problem. It will soften once the cake is assembled or if the layers are baked the day before.)
- For the filling: While the cakes cool, spread the pecans on a baking sheet and bake, tossing once, until toasted, 8 to 10 minutes. Finely chop. Whisk together the milk and egg yolks in a medium saucepan until smooth. Add the brown sugar, butter, corn syrup, vanilla and salt, and cook over medium heat, stirring constantly, until the mixture has thickened and coats the back of a spoon, 5 to 6 minutes. (It will be similar to the thickness of eggnog.) Pour the mixture into a large bowl. (Don't worry if it seems thin. The coconut and nuts will bind it.) Stir in the coconut and pecans; set aside to cool.
- For the frosting: Put the chocolate in a medium bowl. Heat 1 cup of the cream in a small saucepan over medium heat until steaming but not boiling, and pour over the chocolate. Let stand a few minutes, and then whisk until smooth; let stand at room temperature (or put in the refrigerator if your kitchen is hot) until thick but not set, 20 minutes to 1 hour. Add the remaining 2 tablespoons cream to the chocolate mixture, and beat with an electric mixer on medium speed until lightened in color and fluffy, about 1 minute (do not overbeat, or it will become hard and grainy). The frosting should hold medium peaks and will continue to firm up a bit as it stands. Spoon about 1 cup frosting into a pastry bag fitted with a star tip.
- To assemble: Put one cake layer right-side up on a serving plate, and top with half the filling. Top with the second cake layer and the remaining filling, spreading it to about 1/2 inch from the edge. Frost the sides, and decorate around the top edge of the cake with the frosting in the pastry bag.
- Loosely cover the cake with plastic wrap and leave at room temperature overnight. Unwrap and serve.
BETTER THAN SEX CAKE
A rich chocolate cake laced with caramel sauce and topped with whipped cream. My favorite birthday cake and possibly better than sex!

- For caramel sauce:
- 1) Combine sugar, corn syrup, and water in a 2 quart pot (you need a much bigger pot because it will expand). Bring to a simmer and cook, stirring frequently.
- 2) Once sugar is dissolved and mixture is bubbling, turn heat down to low and let simmer, without stirring, until mixture turns a dark amber color, about 8-10 minutes.
- 3) Once sugar is the dark amber color, immediately remove from heat and carefully stir in warmed cream. It will bubble and fizz like crazy.
- 4) Stir until smooth, scraping up any bits on the bottom of the pan. Add in butter and stir until smooth.
- 5) Stir in pinch of salt and vanilla. If mixture has any chunks in it at all, return to heat briefly (low heat) and stir until the mixture smooths out.
- 6) Cool and set aside until needed.
- For Cake:
- 1) In a large bowl, combine flour, sugar and salt.
- 2) In a saucepan, melt together butter and cocoa powder. Once smooth, stir in boiling water.
- 3) Add cocoa powder mixture to dry ingredients and stir to combine.
- 4) In a separate bowl, whip together eggs, buttermilk, baking soda, and vanilla.
- 5) Stir buttermilk mixture into batter. Try not to overmix it but make sure all the flour is mixed in.
- 6) Prepare your baking pan by buttering it lightly and dusting it with cocoa powder.
- 7) Add batter to pan and bake at 350 degrees for 30-35 minutes until a tester comes out clean in the center of the cake.
- Finishing the Cake:
- 1) When cake comes out of the oven, poke a bunch of holes in it with a chopstick.
- 2) Mix the sweetened condensed milk with the caramel sauce and pour the mixture over the cake. Use a spatula to scrape the sauce back and forth so the sauce gets completely absorbed by the cake.
- 3) Let the cake sit at room temperature for 30 minutes.
- 4) Chill cake for at least an hour, but preferably a few hours.
- 5) Whip cream with sugar and vanilla until it forms stiff peaks and then frost cake with fresh whipped cream. Top with crumbled heath bars or chocolate chips!
BASIC CHOCOLATE CUPCAKES
Steps:
- Preheat the oven to 350˚. Line two 12-cup muffin pans with paper liners. Melt the butter in a medium saucepan over medium heat and stir in the cocoa powder. Pour in the boiling water and stir to combine. Let boil for 15 seconds, then remove from the heat and set aside.
- In a medium bowl, stir together the flour, sugar and salt; set aside. In a small bowl, whisk together the eggs, buttermilk, vanilla and baking soda. Pour the cocoa mixture over the flour mixture and stir until halfway combined, then pour in the egg mixture and stir until the batter comes together.
- Fill the muffin cups two-thirds full (a scant 1/4 cup per cupcake) and bake until a toothpick inserted into the centers comes out clean, about 20 minutes. Remove from the oven and let cool in the pans for about 5 minutes, then remove to a rack and let cool completely before decorating.

- Use an extra egg. Most boxed mixes will call for 3 eggs. Use four for a cake that’s richer-tasting and moister. This tip is one I use practically every time I make a boxed cake mix.
- Substitute dairy. Replace the water called for on the package with dairy. My favorite is buttermilk for that little bit of tang. Dairy adds fat and makes for a more homemade-tasting cake.
- Replace water with other liquids. If you’re not going the dairy route, replace the water with another liquid for added flavor. Use coffee for a deep, dark chocolate cake, or ginger ale in light and bright yellow cake.
- Add a mix-in. Mix-ins always make a cake special and taste more like homemade. A combo I love is cream of coconut plus shredded coconut. Fold the mix-in into the batter last, adding up to 1 cup.
- Go all-citrus. Make a cake with a citrus punch, replacing the water with juice and adding lots of zest. Try orange, lemon, or lemon-lime. Add lemon and lime zest to a cake made with lemon-lime soda for the liquid.
- Add extracts. A little more vanilla is never a bad thing. Boost the flavor with an extra teaspoon or so of extract. Vanilla is always an excellent choice, but any extract can enhance a flavor.
- Put some pudding in the mix. Add a small box of pudding mix in with the cake mix. (Don’t make the pudding.) The mix adds additional flavor, moistness, and a denser texture.
- Make a filling. A filling in the center definitely screams (or at least politely says) “homemade!” Make a simple one by stirring together a cup of mini chocolate chips with 1/2 cup light brown sugar and 1/2 cup chopped pecans.
- Frost with a homemade frosting. Now, I’ll admit to liking canned frosting—but spread on graham crackers, not cakes. To elevate a cake mix cake, top with a homemade frosting.
