Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 25

1/2 cup (1 stick) unsalted butter, melted
3 cups cubed day-old Skillet Cornbread (1-inch cubes), recipes follows
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup olive oil
1 tablespoon red wine vinegar
1 teaspoon freshly ground black pepper
1 teaspoon honey
1/2 teaspoon kosher salt
1 clove garlic, grated
1 pound collard greens, julienned
One 15-ounce can black-eyed peas, drained and rinsed
1 cup jarred sliced roasted red peppers, drained
1 cup cherry tomatoes, halved
8 ounces mozzarella pearls, drained
1/4 cup fresh basil leaves
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup whole milk
1 large egg
1/2 teaspoon baking soda
1/4 cup plus 2 tablespoons shortening, melted

Steps:

  • For the cornbread croutons: Preheat the oven to 350 degrees F.
  • Brush a baking sheet with 2 tablespoons of the melted butter. Gently arrange the Skillet Cornbread cubes on the buttered baking sheet and drizzle with the remaining melted butter. Sprinkle with the salt and pepper. Do not toss the cornbread or it will crumble. Bake, gently turning the cubes with tongs halfway through, until golden brown, 15 to 20 minutes. Allow the cornbread croutons to cool completely.
  • For the dressing: Add the olive oil, vinegar, pepper, honey, salt and garlic to a mason jar and shake.
  • For the salad: In a large bowl, combine the collards, black-eyed peas, red peppers, tomatoes, toasted cornbread croutons and dressing and toss gently. Add the mozzarella pearls to the bowl (setting aside a handful for garnishing) and toss them in with the rest of the salad.
  • Arrange the salad on a platter. Using tongs, bring some of the croutons to the top of the salad to garnish. Arrange the remaining mozzarella pearls around the salad and garnish with the basil leaves.
  • Preheat the oven to 450 degrees F.
  • Stir together the cornmeal, flour, baking powder and salt in a bowl until combined.
  • Stir together the buttermilk, whole milk and egg in a bowl or measuring cup with a fork. Add the baking soda and stir again, making sure it is evenly dissolved. Pour the milk mixture into the dry ingredients. Stir with a fork until combined. Slowly add 1/4 cup of the melted shortening to the batter, stirring until just combined.
  • Heat the remaining 2 tablespoons shortening over medium heat in a cast-iron skillet. Pour the batter into the hot skillet--it should sizzle. Spread with a spatula to even out the surface. Cook on stovetop for 1 minute. Transfer to the oven and bake until the top is golden brown and the edges are crispy, 20 to 25 minutes.

CORNBREAD DRESSING

Cornbread Dressing image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time P1DT1h40m

Yield 10 to 12 servings

Number Of Ingredients 22

1 loaf crusty French bread, diced into 1-inch cubes
1 stick butter
2 cups finely diced celery (leaves included)
2 carrots, peeled and very finely diced
1 large onion, diced
4 cups low-sodium chicken broth, plus more if needed
2 to 3 teaspoons fresh rosemary, chopped
1/2 teaspoon ground thyme
1/4 teaspoon ground sage
1/8 to 1/4 teaspoon turmeric
Kosher salt
1/4 cup fresh parsley leaves, chopped
Skillet cornbread, recipe follows, diced into 1-inch cubes
1/4 cup plus 2 tablespoons shortening
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup milk
1 whole egg

Steps:

  • Spread the Skillet Cornbread and French bread cubes out on 2 baking sheets and let them dry for about 24 hours until totally crisp. Once dry, transfer the cubes to a large mixing bowl and toss to mix them up a bit.
  • Preheat the oven to 350 degrees F.
  • Warm up a large skillet or Dutch oven over medium heat and add the butter. When it's melted, add the celery, carrots and onions, and cook for a few minutes until the onions are almost translucent, about 6 minutes. Add the chicken broth and bring to a boil. Reduce the heat to low and add the rosemary, thyme, sage and turmeric. Gradually ladle the broth mixture into the bread, tossing lightly as you go. Keep gradually adding the broth mixture, tasting as you go and adding more seasoning and herbs if needed. Add salt carefully. You don't want to over salt your stuffing. If the mixture is not quite moist enough, add a bit more chicken broth and stir. Stir in the fresh parsley.
  • Place the dressing in a rectangular baking dish and bake until golden brown on top, 20 to 25 minutes.
  • Preheat the oven to 450 degrees F.
  • Melt 2 tablespoons of the shortening in a cast-iron skillet. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt and baking soda. In a separate bowl, whisk together the buttermilk, milk and egg until fully combined. Slowly incorporate the wet ingredients into the dry, stirring until well combined. Melt the remaining 1/4 cup melted shortening and add to the batter, stirring constantly. Pour into the hot skillet, smoothing the surface with a spatula. Place in the oven and bake until golden brown on top, 20 to 25 minutes.

CORNBREAD DRESSING WITH SAUSAGE AND APPLES

Cornbread Dressing with Sausage and Apples image

This cornbread dressing is unlike any you've had before. Make it for your next Thanksgiving meal and wow everyone at the dinner table!

Categories     Christmas     Thanksgiving     side dish

Time 1h20m

Yield 8-10 servings

Number Of Ingredients 13

1 1-pound loaf French bread, cut into 1-inch cubes (about 10 cups)
5 c. cubed cornbread
10 tbsp. salted butter
1 lb. loose sweet Italian sausage
5 celery stalks, diced
2 Granny Smith apples, cut into 1/2-inch chunks
2 large leeks (white and light green parts), rinsed and thinly sliced into half-moons
1/2 bunch parsley, chopped
4 tsp. chopped fresh sage
2 tsp. chopped fresh thyme
1 tbsp. kosher salt
Black pepper, to taste
4 c. low-sodium chicken broth

Steps:

  • Spread out the cubed French bread and cornbread on 2 separate baking sheets and leave out at room temperature until completely dried out, several hours or overnight.
  • Preheat the oven to 375 ̊. Heat 4 tablespoons butter in a large pot over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until no longer pink, 6 to 7 minutes. Remove to a large bowl with a slotted spoon.
  • Heat another 4 tablespoons butter in the same pot over medium-high heat. Add the celery, apples, leeks, parsley, sage, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables and apples are softened, 4 to 5 minutes. Pour in the chicken broth, bring to a boil and remove from the heat.
  • Add the French bread to the bowl with the sausage and stir to combine. Gradually add the hot broth mixture, 1 cup at a time, gently stirring to combine. Add the cornbread to the bowl along with the remaining 2 teaspoons salt and a few grinds of pepper and gently stir (be careful not to break up the bread too much). Scrape the mixture into a 2-quart baking dish.
  • Melt the remaining 2 tablespoons butter and drizzle over the dressing. Bake, uncovered, until golden and crisp on top, 25 to 30 minutes. Let sit for 10 to 15 minutes before serving.
