Number Of Ingredients 6

1 (1 5/8 ounce) package gravy mix (Pioneer Brown Gravy Mix preferred)
2 cups water
8 ounces mushrooms, sliced
1/4 lb butter or 1/4 lb margarine
2 tablespoons red wine (Burgundy, Merlot or Cabernet are all just fine)
1/2 teaspoon garlic powder

Steps:

  • Saute mushrooms in butter.
  • Mix gravy powder to water; heat and stir until thickened.
  • Add all ingredients together and heat until fully incorporated and heated through.

Number Of Ingredients 7

4 tablespoons salted butter
One 10-ounce package small white button mushrooms, cleaned, stems removed if mushrooms are large
Kosher salt and freshly ground black pepper
1 tablespoon fresh thyme leaves
2 cloves garlic, minced
Zest and juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Melt 3 tablespoons of the butter in a sauté pan over medium heat. Add the mushrooms in one layer and cook, without moving, until golden brown, about 5 minutes. Sprinkle with salt and pepper and toss. Continue to cook until the mushrooms are cooked through, about 5 more minutes. Add the thyme, garlic and lemon zest, then cook for 1 minute. Add the lemon juice and remaining tablespoon of butter and toss until the butter is melted. Sprinkle with the chopped parsley and serve.

  • Sauté: Heat the butter in a deep and wide skillet over medium heat. Add the onion, garlic and mushrooms and cook until they're soft and lightly browned, about 5-10 minutes.
  • Season: Stir thyme, salt and pepper into mushrooms. Sprinkle pan with flour and stir in well. Stir in tomato paste and cook for 30 seconds, stirring constantly.
  • Deglaze the pan: Increase the heat to medium-high. Wait until pan sizzles, then pour the wine or extra stock over the mushrooms, scratching the browned bits off the bottom of the pan. Reduce the heat to medium-high and cook until almost all of the wine has evaporated.
  • Cook the sauce: Stir in the stock. Simmer the sauce until it has reduced by half. If sauce doesn't thicken/you want a thicker gravy, stir in a slurry of cornstarch and water.
