MAMMAK'S PINTO BEANS WITH GROUND BEEF

MammaK's Pinto Beans with Ground Beef image

My mother made this recipe for pinto beans with ground beef for us as kids and I have used it many times in feeding my 4 boys. When the space shuttle fell, our small town filled up overnight with searchers for the space shuttle debris, and this is one of the recipes that I used to help feed the masses. It was a hit every time. We served it with cornbread and a side salad for a complete meal or over a bed of rice. My mom would top off a bowl of this with homemade sweet salsa. Yum!

PINTO BEANS AND GROUND BEEF STEW RECIPE - (4.2/5)

Pinto Beans and Ground Beef Stew Recipe - (4.2/5) image

Provided by Thom7747

Number Of Ingredients 16

1 cup dried pinto beans, un-soaked or 2 (16-ounce) cans pinto beans, rinsed and drained
2 tablespoons olive oil, divided
1 pound low-fat ground beef
1 teaspoon Spike seasoning
1 onion, chopped
1 tablespoon minced garlic
2 teaspoon dried Mexican oregano
1 tablespoon ground cumin
1 tablespoon dried cilantro, optional
3 cups homemade chicken stock, or 2 (14.5-ounce) cans chicken broth and reduce slightly to 3 cups
1 cup liquid from pressure cooking beans or 1 cup water
2 tablespoon tomato paste
1 (14.5 ounce) can petite diced tomatoes
1/2 cup sliced green onions
1/2 cup chopped fresh cilantro, plus more to taste
2 tablespoons fresh squeezed lime juice

Steps:

  • Put 1 cup dried pinto beans in pressure cooker with 2 teaspoons olive oil, add water to fill pressure cooker half full, lock lid, and pressure cook at high pressure 15 minutes. Start to time after high pressure is reached. Turn off heat and let pressure release naturally, about 15 minutes. When all pressure is released, drain beans into colander, reserving 1 cup bean cooking liquid. You can also use 2 cans pinto beans, rinsed well in a colander placed in the sink, then drained. While beans are cooking, heat 2 teaspoons olive oil in large heavy frying pan, add ground beef, and season with Spike seasoning, then saute until beef is well-browned, breaking apart with back of the turner as it cooks. When it's well browned, remove beef to a bowl. Heat 2 teaspoons more olive oil in frying pan, then add onion and saute about 5 minutes, or until onion is starting to brown. Add minced garlic and saute 2 minutes more, then add Mexican oregano, cumin, and dried cilantro and saute about 2 minutes more. When beans have finished cooking and been drained into a colander, add cooked ground beef to pressure cooker, followed by onion/garlic/herb mixture. Add chicken stock to frying pan and simmer a minute, scraping off any browned bits and adding that liquid to pressure cooker, along with 1 cup reserved bean cooking liquid or water, if using canned beans. Add beans, tomato paste and can of tomatoes to pressure cooker. Lock lid and pressure cook for 2 minutes at high pressure. Start to time after high pressure is reached. Turn off heat and let pressure release naturally, about 15 minutes. When pressure is released, add sliced green onion, chopped fresh cilantro, and lime juice, turn heat on and cook with lid off for about 5 minutes. Serve hot, with additional chopped cilantro to add at the table if desired.

BEEF CHILI WITH STEWED PINTO BEANS

Beef Chili With Stewed Pinto Beans image

Categories     dinner, one pot, main course

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 13

1 pound pinto beans
1 medium onion, chopped
Bouquet garni (thyme and pars- ley sprigs and bay leaf tied in a cheesecloth bag)
4 to 6 dried California or ancho chilies
Coarse salt and freshly ground pepper to taste
2 1/2 pounds stewing beef, cut in 1-inch cubes and trimmed of fat
2 tablespoons olive oil
3 cloves garlic, peeled
2 bay leaves
1 1/2 tablespoons browned toasted cumin seeds
1 tablespoon fresh oregano
2 to 3 tablespoons Hungarian paprika
1 tablespoon sugar

Steps:

  • Cover beans with water, bring to boil and drain. Add fresh water to cover. Add onion and bouquet garni and simmer gently, covered, for 30 minutes.
  • Using rubber gloves to protect your hands from juices, which can sting your eyes, remove stems and seeds from the chilies. Tear them into strips and place in large bowl. Add three cups boiling water and let the chilies soak for 30 minutes.
  • Season beans with salt and pepper; simmer until cooked (about 30 minutes more), adding more water if necessary. Discard bouquet garni.
  • Meanwhile, pat the meat cubes dry with paper towels. Heat oil in large, enameled cast-iron casserole. Brown cubes of meat a few at a time, turning them with tongs so that they brown on all sides. When all meat has been browned, return it to casserole.
  • Pour chilies and soaking liquid into bowl of a food processor or blender along with garlic. Blend until smooth (as two batches if you prefer).
  • Add chili-garlic liquid to meat along with remaining ingredients and three cups of water. Simmer for one hour, adding more water as necessary to keep chili from drying out. Taste and correct seasoning. (If chili isn't hot enough, add more paprika). Simmer for another 30 minutes.
  • Serve the beans separately.

  • Drain the pinto beans. Heat 1 tablespoon of the oil in the pressure cooker. Add half of the cubed meat and cook over moderately high heat until well browned all over; transfer to a plate. Repeat with the remaining meat and another tablespoon of the oil. Set the meat aside.
  • Add the remaining 1 tablespoon oil to the cooker, along with the onion, red and green bell peppers, garlic, jalapeños and cumin seeds. Cook over moderately high heat, stirring frequently, until the vegetables soften, about 2 minutes; scrape up any browned bits sticking to the bottom of the cooker. Stir in the chili powder, oregano, cinnamon and bay leaves, then add the drained pinto beans, the reserved browned meat and the boiling water.
  • Lock the lid in place and bring to high pressure over high heat. Lower the heat just enough to maintain high pressure and cook for 15 minutes. Turn off the heat and allow the pressure to come down naturally; do not quick-release, or the meat will toughen. Remove the lid, tilting it away from you to allow any excess steam to escape.
  • Remove and discard the bay leaves. Stir the tomato paste into the chili and season with salt and black pepper, then simmer for a few minutes to blend the flavors. If the chili seems too soupy, set it aside for a few hours at room temperature. Alternatively, puree about a cupful of the beans and stir them back in. Stir in the cilantro just before serving.
