PINKY WINKS OR MINI PIZZAS
I got this recipe from a dear family friend who made them for parties or snacks while watching movies or playing cards. She shared the recipe and it is one of our family's favorite snack/appetizer. They are easy to make and can be stored uncooked or cooked in a sealed freezer bag for quite a while and can be cooked or reheated whenever required for unexpected guests or quick snacks at any time. I think they are really tasty.

Steps:
- In a skillet over medium heat, brown sausage with garlic & onion powder. Transfer browned meat to medium sauce pan. Add Velveeta cubes to browned meat . Heat until cheese is melted. Stir to thoroughly combine meat and cheese. Preheat oven to 325 degrees F.
- Place 12 COCKTAIL RYE SLICES IN A SINGLE LAYER on a non stick baking sheet. pot a dinner spoonful of the meat & cheese mixture in the middle of each rye slice. Bake for 30 minutes at 325 until bubbly & brown. Serve warm. Make extras; they will go quickly..
- Place leftovers, if there are any in a Ziploc freezer bag and freeze until ready to reheat. a couple of months is fine.

- Preheat oven to 375°. Separate tubes of dough into 8 rolls each; halve the rolls. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray. , Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. Bake until the crusts are browned and cheese is melted, 15-18 minutes.

- In a large, heavy skillet, heat the oil over low heat. Add the onions, salt, pepper, herbs de Provence, and sugar. Stir to combine. Continue cooking over very low heat, stirring occasionally, until the onions are caramelized and dark golden brown, about 1 hour and 45 minutes.
- Preheat the oven to 475 degrees F.
- Roll out the pizza dough into a 1/4-inch-thick round. Using the cookie cutter, cut out 24 dough circles. Arrange the circles on a large heavy baking sheet.
- Place a small spoonful of the caramelized onions on each dough circle. Top with a small amount of goat cheese.
- Bake until golden and bubbly, about 10 minutes.
- While still hot, top each pizzette with a piece of prosciutto. Arrange on a serving platter and garnish with sprigs of parsley or rosemary. Serve immediately.

ZOE'S EASY, RUSTIC MINI PIZZAS
I created these delicious mini pizzas. They are more like a pizza bun. The dough is fluffy and tender, the sauce is fresh, and the cheese crisp and a little gooey. Very easy appetizer and absolutely delicious. A great appetizer, snack, or light supper!

Steps:
- Mix flour, water, olive oil, yeast, salt, and sugar together in a large bowl. Use an ice cream scoop to place 12 balls of dough onto the prepared pan, patting down slightly; dough will be very sticky. Let sit until risen, about 30 minutes, without kneading or punching down.
- Preheat the oven to 425 degrees F (220 degrees C). Grease a baking pan. Toss an ice cube into the bottom of the oven to add some humidity.
- Combine tomato sauce, garlic, oregano, and basil in a bowl. Add olive oil, vinegar, and sugar; stir very well.
- Spread 1 to 2 tablespoons tomato sauce on each dough ball. Sprinkle 1 to 4 tablespoons mozzarella cheese on top and add spinach.
- Bake in the preheated oven for 15 minutes. Let cool slightly before serving.
