Last but not least, Yvonne tosses together an effortless sweet treat to cap off the meal. "I received the recipe for Creamy Fruit Medley from a friend of my mother's years ago," she recalls. "I always have the ingredients on hand in case I need a quick dessert. "Any flavor of gelatin works well, and sometimes I spoon it into individual parfait glasses instead of serving it in one big bowl," Yvonne suggests. "Everyone enjoys it."

- Drain pineapple, reserving the juice in a small saucepan. Set pineapple aside. Add enough water to juice to make 1-1/3 cups; bring to a boil. Place gelatin in a bowl; add boiling liquid and stir to dissolve. Cool until slightly thickened. In a bowl, whip cream; gradually beat in sugar. Fold into the gelatin mixture. Stir in pineapple and cottage cheese; blend well. Pour into a 1-1/2-qt. serving bowl; chill at least 3 hours or overnight.

Looking through my recent gem of an older community cookbook found in one of my favorite antique stores, I found this delightful salad. It will go with almost any meal and could even be used as a dessert!

Steps:
- In a medium saucepan, over medium heat, bring the crushed pineapple with its juice to a boil.
- Remove from the heat.
- Stir in the lemon jello followed by the cream cheese.
- Use a mixer, if needed, to get any lumps of the cream cheese out.
- Chill about 20 minutes.
- Fold in the whipped cream and spoon into a large pretty glass bowl.
- Chill at least 2 hours before serving.
