I'm not sure what to call this...I tossed it together for tonight's chicken breasts...Sweet and Spicy!! It's really very good!! Not for the faint at heart though...it has a little kick.

1 (14 ounce) can pineapple chunks, with no sugar added juice
6 garlic cloves, chopped
1 inch ginger, peeled and chopped
1/2 cup soy sauce
2 tablespoons mirin
3 dashes sesame oil
1 teaspoon crushed red chili pepper (probably closer to 1 1/2)
1/2 cup brown sugar

Steps:

  • Mix all ingredients in a heavy sauce pan.
  • Simmer for 5 minutes.
  • While simmering use the immersion blender to blend. It thickens up without any thickening agent.

1 pound skinless, boneless chicken breasts, cut into cubes
1 green bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 red bell pepper, sliced thin
1 ¼ cups sliced fresh mushrooms
1 onion, chopped
1 cup teriyaki sauce
1 (8 ounce) can pineapple chunks, undrained
1 teaspoon garlic powder
1 teaspoon crushed red pepper
¼ cup all-purpose flour

Steps:

  • Heat the oil in a wok or large skillet over medium-high heat. Cook the chicken until no longer pink in the center and the juices run clear, 7 to 10 minutes.
  • Place the green bell pepper, yellow bell pepper, red bell pepper, mushrooms, onion, teriyaki sauce, pineapple chunks with the juice, garlic powder, and crushed red pepper into the wok, and turn the heat to medium. Bring to a simmer, stir in the flour, and continue simmering 15 minutes until thickened.

¼ cup 100% pineapple juice or 100% orange-pineapple juice blend
¼ cup fat-free reduced-sodium chicken broth
2 tbsp reduced-sodium soy sauce
1 tbsp mirin (or 2 teaspoons sake plus 1 teaspoon sugar)
1 garlic clove (pressed)
¼ tbsp ground ginger (or 1 teaspoon grated fresh ginger)
freshly ground black pepper
2 oz canola oil
2 tsp cornstarch (optional)

Steps:

  • In a mixing cup, combine the 100% fruit juice, broth, soy sauce, mirin, garlic, and ginger. Add about 8 grinds of black pepper.
  • Pour the Teriyaki Sauce into a 1-gallon resealable plastic freezer bag and add the oil. Add the desired beef, seal, and marinate at room temperature for 30 minutes.
  • Discard the marinade after using.
  • For a stir-fry sauce, do not use the oil, but mix in the cornstarch.
  • Add to the wok at the end, cooking just until the sauce thickens to coat the other ingredients, 60-90 seconds.
  • This sauce keeps, covered in the refrigerator, for 2 days.

3 green onions (cut into 1/2" pieces)
1 cup teriyaki sauce (store bought or homemade below)
2 tablespoons cornstarch (optional)
sesame seeds and green onion for garnish (optional)
⅓ cup Soy Sauce
¼ cup Fresh Lime Juice
¼ cup Pineapple juice
⅓ cup Honey
⅓ cup Ketchup
1 teaspoon sesame oil
2 clove garlic (minced)
1 tablespoon fresh ginger root (grated)
1 green onion (minced)

Steps:

  • Combine all sauce ingredients. Set half of the sauce aside and refrigerate.
  • Combine chicken with remaining sauce. Marinate 4 hours or overnight if possible.
  • Thicken Remaining Teriyaki Sauce: Place reserved sauce in a small saucepan and bring to a simmer. Combine cornstarch with 2 tablespoons water. Add cornstarch a little at a time to reach desired consistency, you may not use all of it.

3/4 cup coconut aminos
3/4 cup pineapple juice
1 tsp garlic granules (optional)
1 tbsp cornstarch or arrowroot powder

Steps:

  • Add the coconut aminos and pineapple juice (and optional garlic granules) to a small saucepan over medium heat and allow to simmer. Simmer the sauce for 10 minutes.
  • Dissolve the corn starch in a small bowl with 2 tbsp cold water. When fully dissolved, whisk into the simmering sauce. Continue to stir for 2 minutes as the sauce thickens, then remove from heat and allow to fully cool. When cool, store in an airtight container in the fridge. The sauce will keep for a few weeks in the fridge!
