GRILLED PORK CHOPS WITH SPICY ZUCCHINI-PINEAPPLE SALSA

- Place the pork chops into a glass baking dish or bowl and pour the chilled Base Brine over top. Cover with plastic wrap and refrigerate for 8 hours or overnight.
- About an hour before serving, make the salsa. Combine the pineapple, zucchini, mint, olive oil, chardonnay, shallots, jalapenos, ginger and some salt and pepper in a mixing bowl. Let marinate 1 hour. (This is best if allowed to marinate for 1 hour, but you can also serve it straight away if necessary.)
- When ready to cook the pork, prepare a grill for medium-high heat. Remove the pork chops from the brine, pat dry and allow to sit out while the grill is preheating.
- Season the pork chops on all sides with salt and pepper. Place onto the hot grill and cook until the internal temperature registers 145 degrees F on a meat thermometer, 7 to 8 minutes per side for medium. Allow the pork chops to rest for 5 minutes before serving topped with the salsa.
- Combine the brown sugar, salt, peppercorns, garlic, thyme, rosemary, bay leaf and 8 cups (2 quarts) water in a large stockpot and heat just to dissolve the salt and sugar. Chill thoroughly before using.

PINEAPPLE ZUCCHINI RELISH BREAD

- 1. Preheat oven to 350^. Butter 2 8x4-inch bread pan on the bottom only.Set aside. --- Cream butter and gradually add sugar creaming well. Add eggs, pineapple/zucchini relish and vanilla. Blend well.
- 2. Combine flour, soda, baking powder,and ginger. Add 1/2 the mixture to the butter batter mixture and then the sour cream and then the remaining flour mixture. Blend well after each addition. Use low speed. Stir in nuts.
- 3. Pour batter evenly into the 2 prepared pans. Top with pecan halves or other nuts. Bake for about 50 minutes. Test with toothpick for doneness.. Remove from pans and place on wire cooling rack. Butter all sides of the breads. Cool completely. Slice when cool.
PINEAPPLE ZUCCHINI RELISH

- Wash and peel the zucchini.
- [Optional] Cut lengthwise into quarters, use a spoon and scrape the length of the centre to scoop large seeds from middle.
- Cut into 1 to 2 cm (1/2 inch) cubes, or, shred.
- Add to large saucepan with all the other ingredients.
- Bring to a boil, uncovered, then reduce to a simmer.
- Let simmer uncovered for 20 minutes.
- Ladle hot solids and liquid equally into heated jars.

- Prepare 8-9 pint jars, lids, and rings. Sterilize the jars and keep them in the hot water till it's time for processing. Make sure to fill your water bath canner and get the water to a simmer. Peel zucchini and either cut into ½-inch cubes or shred.
- In a large stainless steel or enameled dutch oven combine all the ingredients. Bring to a boil gently, stirring often, then reduce to a simmer for 20. Remove from heat.
- On a dishtowel place your hot jars and using your funnel in each jar fill leaving 1/2" headspace. Remove air bubbles and refill to the proper headspace if necessary.
- Taking a clean papertowel wet it with warm water and wipe the rims of the jars removing any food particles that would interfere with a good seal.
- Using your magic wand extract the lids from the hot water and place them on the now cleaned rims. Add your rings to the tops of each of the jars and turn to seal just "finger tight".
- Make sure your rack is on the bottom of the canner and place the jars in the water bath making sure that the water covers each of the jars by 1 to 2 inches. Add hot water to the canner if it doesn't measure up.
- Cover the pot and turn up the heat under the canner and wait for the water to start boiling. Once the water has come to a boil start your timer for 20 minutes.
- When complete turn off the heat and remove the cover and let the jars sit for another few minutes.
- Remove the jars and place them back on the dishtowel in a place that they will sit overnight to cool. Do not touch or move them till the next morning.
- Sometime in the next hour your jars will be making a "pinging" or "popping" noise. That is the glass cooling and the reaction of the lids being sucked into the jar for proper sealing. Some recipes may take overnight to seal. Check your lids and reprocess any jars that did not seal.
- Make sure to label your jars after they have cooled with the name of the recipe and the date canned. If you want to use the shrink labels in the picture you can order them Here!

- In a medium bowl, combine oil, eggs, and vanilla; stir well.

- Fold wet ingredients with the dry ingredients, batter will be stiff and dry but keep folding it and it will all come together.

- Drain pineapple over large measuring cup. Add enough water to juice in cup to measure 2 cups liquid. Place liquid in nonaluminum saucepan. Add cranberries and sugar. CRANBERRY ORANGE PINEAPPLE RELISH

- This is not ordinarily messy to make, but as with beets and tomato dishes, Im careful with what I prepare cranberries. 1. Put orange in cuisinart with metal blade and pulse or process till coarsely chopped. 2. Add cranberries to food processor and pulse or chope till coarsely chopped.
