DUNCAN HINES PINEAPPLE UPSIDE DOWN CAKE
Steps:
- Preheat oven to 350 degrees F. Grease the sides of a 9x13-inch pan with cooking spray. Pour melted butter into the pan and sprinkle with brown sugar. Arrange the pineapple slices and cherries on top of the brown sugar.
- In a large bowl, combine the cake mix with water, oil and eggs. Using an electric mixer, beat for 2 minutes at medium speed. Then pour the mixture into the pan (on top of the pineapples and cherries).
- Bake for 40 minutes or until toothpick inserted in the center of the cake comes out clean.
- Transfer the cake to a wire rack and let it cool for 5 minutes. Run a knife on around the sides of the pan to loosen the cake and flip it over onto a serving platter. Pour the remaining juices in the pan all over the cake.
- Top the cake with whipped cream. Serve warm (or cool).
- Enjoy!

Steps:
- Heat oven to 350°F.
- Spray two 9-inch round cake pans with cooking spray. Divide melted butter between pans, completely covering bottoms of pans. Sprinkle brown sugar over butter. Place pineapple rings on brown sugar, 6 rings in each pan. Place maraschino cherry in center of each pineapple ring.
- In large bowl, beat cake mix, pineapple juice, vegetable oil and eggs with electric mixer on medium speed until smooth. Divide batter between pans. Spread evenly.
- Bake 30 to 35 minutes or until cake is golden and springs back when gently pressed. Cool in pan 15 minutes. Run knife around edges of pans; carefully turn cakes onto cooling racks. Cool to room temperature, about 30 minutes.
- In medium bowl, beat whipping cream, granulated sugar and vanilla with electric mixer on high speed until soft peaks form. Place 1 cake layer on large plate or cake stand. Cover with 1 cup of the whipped cream. Carefully place second cake layer on top. Top with swirls of whipped cream, walnuts and additional cherries.
- Refrigerate 30 minutes to firm up before serving.

- Preheat oven to 350°F. For topping, melt butter over low heat in 12-inch cast-iron skillet or skillet with oven-proof handle. Remove from heat. Stir in brown sugar. Spread to cover bottom of skillet. Arrange pineapple slices, Maraschino cherries and walnut halves in skillet. Set aside. For cake, combine cake mix, pudding mix, eggs, water and oil in large mixing bowl. Beat at medium speed with electric mixer for 2 minutes. Pour batter evenly over fruit in skillet. Bake at 350 ºF for 1 hour or until toothpick inserted in center comes out clean. Invert onto serving plate.

DUNCAN HINES PINEAPPLE CAKE

Steps:
- Bake cake according to package directions.
- Prick cake with fork while still hot and spread can of crushed pineapple on top. Do not drain pineapple. When cake is cool, add topping.
- Topping: Prepare instant vanilla pudding using only 1 cup milk. Fold the cool whip into the pudding and spread on the cake. Sprinkle top with coconut or broken walnuts. (I use both)
- Keep cake refrigerated. Enjoy!
PINEAPPLE DREAM CAKE
Steps:
- Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and sides of an 11x13-inch pan with oil or butter, or line with parchment paper.
- In a large bowl, beat the cake mix, water, butter, and eggs on low speed for 30 seconds. Increase the speed to medium and beat for 2 more minutes.
- Add the sour cream and crushed pineapple to the batter and mix until combined.
- Pour the batter into the prepared pan. Bake for 33 to 38 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.
- Meanwhile, prepare the whipped topping. Whisk the pudding and drained crushed pineapple until combined. Gently mix in the whipped topping.
- Spread the whipped cream frosting over the cooled cake. Chill for 30 minutes before serving. Slice and enjoy!

Sometimes I will change this recipe up and use different flavor gelatin and fresh or frozen fruits. This recipe was in the Spokesman review in April of 1965.

- GRAHAM CRACKER CRUST : measure out ½ cup of crumbs and set aside for topping.
- Combine remaining crumbs with margarine , sugar and vanilla press into bottom of a 9x13" pan.
- PINEAPPLE CHEESE FILLING : Chill canned milk for several hours.
- Dissolve lemon gelatin in boiling water ; set aside to cool.
- In large bowl add cream cheese , stir to soften up , then stir in sugar and vanilla.
- Gradually add cooled gelatin , stirring until smooth.
- Whip evaporated milk and fold in. Add drained crushed pineapple.
- Pour into crumb lined pan ; Sprinkle top with remaining crumbs.
- Refrigerate for several hours until set (or over night)
PINEAPPLE SUPREME CAKE
No matter where I take this dessert it always gets raves. Men especially seem to like this dessert. Mom always took this to church potlucks along with other favorites and whenever we would have the ministers retreats they always requested it.

- 1. Combine ingredients in order listed. Mix well, but do not beat; granulated sugar, eggs, brown sugar and pineapple. Add; flour, soda and salt. Stir with spoon (do not use a mixer) only until well blended. Stir in nuts and vanilla.
- 2. Pour into greased 9x13 baking dish (I prefer glass over metal) and bake at 350 degrees for 50 minutes.
- 3. Five minutes before cake comes out of oven, mix together; granulated sugar, butter canned milk and vanilla. Bring to a boil; cook and stir for 4 minutes.
- 4. As soon as cake comes out of oven, make holes at 1/2" intervals over entire surface. Slowly pour hot mixture over entire cake, making sure to get around edges, too. This cake can be wrapped and frozen. Remove from freezer and allow to thaw slowly. It will taste like you just baked it. Serve with a dollop of whipped cream.
EASY 4-INGREDIENT PINEAPPLE FROSTING
Steps:
- Gather the ingredients.
- Place a mesh sieve over a bowl and, from the canned pineapple, strain the pineapple juice into the bowl. Set the juice aside.
- Measure 6 tablespoons (about 1/3 cup) of crushed pineapple into a small bowl and set aside. Refrigerate or freeze any remaining crushed pineapple and juice for another use, if desired.
- Add butter to a large bowl. Using an electric mixer , cream the butter until smooth and pale.
- Gradually beat in the confectioners' sugar. Continue beating until light and fluffy.
- Stir in the 6 tablespoons of crushed pineapple and just enough of the reserved pineapple juice to make it spreadable. Beat to blend thoroughly.
- Spread over cake layers or cupcakes. If desired, add more crushed pineapple and spoon the mixture over a Bundt cake.
