Pineapple Sweet Potatoes image

Baked sweet potatoes with a candied pineapple sauce!

Number Of Ingredients 7

6 sweet potatoes
1 (20 ounce) can crushed pineapple
1 cup packed brown sugar
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 9x13 inch baking dish.
  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool. Peel and quarter.
  • In a sauce pan, combine pineapple, sugar, cinnamon, ginger, nutmeg and cloves. Bring to boil and reduce heat.
  • Arrange potatoes in a single layer in baking dish. Pour sauce over potatoes and bake for 45 minutes.

This is an unusual way to serve baked potatoes, but if your family is like mine, they'll love it. It's a regular on our menu at Thanksgiving and Christmas.

2 small sweet potatoes
1/2 cup canned crushed pineapple
4-1/2 teaspoons brown sugar
1 tablespoon butter
1/8 teaspoon salt
1 tablespoon dried cranberries
2 tablespoons chopped pecans, divided

Steps:

  • Wrap potatoes in foil and bake at 400° for 45-50 minutes or until tender. Let stand until cool enough to handle. Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell., In a small bowl, mash the pulp; add the pineapple, brown sugar, butter and salt. Stir in cranberries and 1 tablespoon pecans. Spoon into potato shells. Sprinkle with remaining pecans. Place on a baking sheet. Bake at 400° for 8-12 minutes or until heated through.

2 sweet potatoes, peeled and cut into 1-inch pieces
1 medium pineapple, peeled, cored, and cut into 1-inch pieces
2 tablespoons vegetable oil
1/4 teaspoon cayenne pepper
Coarse salt

Steps:

  • Preheat oven to 450 degrees. On a rimmed baking sheet, toss together sweet potatoes, pineapple, oil, and cayenne pepper. Season with salt. Roast until sweet potatoes and pineapple are tender and golden, 30 to 35 minutes, stirring every 10 minutes.

Stuffed Baked Sweet Potatoes image

It is common for steakhouses in our area to offer baked sweet potatoes as a side, just like a baked potato, only with butter, sugar and cinnamon. This is a fancier version that sound delicious, ie. the sweet potato version of a stuffed potato. I have not tried it, but hope you enjoy! Cook time includes time to initially cook the sweet potatoes.

6 medium sweet potatoes
1/2 cup orange juice
3 tablespoons butter
1 teaspoon salt
1 (8 ounce) can crushed pineapple, drained
1/2 cup chopped pecans

Steps:

  • Preheat oven to 375.
  • Bake sweet potatoes for 1 hour or until tender.
  • Cut 1 inch strip lengthwise from top of the potato.
  • Carefully scoop pulp from shell.
  • In a large bowl, combine sweet potatoe pulp, orange juice, butter and salt.
  • Beat until fluffy.
  • Stir in pineapple.
  • Stuff shells with the mixture.
  • Sprinkle with pecans.
  • Bake at 375 degrees for 10 minutes.

1 can (29 ounces) cut sweet potatoes, drained
1 can (8 ounces) crushed pineapple
3 tablespoons chopped pecans
2 tablespoons brown sugar
2 tablespoons butter, melted
3/4 cup miniature marshmallows

Steps:

  • In a large bowl, mash the sweet potatoes. Stir in the pineapple, pecans, brown sugar and butter. , Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 375° for 20 minutes. Sprinkle with marshmallows. Bake 5 minutes longer or until marshmallows are lightly browned.
