- In a large bowl, combine the first six ingredients. Add the tuna; turn to coat. Cover and refrigerate for 30 minutes. Meanwhile, in a small bowl, combine pico de gallo ingredients. Cover and refrigerate until serving., Drain and discard marinade. Lightly oil the grill rack. For medium-rare, grill tuna, covered, over high heat or broil 3-4 inches from the heat for 3-4 minutes on each side or until slightly pink in the center. Serve with pico de gallo.

- Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 mins.
- Heat a wok with 1 tsp of the oil. Lift the steak from the marinade and sear, in batches, then remove. Add a bit more oil and fry the ginger until golden. Add the spring onions and pineapple, and return the steak to the pan. Stir to heat through for 1 min, then add any remaining marinade. Keep stirring until the marinade becomes thick and everything is hot. Serve sprinkled with coriander, and with rice and greens, if you like.

- Whisk together the pineapple juice, soy sauce, and garlic.
- Pierce the steaks all over with a fork then place them in a zip top bag, or air tight container and pour the marinade over the steak. Squeeze the air out and seal the bag. Let marinate for 30 minutes, up to overnight. Marinating at least 2 hours will produce the best flavor.
- Heat the grill to medium-high heat. Once hot, place the steaks on the grill and cook 5-7 minutes per side.

- Remove top and bottom of pineapple.
- Peel. It is not possible to get all the eyes off without wasting a good deal of the pineapple so compromise on how many eyes you can stand to pick out at the table. Some pineapples have seeds in their eyes, just pop them out with the tip of a paring knife.
- Slice crosswise into rounds about 3/4" thick.
- Brush pineapple slices with soy sauce.
- Heat grill medium hot, brush grill with oil if necessary to prevent sticking.
- OR, heat lightly-greased skillet medium hot.

- Mix dark brown sugar and mustard together in a bowl. Place ham on a broiling pan rack. Spoon mustard mixture over both sides of the ham.
