1 (750 milliliter) bottle gold Barbados rum (such as Mount Gay® or Trader Joe's® Rum of the Gods)

Steps:

  • Place pineapple in a large glass container. Pour in rum, covering pineapple completely.
  • Store container on a cool, dark shelf, stirring and tasting once a day, until rum reaches desired flavor, at least 1 week but preferably 2.
  • Strain out pineapple before serving.

1 1/2 cups Land O Lakes unsalted butter (room temperature)
2 3/4 cups granulated sugar
5 large eggs (room temperature)
3 cups sifted cake flour
1 tsp salt
1 cup sour cream
1/4 cup crushed pineapple
tbsp pure vanilla extract
2 tbsp unsalted butter (melted)
1/3 cup light brown sugar (packed)
6 whole pineapple rings
6 maraschino cherries
1/2 cup rum
1/2 cup granulated sugar
2 tbsp salted butter (melted)
2 tbsp pineapple juice
1 tsp pure vanilla extract

Steps:

  • Start by preheating oven to 350 degrees and spraying a 12 cup bundt pan with nonstick spray or grease pan (make sure you really prepare your pan well to insure no sticking for this cake).
  • In the bowl of a stand mixer fitted with the whisk attachment, beat the butter for 2 minutes on high speed.
  • Slowly add the granulated sugar. Mix together for an additional 5 minutes, until very pale yellow and fluffy.
  • Add the eggs 1 at a time, combining well after each addition and scraping down the sides and bottom of the bowl as needed.
  • Turn your mixer down to its lowest speed and slowly add the flour in 2 batches. Add the salt. Be careful not to overbeat. Add the sour cream, crushed pineapple and vanilla extract. Scrape down the sides and bottom of the bowl and mix the batter until just combined. Be careful not to overmix.
  • To assemble cake, pour melted butter in the bottom of the sprayed pan then sprinkle the butter with brown sugar.
  • Line the bottom of the pan with the pineapple rings and add 1 cherry to the center of each pineapple ring.
  • Evenly pour cake batter over pineapples and bake for 70-80 minutes or until toothpick inserted into center of cake comes out mostly clean but still moist.
  • Allow cake to rest for 10 minutes then quickly invert cake onto serving plate.
  • In a small pot set over medium heat, combine all the ingredients and cook over medium-high heat.
  • Reduce mixture by about a third and thickened, about 5 minutes. Remove from heat and let cool for 10 minutes.
  • Finally poke sides and top of cake and pour syrup over cake and allow to seep in then cool.

½ cup packed brown sugar
1 tsp. ground cinnamon (plus extra for dusting)
1 pineapple, cored and cut into about 6-8 rings (choose desired thickness)

Steps:

  • In a small bowl, mix together rum, brown sugar, and cinnamon. Then in a glass baking dish (or other container), lay out the pineapple rings and pour the rum mixture over them. Toss to coat, then let soak for at least 15 minutes, flipping the pineapple midway through. When you are ready to cook the pineapple, strain out the extra rum sauce from the pan of pineapple, and transfer it to a small saucepan. Bring the sauce to a simmer over medium-high heat, then reduce heat to medium-low and simmer for about 6-8 minutes, or until reduced by half. Set aside. While the sauce is cooking, heat a grill pan or saute pan over medium-high heat until hot. Lightly grease the pan with cooking spray. Add pineapple slices in an even layer (you may need to do this in multiple batches) and cook for 1-2 minutes per side until browned and grill marks appear. Transfer to a serving plates, and set aside. Repeat with remaining pineapple. Top each pineapple ring with a scoop of ice cream and drizzle with rum sauce. Steps:

  • Prepping the glaze - whisk rum, brown sugar, cinnamon powder, vanilla extract well. Marinade pineapple - Soak pineapple slices in rum, brown sugar liquid for about 30 minutes or even over night.

Steps:

  • Cut top and bottom off pineapple. Peel and core the pineapple. Cut pineapple in half vertically, and then cut one half into 4 spears. 3 of the spears will be used in the infusion.
  • Place 3 pineapple spears and rum in a sealable 1 quart glass jar. Allow to infuse for 2 weeks in a cool dark place.
  • After 2 weeks, taste the rum and if the pineapple flavor is to your liking, remove pineapple (do not discard; see below) and reseal, storing in a dark cool location.

1 cup packed brown sugar
1 tsp. ground Cinnamon (I used half cinnamon and half nutmeg)
1 pineapple (cored and cut into about 1 inch or 6-8 rings)
Ice cream (coconut or vanilla)

Steps:

  • In a small bowl, combine, brown sugar, rum , nutmeg and cinnamon.
  • Place the pineapple in a glass pan in a single layer. Then pour all the mixture over the pineapple. Coat pineapples with the sauce the let it sit for about 15-20 minutes
  • When ready to grill remove pineapple and let it drain then pour the sauce in small sauce -pan and bring to a simmer.
  • Let it simmer until reduced by half - about 6-8 minutes. Set aside
  • While the sauce is simmering away -place a grill pan or skillet on medium high heat.
  • Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear. Watch out for this step- they do grill pretty fast. Set it on a plate. Repeat with the remaining pineapple slices.
  • Transfer on a serving plate, top with ice cream and drizzle with sauce.
